For a long time Chef Onoda at Caravin Restaurant in Aoi Ku, Shizuoka City had promised to challenge boudin noir or blood (pork) sausage!
Back in France it is delicacy you can buy anywhere to eat back at home, but in Japan it is still very much a rarity, especially home-made!
A truly magnificent if somewhat of modest origins with all the extras needed!
Served with an unctuous mashed potato puree I will the pleasure to mix with the boudin later!
Caramelized apples are a must for a perfect balance!
Naturally with some leaf vegetables for a healthy dish!
It is always such a pleasure to cut the thin skin and mix the soft insides with the mashed potatoes!
