Hamamatsu Shuzou Brewery is well-known in Shizuoka Prefecture for its flag product « Shusseijô ». Since 1871, they are using the water coming from the Tenryugawa river underground water and made their reputations in the sake universe. Using only Shizuoka sake rice, making numerous limited edition sakes drunk around all Hamamatsu, as the famous Sawayaka restaurant, they have a solid reputation. In this team, Miwa Masui is also the first woman working as « Toji » or Master Brewer in Shizuoka Prefecture. We will also take a deeper look at the chemistry of sake making!
