Shizuoka Sake Tasting: Sugii Brewery-“Yaoyorozu”Yamahai Junmai Homarefuji

Sugii Brewery has been brewing this particular brand for some time and it is noteworthy for more than reason.
First of all it is a Yamahai, a variety of sake than many breweries conscientiously ignore as it is difficult to master its natural fermentation.
Interestingly enough “Shizuoka Yamahai” is tarting to get some deserved attention from the rest of Japan as many Shizuoka breweries have made it their challeng to tackle it.
And the results are certainly striking!

Another interesting aspect is that the rice is Shizuoka-grown Hoamrefuji, which is steadily earning its lettres de noblesse (fame)!

Rice: Homarefuji
Rice milled down to 70%
Dryness: + 5
Acidity: 2.0
Bottled in Novemeber 2013

Clarity: Very clear
Color: Light golden hue
Aroma: Dry and fruity. bananas, custard.
Body: Very fluid
Taste: Dry deep attack.
Little junmai petillant.
Complex. Tends to show new facets in slightly wild and unpredictable fashion.
Fruity: dry oranges. Later dark chocolate and milk coffee.
Welcome acidity.
Disappears quickly enough with hints of dry coffee beans.
Becomes momentarily drier and deeper with food.
Takes on a sweeter turn immediately after food with strong hints of milk coffee.
Superbly marries with any food.

Overall: Although obviously conceived to be drunk with food, it is a thoroughly enjoyable sake on its own with intriguing facets enticing you to the next cup and the nest one beyoond.
A very dangerous sake in a sense as you don’t tire of it and feel obliged to discover a new facet!
A challenge, and a successful one at that be it on the brewer’s side or the drinker’s!

Tomorrow is Valentine’s Day and we have crafted the perfect beer to celebrate this occasion of sweetheart love: Love Potion Lager.

New Seasonal Baird Beer Release:
*Love Potion Lager (5.5%):

Love Potion Lager is our version of a German-style Schwarzbier: a dark but delicately smooth bottom-fermented beer. The dark color stems from moderate additions of roasted malt to the grist which lend a subtle sweet-chocolate flavor. A long six-month lagering period has contributed to a clean and balanced roundness of character that is irresistibly seductive. Just a gentle kiss of hop flavor and bitterness in the finish will leave you in an expressive mood of tender love and heartfelt affection for that special someone.

Love Potion Lager is available in both kegs and bottles (360 ml) for immediate shipment from our Numazu brewery. It begins pouring from the taps of our Baird Taproom pubs on Valentine’s Day, Friday, February 14.

AOI BEER STAND: Latest News of Forthcoming Brewery in Shizuoka City-Aoi Beer Brewery (February 10th, 2014)!

Service: Easy-going and friendly
Facilities: Very clean overall. Beautiful washroom inside Den Bulding.
Prices: Reasonable
Strong points: Craft beers only!

Yesterday I made a call for drinhks and information at Aoi Beer Stand in Aoi Ku, Shizuoka City!
Since the owner Naoki Mando was on hand I asked him a few precise questions which he was kind enough to answer!

First of all I learned that he had registered the name Aoi/葵/Holluhock and the crest as his beer label from Kunozan Shrine and the City of Shizuoka!
The only sobering about that (no pun intended!) is since that the city wants to include his beer in bottles in City Souvenirs Sets, Naoki found himself forced to produce his beer not only in kegs but also in in bottles, meaning more work, equipment and costs!

The brewery equipment should be finally installed end of march and production should start end of April~beginning of may!

Now, Naoki will brew 6 regular beers:
-Pilsner
-Pale Ale
-IPA
-Belgium White
-Weizen
-Dark Lager

To that he will add seasonal beers featuring:
-Shzuoka Strawberry Beer
-Shizuoka Ornage Beer
-Shizuoka Kikuimo/jerusalem Artichoke Beer
-Shizuoka O Cha/Geen Tea Beer

1st Shizuoka Seeds & Seedlings Exchange Meet in Shizuoka City!-大1回静岡種苗交換会!

The ist Shizuoka Seeds Exhange Meet was held on Sunday February 9th by farmers from all over the Prefecture under the leadership of a young farmer named Fumitaka Yamaguchi.
Attendants included not only farmers, but also guests interested in farming in general, in seeds exchange and willing to get a better understanding of farming.

Although the meeting started at 11:30, the meeting room at the Shizuoka Waork Insurance Building was already half full by 11:00!

First we were shown a long film on the dangers of Gene Modified grains, seeds , vegetables, fruit and plants in general in the States, Canada, Mexico, Europe, Asia and Africa!
A real eye-opener. Frightening, actually!

The second part consisted of a very good discussion with Chef Kenya Yoshimura, Farmer Mitsuharau Ishigami and organic food trader Mika Itoh.
The main topics were about the work of producing one’s own seeds, the protection of native plants, the safety and traceability of food and the future of farming!
I’m really looking forward to the next Meet as there is a real need for such exchange and so many issues to discuss!

It is a good idea to come at around 13:00 or phone in advance as the place is really busy!

I have always been wondering at the wisdom of creating a honjonzo.
After all it is certainly more difficult than making a straight junami as you have to blend the aforementioned junmai with pure sake alcohol.
In fact many a brew master has agreed it is a lot of work for making a sake sold at a lower price…
Mind you I do not complain, especially considering the extravagant rice millage practiced by Shizdaizumi Brewery in Fujieda City!

Rice: Hyakumangoku (Toyama Prefecture)
Rice milled down to 55%
Alcohol: 16 degrees
Yeast: Shizuoka NEW-5
Dryness: + 6.0
Acidity: 1.1
Bott;ed in November 2013

Clarity: very clear
Color: Faint golden hue
Aroma: Discreet, elegant, fruity. Coffee beans, vanilla
Body: fluid
Taste: Soft, dry. elegant attack with strong coffee beans and dry dark chocolate.
Complex. Pleasant alcohol. Disappears quickly with hints of dry nuts.
Take an even drier turn with food.

Overall: An intriguing and elegant sake.
Eminently enjoyable on its own although obviously conceived to accompany food.
I actually made a point to drink it with dates and sweet biscuits and discovered that its accentuated dryness beautifully married with the sweetness of the cakes!
It just proves you ind you I could drink that particular brew all night long!ought to drink any sake in many combinations as far as food is concerned.
Mind you, I could drink that particular brew all night long!

Shizuoka Ekiben/Railway Station Bento: Hamamatsu Mikkabi Beef in Kakegawa JR Railway Station!

Mikabi in Hamamatsu City is not only famous all over Japan for its oranges but also for its beef!
Yesterday I had to stop in Kakegawa City and had a look at the ekiben/railway station bento they had on on offer when I discovered this new one among he more than half-dozen displayed.
I didn’t hesitate!

Jishotei Bento Company in Hamamatsu City must be one of the oldest in Japan as it was founded in 1824!
