Sushi Dinner at Miyako Sushi in Shizuoka City!

Service: Very friendly and informative.
Equipment & facilities: old but very clean. Traditional but clean Japanese washroom
Prices: Reasonable
Strong points: great products, local and from all over japan. Great sake list.

In Shizuoka City, you do not need to be near the sea to find great sushi and fish products. The latter probably follow you along your trips!
The other day I was invited by a local regular for dinner at Miyako Sushi on the other side of the Abe River and as far as Abeguchi Shinden, in the middle of the country, not far from the tea fields.
Miyako Sushi is what you call a true traditional country sushi restaurant.
No pretense here. The marine products a top-class and the selection of sake a discovery!
And most customers are local so you know you are coming to a great place, maybe old fashioned but so laid back!
Not only sushi,and sashimi but also cooked food await you there!

Superlative “Nanbu Bijin” sake from faraway Iwate Prefecture!
Check with the staff as the sake list tends to change quickly!

O-toshi/snack served with first drink, featuring otaru ika/lucciolla squid!

Traditional kappa maki/cucumber roll for the kid among us!

First superb sashimi selection!

Deep fried kuro hanpene/sardine paste cake and kisu/sillago!

A rare sake, Sawa no I for Tokyo of all places!

The second superb sashimi selection!

Grilled shishamo/literally leaf fish! A typical Japanese specialty!

Sushi nigiri galore!

And instead of dessert we had Chyawanmushi/Japanese salted hot pudding!

Go and explore the country along the Abe River! Surprises await for you there!

The star of the restaurant!

During our last visit to Atami City, at the eastern end of Shizuoka Prefecture, we decided to try Sushi Chu Restaurant, a very traditional place like they don’t do anymore!
It can be a busy place especially on weekends both with Japanese and foreign tourists!

You will be asked if you want to eat lunch in the normal style, for which you will be invited to sit at the counter or if you want to order the sushi donburi/bowls, in which case you will sit at a table.
The donburi sets are great at lunch. We decided to order both!

I ordered the “Jyou Kaisen Don/Superior seafood bowl” which includes local seafood and more from other parts of Japan!

Of course Dragon expected to share that!

The servings are big enough to satisfy you without stuffing yourself. The food is authentic and very reasonabkle for the quality!

Prices: reasonable (that is for true sushi!)
Strong points: Sushi mainly created with local seafood. 3-year old wasabi root exclusively used. Grilled and deep-fried fish, tempura. Excellent list of sake and shochu.

Chef Kenta Birukawa/尾留川健太親方!

Kenta Birukawa opened Sushi Shokunin Birukawa last July after a long time spent as the main chef of Sushi Ko in Aoba Park Street, Aoi Ku, Shizuoka City for the pleasure of his many fans including your servant.
It is located near Komagata Street which is being completely renovated with the addition of high-rise mansions which promises a flow of affluent customers to all the establishments who decided to stay or move recently!

Whatever his skills a chef builds his reputation on his/her choice of ingredients.
Kenta always has enough live local fish in his aquarium tank along with products chosen on a daily base through his many contacts in local and national ports. And when it comes to wasabi, even the op restaurants in Tokyo or Kyoto do not come near to equal him as he exclusively uses roots grown for three years in the mountains of Utogi, Aoi Ku, Shizuoka Ciy, the very location where the first wasabi were grown for their roots in the beginning of the 17th Century.
The wasabi is grated a little at a time before being served on each plate or sushi!

Incidentally Kenta and his little jewel of a mother are from Akita Prefecture as can be noted on the tea cups and the noren/entrance curtain to the kitchen! Apparently Shizuoka City is very popular with denizens of Akita Prefecture as they have formed their own association in our city!

It was actually our first visit as we knew the place would be too crowded during the first two months, and still is, so you had better call first or reserve in advance!
The tone was set with the o-toshi/snack coming with first drink consisting of succulent whelks!

A small board is shown and circulated among the customers to inform them of the special fish and seafood of the day, a very useful and practical way when it comes to sashimi or cooked fish!

As for drinks there is much to choose from among the sake, comprising many local ones (expect more not featured on the list!), wine and soft drinks!

And do not forget the shochu and the beer!

As for individual sushi the prices are clearly stated. You can also discuss your budget directly with Kenta without any worries. He will also gladly accommodates your special orders not featured on menus. Just keep on eye on what the regulars order!

Another big plus the rice is steamed in small bunches, and if you are lucky enough he will prepare it in front of your very eyes!
Kenta has his own recipe which includes a mixture of 90% usual rice wine with 10% of red rice wine as demonstrated above! Not many restaurants will go to the pains of such explanations with their customers, so do not forget your camera!

Not including the kitchen hidden by the noren/entrance curtain to prevent kitchen odors to bother customers the restaurant is a model of a clever use of the limited space with the inclusion of a Japanese-made grill/salamander!

Just add a little grated wasabi on top of each piece before savoring it!

Kenta is famous all over town and beyond for some tidbits you must absolutely sample!
One of them is “Kawahagi o-tsukuri”/Filefish (also called leather jacket in Australia!) sashimi plate!
Cheaper and tastier than fugu/globefish and super fresh as they picked up alive form the tank!

The fish is cut in very thin slices and served with cut leeks/scallions to be rolled inside each slice of fish. a great opportunity to show your skills with chopsticks!

And as for the dipping sauce it consists of the live liver of the very same fish chopped thinly and mixed with rice vinegar and what else!

The “jowls” of the same fish will then served to you as deep-fried! To eat with your fingers!

Another morsel you must absolutely order is “maguro zuke”!
Slices of tuna akami/lean part are marinated for a short time in a mixture of soy sauce, sake, mirin and secret ingredients before being served as nigiri. Almost a dessert!

Also make a point to check what local fish are available!
The above is a fish that made Shizuoka Prefecture famous all over Japan: “kinmedai”/splendid Alfonsino caught off the shores of Inatori on the west coast of Izu Peninsula!
Seared on one face you can savor at least two different savors!

If you wish for something from other shores try the deep-fried “shiroebi”/white shrimps from Toyama Prefecture!

Vegetarians can order a plate of fresh vegetable tempura prepared by Kenta’s mother!

“Maki”/sushi rolls aficionados are faced with an embarrassment of choices as Kenta will gracefully prepare your orders even if they are not featured on the menu!
Dragon ordered this “futomaki”/large roll filled with fresh salmon, salmon roe, grated “yamamaimo”/Japanese yam and thin scallions!

For “dessert” (for vegetarians and vegans) ask for “kanpyo maki”/roll filled with simmered dry gourd shavings, and don’t forget to mention with “plenty of wasabi”!

Kenta cooks his own tamagoyaki/Japanese omelet (not evident in many sushi restaurants!) so don’t forget some!

And wash down the lot with some very tasty miso soup!
There are usually three kinds depending on the season.
This time we were offered tofu, nameko mushrooms or cockles.
Dragon opted for the tofu added with a generous portion of fresh seaweeed!

This was only a small dinner, so expect more in the near future with different morsels!

If you are in a bit of a hurry but still are hungry Fujieda Station is a practical place to enjoy some reasonably-priced but still tasty sushi.
Uogashi Nagarezushi is located on the second floor of OLE Building just beside Fujieda Station south exit!

It is a fairly big place but seats are sufficiently separated for necessary privacy.
This is a “nagaraezushi”, that is a system where orders are coming to your table via a computer service. Very quick and efficient and the staff will come regularly to collect away your empty plates.

Gastronomic Destinations: Matsuki Sushi In Takayama City, Gifu Prefecture!

Equipment & facilities: Traditional but very clean. Excellent and modernized washroom
Prices: Reasonable considering that Gifu Prefecture has no direct access to the sea.
Strong points: Sushi of course, but also all kinds of traditional side Japanese dishes. Good selection of sake including many local. All kinds of drinks available

Matsuki Sushi/松喜すしis a bit far from Takayama City JR station but still in the night entertainment part of the town and is certainly worth the search.
When they saw entering us entering they immediately asked us if we needed any help and advice on what foreigners would enjoy. They had not needed to worry with my staying 40 years in the country but I did appreciate the concern.
There is a good drink menu, bu apart of the sushi prices being advertised (in Japanese) on small wooden slats above the long counter there is o food menu. You need to talk about it with the staff who are very patient and smiling indeed!

They have some good local sake indeed and we chose one by Watanabe Brewery (Takayama City). The sake made in the north mountains of Gifu prefecture tend to be on the sweet side but without being cloying.

All the seafood came directly from the Japan Sea, that Toyama and Ishikawa Prefectures!

Definitely highly recommended, especially if you don’t have the time to vist the prefectures nort of Gifu Prefecture!

Uogashi Sushi/魚がし鮨 is the major sushi restaurant chain in Shizuoka Prefecture ( a total of 40+ establishments including those at Haneda Airport, Tokyo, Yokohama and Nagoya), but with a big difference: most of the fish and seafood are local, especially from Numazu Harbor where the company started. Expect the freshest quality at very reasonable prices!
You will find this particular restaurant in the ASTY Corridor inside Shizuoka JR Station.
I would advise you to choose a seat at the counter (the prices are the same everywhere!) just inside on the right as it is non-smoking and at a far enough distance from the smokers’ seats!

Located a few minutes on foot away from Hamamatsu JR Station it comes a s a bit of a surprise even for the locals!
It is unpretentious, very reasonable by Shizuoka sushi standards, serves delicious food and in spite of the initial shyness is full of nice homey people!
It had been a very long time since I went there last, but I finally had the opportunity the other day for a quick visit!

“Me-Ichi Dai/メイチダイ”, a very rare seabream caught in Suruga Bay! It goes by the Latin name of Gymnocranius griseus (Temminck and Schlegel)! You would have to pay thousands for it in Tokyo! One of the best seabreams in Japan!

For all its derelict appearance (and it is actually old in all senses of the term!) Ginta in Yui just in front of Suruga Bay regularly appears on magazines and TV.
The reason is simple enough: this is a rare place, albeit cheap by sushi restaurant standards, which serves mainly local fish and seafood caught in Suruga Bay/駿河湾, and more precisely in a smaller bay called Kurasawa Bay/倉沢湾!
These are the richest bays in Japan when it comes to varieties, even including deep-sea fish which also appear as sashimi on plates in Numazu city for example!

Mr. Hara is a story himself: being the son of a sakura ebi/cherry shrimp fisherman, he was destined to sail in his father’s feet, but he had one little problem… he suffered from chronic seasickness! There was only path left to him: opening a sushi restaurant!

But his superior knowledge of the local fish and fishermen gave him the inestimable advantage over all sushi restaurants in the Prefecture that he had first catch and first choice whenever he wanted!
He didn’t have to serve fancy sushi or sashimi but keeping things simple served him perfectly. People would come from very far indeed for only one of his three specialties: aji/鯵/Kurasawa Bay Horse mackerel sushi nigiri plate, full course sakura ebi/桜海老 set (in season only for a mere 3,000 ywn!) and the 8 local fish sushi nigiri set for the ridiculous price of 1,800 yen/18 US $/13 Euros!
The other day I opted for the 8 local sushi nigiri set (I always do, actually!).
The set details allways appears on a notice on the board and served in the same order, a simple and great way ro introduce the fish offered!

In shizuoka one does not need spend untold amounts of money or eat cheap sushi at crowded places to savor truly local, hyper fresh sea products and this accompanied by some of the rarest and best sake in Japan.
just get off Shizuoka JR Station from the north exit and you will find Ekimae Matsuno Sushi Restaurant just beyond Matsuzakaya Department Store on your left hand side.

This venerable institution has been standing on the same spot since well before the WWII and has always boasted more local fish served than anywhere else.
It does not need to show off or take grand airs but still has the courage to declare the restaurant as a non-smoking haven!

For once this shirako/白子/male cod sperm/milt sacs were not from Shizuoka but all the other fish I sampled were!

The above shirako was served to accompany a superb sake by Kokou Brewery (Fukuroi City)
At 16~17 degrees it is a ginjo genshu bottled in October 2013. V\beautiful nuttey taste withhints of dark chocolate and coffee beans!

Sushi Restaurant: Myouken in Gotemba City!

Service: Very friendly and attentive
Facilities & Equipment: Great general cleanliness. Superb washroom.
Prices: Reasonable~slightly expensive
Strong points: Oshizushi, local sake, traditional Japanese gastronomy.

The other day when I went to interview a local soy sauce maker in Gotemba City (article coming soon) I found myself with plenty of time at noon and decided to explore the vicinity of the Gotemba JR Station!

A few minutes walk away from the station I found this sign announcing Myouken/妙見, a local sushi restaurant…

Gotemba City at the foot of Mount Fuji is quite far from the sea, but you never know, so let’s have better look…

Founded in 1935! Now, that sounds as a venerable establishment but it had obviously been recently redecorated…

I had noticed one very important detail which encouraged me to enter the restaurant… but let’s take a picture first!

Now, these are delicious-looking take-aways!
Remember that Gotemba City is famous for its outlets with a lot of visitors from Tokyo!

Actually, there are more private rooms, some of which can be made non-smoking!

The lobby decoration has the added advantage to offer some privacy even at the central table I had chosen!

The all-important detail which encouraged me to discover the restaurant: Myoken has its own sake brewed by Takashima Brewery in Numazu City!

Now, apart of the delicious sake, what did I have for my first visit?
An enormous Hamaguri/蛤/Clam soup!

I opted for the sushi lunch set and one more local specialty!

The local specialty, a must: Fujinomiya no Benimasu Bougata Oshi Sushi/富士宮市産の紅鱒棒形押し寿司!
Rainbow Trout from Fujinomiya City served as pressed sushi, whole!
The founder of Myouken had come all the way from Nara City in 1935, a city famous for its pressed sushi!

I ate the lot, head included (I was complimented for that last detail!)!

Sushi: Shizuoka Chirashi Zushi at Ekimae Matsuno Sushi Restaurant!

Chirashi Zushi/散らし寿司 means “Decoration Sushi” in Japanese.
It can be considered as one of the oldest ways to make sushi in Japan!
The great advantage is the total freedom of design and inspiration!

Last Monday after having tasted many sake at the Shizuoka Sake: 2012 Shizuoka Prefecture New Sake Tasting Annual Meet, I and my good friend Marcus Grandon decided we had to eat something to help digest all that sake before we resumed work!
I had been wanting to eat Ekimae Matsunosushi Restaurant’s Shizuoka Chirashizushi lunch for a long time and this was the right occasion!

It is a full lunch indeed with small cockles miso soup.

Also featured are ginger and daikon pickles and a small dessert under the form of home-made kumquat compote!

Tuna, tamagoyaki/Jpaanese omelette, Soboro/sweet crumbled omelet, dried sakura ebi/Cherry shrimps, nori/dried seaweed.

Tuna, shirasu/boiled sardine whiting, tamagoyaki/omelet/ anago/conger eel, shimesaba/pickled mackerel, dried sakura ebi.

Tuna, freshly grated wasabi, shirasu, tamagoyaki, anago, shimesaba, soboro and nori!

And it is a different offering every day!

Sushi: Kawahagi-Filefish Sashimi & Sushi at Sushi Ko in Shizuoka City!

Service: Very friendly and always accommodating
Facilities: Great overall cleanliness. Superb washroom
Prices: Reasonable
Strong points: Great use of local seafood. Will try hard to accommodate any requests!

Kawahagi, or Filefish or Leather jacket in the Land of Oz, must be one of the most underrated fish in the World!
Some people go as far as to say that penny for penny it is worth more than overpriced globefish/fugu!

As we sat at Sushi Ko, our favorite Sushi Restaurant in Shizuoka City we noticed “Kawahagi Tsukuri”/カワハギ造り/Filefish sashimi Plate written on the small board featuring the “specials” of the day!

The fish had been caught off Sagara in Shizuoka Prefecture!

Sushi Ko has a great list of local sake, but I had to order one from Masu Ichi Brewery in Shizuoka City as this might well be the last bottle as the brewery closed down following the untimely death of its owner/master brewer. An incredible loss for the Shizuoka Sake World!

The filefish sashimi plate!

You roll the fine slices of filefish around some thin leeks before dipping it in its sauce!

The dip sauce!
It was made with the fresh raw liver of the filefish finely chopped and mixed with ponzu!
A true delicacy!

The chef had kept apart a little sashimi and liver for two more morsels!

A nigiri with chopped thin leeks under the fish topped with its liver!

A gunkan/”mother ship” with the sashimi topped with its liver and chopped thin leeks!

And the deep-fried jowls of the fish you eat with your fingers (that you lick later!) to cap it all!
Have I convinced you to look for that fish next time you see it on a market?

Kanpyou maki, the roll for the vegetarians and vegans!
Kanpyou is made with the shavings of a gourd, first dried and then marinated in sweet sauce!

December has seen the cold weather settle in at long last!
This is good news for sushi lovers as a marked change of weather means new seafood varieties coming in!
Naturally, we visited our favorite sushi restaurant in Shizuoka, namely Sushi Ko in Aoba Koen Street!
Here is what we enjoyed!

It’s not all raw fish at Sushi Ko!
Among their cooked specialties we have a special fondness for their Ponkara Maguro/ポンカラ鮪/Deep-fried tuna cubes served with momijioroshi/紅葉下ろし/grated daikon with chili pepper!

Kampachi Tataki/環八タタキ/Amberjack filets that have been seared well before being plunged into cold water and later served as sashimi.
