SHIZUOKA SAKE TASTING: Negami Brewery (Gotemba City) Junmai Ginjo Nama Genshu Muroka

From time to time, it is more practical and also social to make your tastings directly in one of your favorite establishments. This is why I “conducted” this tasting once again in the company of my good friend, Mrs. Hiromi Hasegawa at her shop/bar La Sommelière in Shizuoka City.
Hiromi, who incidentally is also a wine and sake sommelier has also a weak point for the nectars created by Negami Brewery, a brewery perched at 550-meter altitude on the flank of Mount Fuji in Gotemba City.
Negami Brewery incidentally has never brewed anything but Junmai sake.

Rice: Yamada Nishiki
Rice milled down to 45% for the koji rice and 55% for the sake rice
Alcohol: 17~18%



Clarity: very clear
Color: golden
Aroma: Light, dry and fruity. Rice, wood, wild mushrooms. “Mori no kaori/Forest aromas”.
Tasting: Strong attack backed with Junmai petillant. Beautiful alcohol. Not as dry as expected. Silky. Complex. Dry plums, almonds, hazelnuts, oranges.

Disappears quickly enough on the same notes. The Junmai petillant warming up the palate with every sip.

Mellows with food, especially with desserts.
Comments: a very uncommon sake, especially for its rare aromas. Sublimely enjoyable on its own. Will please any gender and age sake lovers.

Makes for a superb digestif!
Pairing: Happy marriage with desserts! Will accentuate your cheese, too!
