OOMURAYA BREWERY SAKE TASTINGS AND PAIRINGS AT LA SOMMELIÈRE IN SHIZUOKA CITY!
PART 1: WAKATAKE JUNMAI AND SASHIMI!
OOMURAYA BREWERY SAKE : On Friday April 16th a special event was held at the restaurant/store La Sommelière in Shizuoka City for a tasting and pairing session of sakes brewed by Oomuraya Brewery (Shimada City) in the company of Mrs. Hiromi Hasegawa, owner of the same restaurant/wines and sakes shop, and Brewmaster Satoru Hibino!
The first sake we tasted was:
Rice: Homarefuji (grown in Shimada City)
Milled down to 70%
Yeast: Shizuoka NEW-5
Amino acids: 1.4
Clarity: Very clear
Color: Almost transparent
Aroma: Sharp, dry, fruity. Dry bananas and vanilla
Taste: A very dry attack back up with beautiful Junmai petillant which is more complex than expected. Dry vanilla and pineapple.
Lingers for a while before disappearing on same dry notes. Mellows with food.
Comments: Straightforward, pleasant and easy to drink. The kind of sake to comfort you at any time of the day and night. This is more great value for its price!
Pairing: Sashimi plate composed of Taï (seabream), Akami (lean tuna) and Ika/Cuttlefish
Other recommended pairings: fresh oysters and white asparagus!
