Tasting OOMURAYA WAKATAKE JUNMAI : On Friday April 16th a special event was held at the restaurant/store La Sommelière in Shizuoka City for a tasting and pairing session of sakes brewed by Oomuraya Brewery (Shimada City) in the company of Mrs. Hiromi Hasegawa, owner of the same restaurant/wines and sakes shop, and Brewmaster Satoru Hibino!
The second sake we tasted was:
Wakatake JunmaÏ Dai Ginjo Retro Label
Rice: Homarfuji (grown in Yaizu City)
Milled down to 50%
Yeast: Shizuoka NEW-5
Amino acids: 0.9
Clarity: Very clear
Color: Almost transparent
Aroma: Discreet, difficult to catch. Fruity. Faint pineapple
Taste: Dry but silky and fruity attack backed with Junmai petillant. Dry banana and liquorice.
Pleasantly lingers for a while on the palate. Surprisingly becomes drier with food with a big comeback of the Junmai petillant and appearance of coffee beans.
Comments: very elegant and easy to drink! Probably best enjoyed on its own. Might become a habit!
Pairing: Dashi maki tamago/Japanese omelet
