NANBURYU SATORU HIBINO NAMA JUNMAI GINJO GENSHU 2020 TOKUBETSU KAKOÏ AND KAKUNI! : On Friday April 16th a special event was held at the restaurant/store La Sommelière in Shizuoka City for a tasting and pairing session of sakes brewed by Oomuraya Brewery (Shimada City) in the company of Mrs. Hiromi Hasegawa, owner of the same restaurant/wines and sakes shop, and Brewmaster Satoru Hibino!
The second sake we tasted was:
Nanburyu Satoru Hibino Nama Junmaï Ginjo Genshu 2020 Tokubetsu Kakoi
Rice: Homarefuji (grown in Yaizu City)
Milled down to 55%
Yeast: Shizuoka NEW-5
Amino acids: 1.4
Clarity: Very clear
Color: Almost transparent
Aroma: Dry and spicy. Flowers, herbs.
Taste: Dry and silky attack with strong Junmai petillant. Fruiy. plums, roasted nuts, apricots.
Turns drier with food.
Changes completely when warmed as “nurukan/40 degrees” with aggressive aroma. Appearance dry coffee and cacao beans.
Comments: Simply splendid sake with a very versatile character!
Pairing: Kakuni/simmered pork belly with yomogidofu and Sakura carrots
Other recommended pairings: Pot-au-feu, cream sauce simmered white meats!
