SHOSETSU JUNMAI GINJO PREMIUM
Kanzawaga Brewery was founded in 1912 in Yui, Shimizu Ku Shizuoka City. It was originally setup in the nearby mountains by the River Kanzawagawa. They are still using the soft waters of the same River but are located nearer to the sea now.
Although this sake’s rank is Junmai ginjo, it was especially brewed like a Junmai daiginjo. It was bottled non-pasteurized and heat pasteurized inside its bottle before being cooled down with a pasteurizer cooler.

Clarity: very clear
Color: Almost transparent
Aroma: Strong, dry and fruity. Pineapple, vanilla, citruses.
Taste: Very dry and fruity attack backed up with Puissant junmai petillant.
Complex. Pineapple, citruses. Disappears rapidly enough with late appearance of faint vanilla, but keeps warming up the palate for a long and pleasant while. Plums and almonds appear with the second sip. Tends to mellow a bit or getting even drier depending upon the food it accompanies or the state of the palate.
Lemons and citruses will take a lead with food.
Comments: Although very dry, it is a very elegant and complex sake to the point of changing faces all the time.
Eminently enjoyable on its own, but it will marry beautifully with almost any food.
For the dry sake lovers! Forget the sherries, aperitifs or digestifs!
Recommended pairings: Oysters, asparaguses, ratatouille, sashimi, sushi, cheese, chocolate.
