JUNMAI GINJO COOL BREEZE SUMMER SAKE : The brewery’s name, “Sanwa/Triple Harmony”, came into existence when in Shimizu City (now Shimizu Ku in Shizuoka City) the original brewery called Ooshukubai/鶯宿梅酒造 (founded in 1686 by Suzuki Ichibeei/鈴木市兵衛) fused with Shimizu Brewery and Suzuki Honkei Brewery in 1976.

The meigara/銘柄/main sake name, “Garyubai/臥龍梅” is the name of the garden inside Seiken Temple/清見寺 in Okitsu, Shimizu Ku, Shizuoka City.

The Suzuki family are still the owners of the brewery whose toji/master brewer comes from Iwate Prefecture (Nanbu School).

Rice milled down to 55%

Clarity: Very clear

Color: Very light golden hue

Aroma: Assertive. Dry and fruity. Plums, faint roasted nuts, oranges.

Taste: Silky, dry and fruity attack backed up light Junmai petillant. Complex. Oranges, dry roasted nuts, sweetish plums. Lingers only for a while before departing on an even drier note. Turns a little drier with food with little other change. Actually stays very light on the palate all the time.

Comments: Sophisticated sake which can be enjoyed at all temperatures any time before, during and after meals, or even as a (dangerous!) nightcap.

Will particularly please the ladies in search of a more sophisticated sake they could especially enjoy chilled as an aperitif.

Recommended pairings: Oysters, asparaguses, vegetable salads, kiriboshi daikon, pickles, sashimi, chilled fruit desserts
