The line-up!

When Bryan and Sayuri Baird founded Baird Brewery in March 2000 in Numazu City, a celebrated harbor in Shizuoka Prefecture, very few people could have imagined than no less than nine years later, their beers would be savored on both sides and across the Pacific Ocean, and in pubs and bars dotted all over Japan!

What is the secret of a couple born in Okinawa (Sayuri) and in the US (Bryan), who has succeeded in managing their business and raising their children at the same time?

In Bryan’s words, they are a family born of a deep passion for beer and a great reverence for brewing history, tradition and culture. Their motto is “Celebrating Beer”, meaning to them not simply the production and sale of beer of character and quality but even more importantly but also entailing the comprehensive enjoyment of beer in a way that enhances the overall experience of life.

Baird Beer is, above all, an experience in flavor.
The flavors of malt and hops and yeast are highlighted and celebrated to their utmost.
The basic formula for the entire line-up of hand-crafted Baird Beer is the same: “Balance + Complexity = Character”.
Baird Beers burst with flavor and character rarely witnessed in this country.
They are made in tiny batches with painstaking care, passion and reverence to tradition.

All bottled Baird beer is unfiltered and undergoes a secondary fermentation in the bottle, producing a lovely and completely carbonation. Yeast sediment is at the bottom of the bottle, meaning that beer should be poured gently into your glass so as to leave the yeast sediment in the bottle.

Bottle-conditioned Baird Beer requires refrigeration, but for maximum enjoyment should be drunk at cool (8~12 C), not cold temperatures.
Although the beer can cold-aged for long periods, in general, it is highly recommended to drink them sooner than later.

Baird beers are available both as year-round brands and seasonal brands.
Year-round brands are of eight kinds:
Wheat King Ale, Rising Sun Pale Ale, Red Rose Amber, Teikoku IPA, Angry Brown Ale, Kurofune Porter and Shimaguni Stout.
The brewers of Baird Beer annually craft a plethora of seasonal beers because they are convinced that beer is simply the most diverse and exciting beverage on Earth.
Seasonal Baird Beers are produced in of five seasonal beer series:

The Fishmarket Taproom in Numazu City

Baird Beer Company presently runs three Pubs:

-Fishmarket Taproom in Numazu City.
This is where all began for Baird ber. The heart, soul, sweat and tears of thir enterprise reside there, Open in July 2000, the Numazu taproom spent many years ignored by the locals. Fortunately, though, a friendly neighborhood atmosphere, characterful beer, great beer-inspired food, and matchlee camaraderie seem to have won out. The fact that their prices are for the most reasonable for craft beer anywhere in Japan is a plus, too.
This is where you will find the brewers and owner-partners of Baird Beer drinking on a regular basis., as well as the oldest Baird fans!

Nakameguro Taproom in Tokyo
The Nakameguro Taproom opened in May 2008 as Baird’s first Tokyo-area pub. Like the original Fishmarket Taproom, it enjoys an all-natural wood and brick décor that is warm, inviting and unpretentious. It has space to seat up to 60 patrons, which makes an ideal venue for parties and group events.
Twenty taps and four hand-pumps are devoted to the perfect dispense of a terrific variety of Baird Beer. They have added four new taps dedicated to superb rotation of other world-class craft beers.

Harajuku Taproom
Opened in August 2009, it is distinctively a Japanese-style pub in the izakaya and yakitori fashion.
The low ceiling and expert wood craftsmanship contribute to an intimate, communal environment that disguises the ample seating capacity of 40. A significant percentage of the seating is devoted to counter space around the 15-tap bar and small open kitchen.
Two hand pumps are also in action dispensing Baird beer in Real Ale style (including the year-round Harajuku Ale!).

1) ANGRY BOY BROWN ALE

I will never be able to praise Bryan Baird in Numazu City enough for contributing so much to beer and micro-brewing in Japan!

This is only my second “official tasting”: “Angry Boy Brown Ale”
(I made a point not to read Bryan’s own comments. There might be quite a discrepancy between the two of us!)

Bryan Baird Brewery: Angry Boy Brown Ale
Draught/nama Beer
Ingredients: Barley Malt, barley, hops.
Alcohol: 6 degrees
Contents: 360 ml

Clarity: smoky
Colour: rich dark brown-orange
Foam: very long head, great long-lived foam
Aroma: Oranges. Yaeats. Strong and sharp
Taste: Comparatively shart tail. Tangy orangs lingereing on at the back of the palate. Steady. Solid. Oranges, lemons, grapefruits.Dry. Welcome acidity.

Overall: Another beer suited for any food, especially meat, sausages and the like. Can be appreciated cold in summer on its own, though. Refreshing and very satisfying. Funnily enough I enjoyed eating Carr’s Whole wheat Crackers with it!

2) RISING SUN PALE ALE

At long last, I can start writing articles about some of the best micro beers in Shizuoka and in Japan!
Bryan Baird in Numazu City has deservedly won praise from all over the country for contributing so much to beer and micro-brewing!

My first tasting concerned “Rising Sun Pale Ale”

Ingredients: Barley Malt, barley, hops.
Alcohol: 4.5 degrees
Contents: 360 ml

Clarity: smoky
Colour: rich dark orange
Foam: long head, thick steady foam
Aroma: Yeast, bread, oranges
Taste: Dry. Steady dry tail. Sharpish. Oranges

Overall: A beer suited for any food, especially meat, sausages and the like. Can be appreciated cold in summer on its own, though. Refreshing and satisfying.

Bryan’s comments: “This quenching brew is crafted in the American West-Coast style. It sports a beautiful soft citrus hop aroma, which gives way to a round, honey-fruit flavour. The finish is crisp and refreshing”>

Baird Beer owned by Bryan Baird in Numazu City is not only a household name but a truly internationally-recognized brewery in spite of its relatively short history.
Living in Shizuoka Prefecture makes it easy to get their brews as more and more local sake shops are marketing them!

Very clean impression.

Very refreshing though not a thirst-quenching beer.
Welcome acidity.
Pleasantly lingers for a while on a drier note with more oranges and hints of nuts and persimmon.
persimmon actually tends to take over the oranges on the second sip with more welcome acidity.

Overall: Very refreshing but deep beer.
Usually I conduct my beer tastings in the afternoons when my palate is not influenced by any food or else. This beer has the the gratifying quality of welcoming you with a nourishing feeling!
Accordingly I would advise all true beer lovers to drink it at ease to fully enjoy its rich and utterly rewarding taste.
Good, I should say great, beers should be drunk on their own and Bryan Baird is known all over the world for its sublime brews!

Today after having spent 4 hours non-stop on a bicycle and taken a bath I had this Kurofune Ported by Baurd Berr Berwery which has just moved its headquarters in Shuzenji, Izu Peninsula!

Taste: Well rounded, deep and rich attack. very refreshing for a porter.
Lighter than expected.
Dry. Caramel, bread.
Pleasantly lingers on with a drier accent, more caramel and coffee beans.

Overall: A very satisfying brew, but quite elegant and light for a porter.
Chilled, it makes for a superlative summer or evening drink.
Although it marries well with food, one can best appreciate it on its own!

Due to increasing demand, Bryan Baird had to move his brewery from Numazu City to Shuzenji in Izu Peninsula recently, but on the other hand his beers are increasingly available in many stores in Shizuoka City!

Dry oranges, bread with hints of persimmon. Late appearance of apricots.
Varies little with food, except for deeper and drier oranges.
Lingers for a while in the palate before leaving with an even drier note.

Overall: Very refreshing, deep, solid, reliable and elegant craft beer.
Enjoyable in any season. Great with food.
Personally I enjoy it most on a hot evening on its own, lightly chilled, and try to savor it as slowly as possible (not easy!)!
Mind you, because of its strong orange taste, might be best enjoyed in winter in Shizuoka!

6) SURUGA BAY IMPERIAL IPA

Lots of character.
Multiple facets keeping coming up!

The other day I visited ICN Cafe for a chat with a friend in the afternoon and I took advantage of one the craft beers they serve there!

ICN cafe is a bar/cafe I would recommend to people in search of some welcome quietude away from the crowds around a beer, some tasty Italian fare or just a coffee in a space which has a lot offer。

They do have the merit to serve a whole range of bottled beers all day long and I’m pretty grateful for the fact that they offer a brand by Baird Beer Co., arguably the most famous brewery in our Prefecture!

Overall: A magnificent beer.
Easy to drink in spite of high alcohol content.
A craft beer for all seasons which should appeal to anyone!

14) 2017 India Pale Ale

The other day I had the opportunity to visit the newly opened Craft Beer Bar in Shizuoka City: Hug Hop!

And among their offerings I spotted a very limited craft beer by Baird Beer, the Craft Beer Brewery owned and run by Bryan Baird in Shuzenji, Izu Pninsula, Shizuoka Prefecture: 2017 India Pale Ale!

Served on tap
Aloha Malted malt (USA), Pilsner malt (Germany), Wien malt (Austria), Munchen malt (Germany). Tettnang hop (New Zealand). Dry hop: Whole flower corn hop (USA). Fresh hop: Toros hop (Germany), Magnum hop (Germany). House Lager yeast (USA). Sugars.
ABV: 7%
IBU: 75
SRM: 3.1

Bubbles: long head, very fine bubbles, white
Color: dark lemon color
Aroma: dry and fruity. Citruses, lemon.
Taste: dry and fruity attack. Lemon, citruses, bread.
Lingers long enough on palate for true tasting before departing on drier/more bitter notes of citruses.
Pleasant alcohol all the way through.
Stays true all the way.

Overall: very bitter type of IPA.
Although tasted in winter would become a welcome craft beer for all seasons.
Its bitterness will please gentlemen in particular.
Suggested pairings: pork, chicken liver, fried potatoes.

  1. A very reliable microbrewery producing consistently decent beers and with pretty good distribution, in Kanto at least. 2 other “Taprooms” now open in Tokyo, Naka Meguro and Harajuku. Some interesting seasonal beers in addition to a solid line-up of their regular brews. Teikoku IPA and Rising Sun Pale Ale being my 2 favourites.

  2. Couldn’t agree more about Baird Beers. I just joined Baird as a new brewer, and I wouldn’t have done that if I didn’t think the beers were fantastic.

    One small correction — our small bottles are 360 ml, not 300. (And many of our seasonals come in 633 ml bottles, just for fun.)

    Next time you’re in the area, let me know so we can meet up for a beer or two.
