Fruit Cocktails by Wataru Matsumoto 11: grapefruit

This is the eleventh recipe of a (hopefully long) series of cocktails concocted by Wataru Matsumoto, owner/bartender at BOTANICAL (Comfort bar) in Shizuoka City.
No worries about copyrights as Mr. Matsumoto is only too happy to share his secrets!

INGREDIENTS:

-1 Whole grapefruit
-Fresh whole rosemary: 1 sprig
-Vodka: 3 measures (will need only 1 for the cocktail itself!)

RECIPE:

-Let rosemary soak into vodka for a good hour before usage.

-Cut grapefruit in half. Cut out the core (bitter!). Press grapefruit juice out.

-Pass fresh rosemary along the rim of a large glass. Pour some salt on a plate and coat the rim of the glass with the salt. You couls also first grind salt and fresh rosemary in mortar with a pestle first and coat the glass with the mixture!

-Drop a large sphere of ice inside the glass.

-In a stir glass pour the grapefruit juice and 1 measure of rosemary vodka. Stir. pour over ice into the glass.

-Serve.

-Great and refreshing in summer! Perfect as an aperitif, too!

Wataru Matsumoto in action (in the dark!)!

This is the tenth recipe of a (hopefully long) series of cocktails concocted by Wataru Matsumoto, owner/bartender at BOTANICAL (Comfort bar) in Shizuoka City.
No worries about copyrights as Mr. Matsumoto is only too happy to share his secrets!

Bio Farm Matsuki Organic Tomatoes bought at Parco, Shizuoka City!

Now today’s recipe has more than one twist!
1) Real tomatoes are used instead of tomato juice!
2) The tomatoes are organic!
3) The tomatoes are local as they are grown at Bio Farm Matsuki in Shibakawa, Fujinomita City, at the foot of Mount Fuji!

INGREDIENTS:

-Plum tomatoes: medium-small x 6~8, medium-large x 3
-Vodka (Smirnoff in this case): 1 measure
-Rock salt a little

Keep it simple so as to preserve the real taste of the tomatoes!

RECIPE:

-“Grate” the juice out the tomatoes. Wataru uses a ceramic grater. Do not use a mixer or blender. You will lose to many nutriendt and end up with a “soup”!

-Wataru uses two tumblers of different sizes to shake the whole. In the smaller tumbler pour the tomato juice over a minimum of ice. Add salt and vodka. “Cap” the smaller tumbler with the larger one and shake only lightly.

-Pour through strainer into semi-long glass over a couple of glass cubes and serve as it is.
Simple is best!

Makes for a great aperitif in summer!
Ladies will love it!

This is the ninth recipe of a (hopefully long) series of cocktails concocted by Wataru Matsumoto, owner/bartender at BOTANICAL (Comfort bar) in Shizuoka City.

INGREDIENTS:

-1 medium-size peach
-Monin Peche syrup: 1 dash
-Monin Grenadine: 1 dash
-Pernod: a few drops
-Mumm Champagne: 45 cc/ml + 45 cc/ml

RECIPE:

-Peel only half of the peach. The other half will go into the cocktail and provide good nutrients!
Cut in rough quarters, Get rid of the seed!

-In a blender drop all the ingredients without the champagne.
Add some crushed ice and blend well.
Add 45 cc/ml of champagne in the blender. Hand mix inside the blender.

-Choose a medium size globe glass and drop a cube of ice inside.

-Pour the blender contents on top of the ice.

-Slowly pour 45 cc/ml more of Mumm Champagne to allow some foam to form on the top.

-Serve wit a star anise floating on top.

It’s nothing else but a variety of Bellini cocktail!
Makes for a beautiful sour and sweet combination.
Tends to disappear quickly, so think about the next one!

INGREDIENTS:

-Salt
-Lime: 1/2
-Vodka (Smirnoff): 1 measure
-Watermelon: as appropriate
-Large ice cube

RECIPE

-Choose a tulip glass with a wide enough rim. Coat the rim with lime juice with a half cut lime.
Pour good quality salt on a saucer. Turn the glass upside down onto the saucer so as to allow enough salt to coat the glass rim.

-Drop a large enough ice cube in the glass. Pour the vodaka over it.

-Cut enough watermelon and blend lightly so as to preserve the “crunchy bite” of the watermelon.
Pour over the ice and stir gently with a long spoon.

-It is nothing else but a watermelon salty Dog!

Drinks, “eats” very quickly, so have a care! LOL

Shizuoka Bars/Pubs: Grow Stock

Grow Stck is the second establishement of the company running Mando tapas Bar and Cherry Beans diner in Shizuoka City.
It was open in March 2009 and has since become one of the most popular bars ofits kind in town

Although the place can be really crowded at times, it is not that easy to find if it is your first visit in town. Located on the 5th floor of Koyama Naka Building in Koyamachi, one of the drinking areas in Shizuoka City, it is worth exploring the vicinity as they have the advantage of offering a real otdoors terrace:

I took the pic in day time and it does really does it justice. It is a great site to lounge around in the summer (not on rainy or cold days, mind you as it is not covered!) in happy company!

Check the board at the entrance for events and good deals.
Although it is written in Japanese, the Manager, Mr. Ryousuku Ono and his staff will be only too happy to oblige and answer your queries!
The clientele is a good mix of Japanese, young to old, local foreigners who know their beer and guests from both genders who want to enjoy themselves!

As its name clearly indicates, it is a place to savour beer.
And they have loads of it:
More than a 100 from all over the world in bottles.
7 draft beers.
Local microbrewery beers! Bryan Baird from Numazu City, and as guests (depends on your lucky day!) draft beer from Bayern Meister in Fujinomiya City, Hansharo Beer from Hirayama in Izu Peninsula and Kaze no Tani/Windy Valley by Oratche in Kannami (Misj\hima City)!

Baird Beer come in bottles!

But there is plenty of other drinks for everyone from Scotch/Bourbon, wine/Jizake (Kikuyoi from Fujieda City!) to cocktails and soft drinks!

Sit at the counter and try to recognize the beers!

That is unless you want to hang onto the draft beer handles!

Peruse through the beer book! They even have Pietra beer from French Corsica!

As for the food, no worries whatsoever!
You can either choose it a la carte such as the fish and chips above or as a course.
Apart of the fish and chips, they serve interesting Belgian mussles steamed in Beer, Beef Carbonade, German Pork and Buffalo Chicken Wings.
Check the pasta, pizza and paella of the day.
Vegetarians can order vegetarian salads!

The place can also be parially or completely reserved for parties as it can provide for up to 100 guests! And TV screens will show big events if you are short of reasons to patronize the establishment!

Apple Mango from Mexico.

INGREDIENTS:

-Apple Mango (Mexic): 1/4, peeled and cut into small pieces
-Iced tea: 50 cc/ml
-Orange juice (freshly pressed): 30 cc/ml
-White Rum: 1 measure (Bacardi)
-Monin Mangue (Mango) syrop (syrup): 1 dash
-Ice: 1/2 cup, 100 cc/ml

Summer Snow Tea by Mariage Freres (France)

Make tea in large glass. Drop some tea and pour hotwater over it.
When tea is ready, pour over ice in a large stir glass and stir until chilled.

Pour the tea into a medium-sized white wine glass.

In an electric mixer drop the ice, cut mango, white rum and mango syrup.
Process until you obtain a smoothie-type mixture.

Pour the smoothie delicately over the iced tea, taking care not to mix the two. Use a spoon to let the smoothie “slide” onto the tea.
Top with a sprig of fresh mint and serve with one or two thin straws.

Drink it “through”!

The combination of the tea and the mango decreases the cloyness of the mango and the acidity of the tea, making for a great smooth marriage!

This is the sixth recipe of a (hopefully long) series of cocktails concocted by Wataru Matsumoto, owner/bartender at BOTANICAL (Comfort bar) in Shizuoka City.

Dekopon (デコポン) is a seedless and highly sweet citrus fruit, a hybrid between Kiyomi and ponkan , developed in Japan in 1972. While dekopon was originally a brand name, it has become a genericized trademark and it is used to refer to all brands of the fruit; the generic name is shiranuhi or shiranui (不知火). Dekopon is quite distinctive due to its sweet taste, large size and the large protruding bump on the top of the fruit.

In Brazil, dekopon is marketed under the brand name of Kinsei which derived from the Japanese word for Venus. Brazilian farmers have succeeded in adapting the variety to tropical to temperate climate in the highlands of São Paulo state. The work is done by Unkichi Taniwaki, a farmer of Japanese origin. Kinsei is easily harvested from May to September. In the high season for kinsei, each fruit costs around 0.50 USD at the Brazilian street market and supermarkets.

In Korea, dekopon is called hallabong (한라봉) named after Hallasan the mountain located in Jeju-do, where it is primarily grown.

The following cocktail could also be named “Dekopon Mimosa”!

INGREDIENTS:

-Dekopon: 1 (freshly pressed)
-Ice
-Mumm Champagne

RECIPE:

-In a large mixing glass pour the freshly pressed dekopon juice over a large ice cube. Stir to chill the juice, then take out ice and discard.

-Pour the juice in a wine glass.

-Add chilled Mumm Champagne. Stir gently and serve.

Makes for a great soft acidity!

This “Ginger” is not really a “fresh fruit cocktail”, but the notion is the same as a fresh vegetable that is sometimes eaten as a sweet is included.
It could also be called a variation of a Moscow Mule with the difference that ginger ale is replaced with fresh ginger and mineral water.

INGREDIENTS:

-Stick Ginger/Leaf Ginger (slender ginger root and stem): 1
-Lime juice: 1/6 of a standard measure
-Lime: 1 wedge
-Plain syrup: a dash
-Smirnoff Vodka: 1 standard measure
-Mineral water
-Ice

RECIPE:

-Grate the root part of the ginger and collect the juice. Cut off the stem as it will be used for decoration and as a stir utensil by the drinker.

-Drop ice in a long glass.

-Add ginger juice, lime juice, syrup and Smirnoff Vodka.

-Stir

-Add mineral water and stir gently.

Serve with the stick ginger stem and a wedge of lime.

INGREDIENTS:

-Bombay sapphire Gin: 1 standard measure
-Lanka Yoghurt Liqueur: 1 teaspoon
-Monin Myrtille Blueberry syrup: 1 teaspoon
-Cranberry juice: 1/2 standard measure
-Fresh blueberries: 6~
-Ice: 1/2 cup

RECIPE:

-Drop all ingredients in a food processor and turn until you obtain a rough kind of “smoothie”.

-Pour in medium white wine glass.

-Cut a large blueberry half way and “plant” it on the edge of the glass.

COMMENTS:

Not as sweet as one would imagine, but still a dessert of a cocktail!

This is the third recipe of a (hopefully long) series of cocktails concocted by Wataru Matsumoto, owner/bartender at BOTANICAL (Comfort bar) in Shizuoka City.
No worries about copyrights as Mr. Matsumoto is only too happy to share his secrets!

Fruit Cocktail 3:Kinkan/Kumquat

Kinkan/金柑 in Japanese means “Golden Orange” or kumquat!

INGREDIENTS:

-Kinkan/Kumquat: ~6
-Fresh ginger slices: 2
-Gin (Beefeater): 1 standard measure
-Sweet Ginger Ale
-Ice

RECIPE:

-Choose a long and fat glass.

-Drop enough ice in the glasss.

-Press the two slices of ginger. Pour the juice in the glass and drop the ginger slices in the glass, too.

-Pour the gin in the glass.

-Cut the kumquat in halves. squeeze them lightly over the glass before dropping them over the ice.

-Stir.

-Fill with Sweet Ginger Ale and stir again.

As it is an “eatable” (Wataru Matsumoto’s words!), serve with a long thin fork!

Fruit Cocktail 2: Passion Fruit

Passion fruit is readily available in Japan as it is grown in Kyushu and Okinawa Islands when not directly imported for Southern countries.
It makes for great colours, taste and even give this little extra “crunch”!

INGREDIENTS:

-Passion Fruit: a whole fresh fruit inside, seeds included.
-White Bacardi Rum: 1 standard measure
-Orange juice: 1 standard measure
-Fresh lime Juice: 1 standard measure
-Yoghurt Liqueur: 1 teaspoon
-Ice

RECIPE:

-Put everything in a shaker with plenty of ice.

-Shake well.

-Serve in a long glass over a few cubes of ice and stir.
Decorate with a fresh sprig of mint.

Fruit Cocktail 21: Haaru lemon

Haaru lemon is a Japanese brand of Meyer lemon, a very sweet lemon with an orange skin.

INGREDIENTS:

-Haaru lemon: 1
-Gin (Beefeater): 1 standard measure
-Syrup: 1 dash
-Ice
-Mineral Water

RECIPE:

-Cut out a wedge of the Haaru lemon.

-In a shaker, press the rest of the Haaru lemon and pour the gin and syrup over enough ice.

-Shake well.

-Pour in a long glass over a large cube of ice.

-Fill with mineral water. Stir gently. Add the lemon wedge and serve!

After having established a solid reputation as one of the best bartenders in Shizuoka City for quite a few years in a cocktail bar called Yasougin, Wataru Matsumoto decided it was about time to open his own in July 20009 to the pleasure of his customers who just “moved” to his new place called BOTANICAL (Comfort Bar) without batting an eyelid (or eyelash for some).

Contrary to many similar bars, you do not need a guide to take you up dark stairs and through involuted passageways to find it. It stands right along the street behind Isetan Department Store next to a renown ladies fashion shop. One can see the inside through windows, very much in with the new concept to show as much interior as possible to passers-by and eventual customers. No wonder ladies feel comfortable sipping their favourite nectar in peace and quiet with similarly-minded guests.

Even so at night, it is all soft light and soothing background music.
Customers do enjoy casual conversations with unknown (until then) individuals or keep to themselves in a very laid back manner.


Passion Fruit Cocktail

A good dozen guests can sit at the bar or sit at one of the small tables by the window.
Wataru Matsumoto caters for many tastes with his own very precise selection: 30 Scotch Whiskies, 10 Bourbons, 20 Liqueurs and even unknown shochu from Shizuoka Prefecture.
French Mumm Champagne is available by the glass.
But his forte is definitely seasonal fruit cocktails. Just ask what fruit is available and how sour, sweet, flat or petillant you like it and expect a marvel to stand in front of you after a great demonttrations of his art!


“Kinkan” Fruit Cocktail (Kumquat、Cumquat)

I actually plan to run a special series on Mr. Matsumoto fruit cocktail creations as he is more than happy to share his recipes!

Incidentally prices are very reasonable for this type of establishment in Japan. Count 1,800 yen for the first cocktail (with obligatory snack) and 800 yen from the second one. Light food is also available as well as soft drinks, beer and coffee.

When Karl Emerson, a native from Birmingham City, U.K., opened Our Boozer in July 2003, customers were mostly expats in search for a homey waterhole. Things have slowly evolved since then. These days Japanese patrons make for a good half of the clientele, although English is still the prevalent language.
Karl, into his ninth year of residence, strives to create an easy-going environment where customers fel like “going abroad without leaving Japan”.
Parties of all kinds and budgets can be quickly arranged.

Typical pub food is plentiful at very reasonable prices:
Burger (750 yen), Lamb Grill (1,200 yen), Cottage Pie (850 yen) all served with generous garnish.

Abbot Ale, Carlsberg (after all, the owner’s name is Karl!) and Guinness are served at the tap at 750 yen~ a pint. All kinds of drinks and cocktails can be quickly prepared and served.
Among the attractions are a large TV screen for all major sports viewing, a pool table and an elctronic darts board.
The late hours and informal setting are conducive to making new friends in complete relaxation and freedom of movement as drinkers (and diners) can choose either to sit down, stand or walk around according to their preferences and companions.
A luxury in this crowded bustling city!

Speak EZ Bar was established in 2000 by a young Canadian man named Brent. It is located in the centre of Numazu city. The bar is at the heart of the gaijin community in the city. It’s a popular watering hole where people come to enjoy draught kirin, imported bottled beers or cocktails. There’s also a food menu offering a range of delicious ‘pub grub’, such as pizza, hamburger, Mexican wraps, homemade chilli con carne and Aussie meat pies.

Brent along with his dedictated and friendly staff are bi-lingual and always take the time to get to know the customers. During the week the bar has a laid back mellow feeling with a few regulars dropping in for a chat, a bite to eat and a drink. There’s a darts board and free internet for those looking for activities. There’s also a free library filled with interesting books for those who are in need of English reading matter. At the weekends the bar transforms into a lively venue for various events including live music, salsa nights, and DJ nights. On ocassion sports fans gather to watch soccer and American football on the big widescreen TV at the bar.

The clientele is a refreshing mix of foreigners and local Japanese. The bar is not only popular with American, Canadian, Australian and British teachers but also attracts many South American and Middle Eastern patrons.
