Persimmon Trees: Autumn has come to Mariko in Shizuoka City!

Autumn/Fall is finally arriving in Shizuoka City!
The other day I visited the Mariko Area, one of the main tourist attractions in Shizuoka Prefecture and even in Japan where they were awarded a commemorative stamp!

Mariko is naturally an important tourist attraction, but if you walk along the lanes away from the crowds you will discover many farm and old houses worth a second and third look and many camera shots!
let me share the pictures I took on that day with you!

You will find two types of persimmons in Mariko:
Shibu Kaki/渋柿, as above, which are small and pointed and eaten dried as the fresh fruit is too astringent!

The very thick leaves are still green.
When those redden they are used as decoration on plates under food in Japanese restaurants!

Here is a tree with the second variety of persimmons.

Squat persimmon or Jirou kaki/次郎柿 in Japanese.
Did you know this particular variety was first grown in Shizuoka Prefecture in the 19th Century?
They can be eaten raw as opposite to Shibu Kaki!

Shizuoka Fruits to Look Forward to This Summer-1: Jirou Kaki-Jirou Persimmon-Squat Persimmon

Jirou kaki or Jirou Persimmons/Squat Persimmons are not to be confused with “normal persimmons”, or heart-shaped Hachiya which is the most common variety of astringent persimmon. Astringent persimmons contain very high levels of soluble tannins and are unpalatable if eaten before softening.

The astringency of tannins is removed through ripening by exposure to light over several days, wrapping the fruit in paper for heating it, and/or artificially with chemicals such as alcohol and carbon dioxide which change tannin into the insoluble form. This bletting process is sometimes jumpstarted by exposing the fruit to cold or frost which hastens cellular wall breakdown. These astringent persimmons can also be prepared for commercial purposes by drying.

The non-astringent persimmon, or Jirou kaki, is squat like a tomato and is most commonly sold as Fuyu. Non-astringent persimmons are not actually free of tannins as the term suggests, but rather are far less astringent before ripening, and lose more of their tannic quality sooner. Non-astringent persimmons may be consumed when still very firm to very very soft.

Actually, Jirou Kaki/Jirou Persimmons are the pride of our Prefecture, Shizuoka Prefecture, as they were first grown in 1844 by a farmer called Jiroushi Matsumoto in Mori-Cho, Western Shizuoka Prefecture!
Their trees were finally successfully raised in 1869.

The persimmons were finally given their name, Jirou Kaki, by the Emperor of Japan upon his meeting with Fujitarou Suzuki (the grower of that time) in Mori-Cho where a Shinto Temple is still dedicated to the Emperor of Japan.

Although I personally like them fresh either as dessert or in salads with vegetables, my favourite is dried persimmons, a big business in Shizuoka Prefecture!

Vegan Japanese Cuisine: Daikon & Dried Persimmon Salad

Persimmon can be enjoyed all year round if you dry them.
Now, if you cannot get them on the market, dry them yourself in season next time. It’s not difficult:
Peel them completely, keeping the petal and stem core. Pass a thread through the persimmon and under the stem core. Hang them to dry in the sun (when it rains hang them in dry place).
Preserve them with a sugar coating in a dry box or freeze them!

INGREDIENTS:

-Daikon: 4 cm long cut
-Dried persimmons: 2~3
-Ground sesame seeds/surigoma: 2 tablespoons
-Rice vinegar: 2 tablespoons
-Sugar: 1 and a half tablespoons
-Light soy sauce: a little
-Salt: a pinch

RECIPE:

-Cut the daikon in 2 mm thick, 1×3 cm strips. Massage them with salt and wash them in clear cold water. Drain thoroughly by pressing them inside your hand/fist.

-Cut the stem core out of the dried persimmon. Wash the persimmon with rice vinegar. First cut cut in half, spread and cut in 2=3 mm thick strips.

-Drop the ground sesame seeds in a bowl Add the rice vinegar, sugar, soy sauce and salt (experiment!). Mix well.
If you do not have ground sesame seeds, first grind 2 tablespoons of sesame seeds in a mortar with a pestle until it has turned into a rough paste.
Add the daikon and persimmon. Mix well and serve (themore artistically, the better!LOL)

Add some small leaf greens for the finishing touch!

Jiro kaki/squat persimmons

As demonstrated by many food bloggers, cooking and creating great foods and drinks have become incomplete and unsatisfying when not considering the benefits or adverse effects of the same foods and drinks regardless of their taste.
I do not intend to delve into counselling or consulting, but only to offer some knowledge about the good sides of Japanese foods and drinks. I will not extoll on its possible lacks and negative aspects. After all, the Japanese are not the longest-living people in the world for no reason!
I will also offr at least one nutritious or healthy recipe at the end of each posting.

Health & Nutrition Facts in Japanese Food 3: Persimmon/Kaki/柿

A persimmon is the edible fruit of a number of species of trees in the genus Diospyros in the ebony wood family (Ebenaceae). The word Diospyros means “the fruit of the gods” in ancient Greek. The word persimmon is derived from putchamin, pasiminan, or pessamin, from Powhatan, an Algonquian language (related to Blackfoot, Cree and Mohican) of the eastern United States, meaning “a dry fruit”.
Persimmons are generally light yellow-orange to dark red-orange in color, and depending on the species, vary in size from 1.5 to 9 cm (0.5 to 4 in) diameter, and may be spherical, acorn-, or pumpkin-shaped. The calyx often remains attached to the fruit after harvesting, but becomes easier to remove as it ripens. They are high in glucose, with a balanced protein profile, and possess various medicinal and chemical uses.

Dried Japanese Hachiya persimmons.

The Japanese Persimmon or kaki (柿) (Diospyros kaki), “shizi” (柿子) in Chinese, is the most widely cultivated species. These are sweet, slightly tangy fruits with a soft to occasionally fibrous texture.
It is edible in its crisp firm state, but has its best flavor when allowed to rest and soften slightly after harvest. The Japanese cultivar ‘Hachiya’ is a widely grown cultivar. The fruit has a high tannin content which makes the immature fruit astringent and bitter. The tannin levels are reduced as the fruit matures. Persimmons like ‘Hachiya’ must be completely ripened before consumption. When ripe, this fruit comprises thick pulpy jelly encased in a waxy thin skinned shell.

HEALTH FACTS & TIPS:

-Combined with cucumber, or with wax gourd/winter melon, or with chickory, or with lettuce, will help recover from diuretic problems, will help prevent stress and improve blood circulation.

-Combined with Chinese cabbage, or with cabbage, or with shungiku/春菊/crown daisy leaves, or with fuki/ふき/giant butterbur, will help prevent cancer and fortify the digestive system.

-Combined with soy beans, or with egg-plant/aubergine, or with potato, or with tomato. will help prevent high blood pressure and blood vessel hardening, heart and cardiovascular diseases and ageing.

-Combined with Jew’s ear mushroom, or with wakame seaweed, or with octopus, will help prevent diabetes and cancer, as well as combat obesity.

RECIPE:

Here is a simple recipe to help fortify the digestive system and help prevent cancer and ageing:

-Persimmon: 1/2
-Tofu: 100~150 g
-Shirataki/Konyaku: 1/2 standard sheet
-Shungiku/crown daisy leaves: as appropriate
-Sesame seed paste: 1 tablespoon
-Sugar: 1 tablespoon

Choose stiil a bit hard. Peel and discard seed. Cut in thin slices about 3 cm long.

Press water out of tofu. Boil the konyaku for a little while. Cut in thin slices about 3 cm long. Cut the leaves off the crown daisy and boil them lightly. Drain thoroughly and cut into 3 cm long pieces.

Drop the tofu in a suribachi/mortar. Add sesame seed paste and sugar and mix well with a pestle.

Place cut persimmon, crown daisy leaves and konyaku on a serving plate. Top the salad with the tofu paste and serve!

This particular (very few in Japan) Persimmon Vinegar was created by the man who revolutioned Shizuoka Sake for the last thirty years, Denbei Kawamura of Shizuoka City.

Contents:
Volume: 500 cc
Jiro Persimmon extract (variety created in Shizuoka Prefecture in 1884, grown by Niko Niko Koen): 20%
Yeasts: Shizuoka HD-1 and vinegar yeast No 34
Citric acid: 4.0~4.5%
Bottled in June 2007 (original batch)

Its creator declared it is particularly beneficial against high blood pressure and cardiovascular diseases. High in vitamin C, it also helps prevent skin trouble. Other vitamins include B1, B2, Carotene. Finally it is high in minerals.

It can be used for seasoning or drinking.
I particularly appreciated it mixed with Shizuoka mineral water. It gives a great original flavour to dressing and sauces. Highly recommended.
