1) Honami


At long last, I tasted my first bottle from Senju Brewery in Iwata City. I can’t explain why, but I have problems to put my hands on the this prolific Brewery in the west part of our Prefecture!

This brew’s name, Honami, is quite poetic as it means « rice shaffs waves »!
This is a « biological » sake as the 100% Goyakumangoku rice strain is grown around Iwata City, an area famous for its agriculture, without any artificial fertilizer or pesticides.
It is a « seishu » junmai, 15.5 degrees of alcohol, rice milled down to 55%, making use of water from own well fed by Tenryuu River.

Clarity: very clear

Colour: Transparent

Aroma: light,ricey + pears

Body: Light and velvety

Taste: Petillant on the palate. Bananas, pears. Later vanilla and bitter chocolate

Aftertaste: Petillant lingers around at the back of the palate with pearsand vanilla.

Overall: Pert, feminine. Would go well with chocolate and desserts.

2) Daiginjo


Senju is a very old Brewery in Iwata City which along the years has absorbed a couple of neigbouring Breweries. They are the only Brewery in Shizuoka having a license to produce brewery alcohol. Obviously they make a great use as demonstrated in this particular brew.
Senju Brewery does not give many indications on their sake, apart that it is made from Yamada Nishiki rive milled down to anextarvagant 35%.

Clarity: very clear

Colour: practically transparent

Aroma: light/fruity

Body: light/elegant

Taste: complex. Fruity/peach/anise/strawberries later revealing liquorice and bitter choclate.

Overall: very elegant, a session sake. To be drunk on its own, although it would go well with almost any food.
3) Senju Junmai


Last Friday, I took the opportunity to sample Senju Brewery nectar in Iwata City as Sushi Iroha offered the whole range. I opted for 300ml bottle of Junmai

Clarity: Very clear
Colour: light golden tinge
Aroma: Flowers
Body: fluid
Taste: Dry with a long tail. Very clean. Fruity and flowery/licorice.
Overall: Goes down very with food, sushi in particular. Turns sweeter with food. Shows different facets depending on fare. Intrigうing and easy to drink
