I have just had the occasion of tasting a sake a bit off the tracks by Hamamatsu-Tenjingura Brewery in Hamamatsu City!
Its name is Kijyoushu/貴醸酒, and it is done by adding already made junmai sake to the leftover moromi/mash of the same sake as opposed to an unfiltered sake! You could it is blended for further fermentation!
Naturally it is a limited brew!
Alcohol: 15~16 degrees
Bottled in November 2014
Clarity: White and smoky, normal due to contents of white lees, but very clean
Color: white
Aroma: Sweetish and assertive. Pears
Body: Siruppy
Taste: Very strong junmai petillant backed attack. very fruity.
Complex. Pears, apples, with hints of lychees.
Lingers for a while warming up the palate before departing on a drier note.
The petillant will tone down along the way.
Turns slightly sweeter with food with a comeback of the petillant.
Overall: very interesting and elegant white lees sake.
Would definitely appeal to ladies as a white lees sake.
Reminiscent of “namazake”!
