Barley, Maris Otter malt, Crystal malt, Munich malt, Black malt, Chocolate malt, Australian galaxy Hop, Sylva hop, Select hop,live yeast
Unfiltered
Alcohol/ABV: 5.3%
Bubbles: very fine bubbles Longish, white color
Clarity: slightly smoky (normal considering live yeast and being unfiltered), very clean
Color: very dark brown
Aroma: light and dry. Caramel.
Taste: dry and smooth attack with some pleasant acidity.
Caramel, biscuits.
Lingers long enough for true tasting before departing on a drier note with faint chocolate notes appearing late.
Full body. drinks very easily.
Stays true to first impression all the way through.

Overall: The kind of beer all genders will appreciate all year round.
Very soft for a brown beer.
Slightly softer than its predecessors.
Refreshing, complex enough and utterly satisfying.
Great on it own but would superbly marry with salty and fermented foods!

Shimizu Fish Market (清水魚市場) in Shimizu Ku, Shizuoka City!

Shimizu Ku, formerly Shimizu City, a city of its own, before it was merged into Shizuoka City, has always been a major fishing harbor in Japan.
It is actually the biggest tuna hauling port in Japan (not Tsukiji where everything is more or less sent to!)!
Since Shimizu Ku’s merger it has been expanded and modernized together with Shimizu JR Station but the quaint old-fashioned market open to the public is still there!

To find it get off via the North Exit of Shimizu JR Station and walk for about 10 minutes.
It is pretty well indicated and difficult to miss.
Bear in mind there are two entrances.

Okuni Shrine (小国神社)is on of the four major Shinto Shrines in Shizuoka Prefecture although its locatin is not that practical.

If you are not motorized one way to access and make it a worthwhile trip is to board the Tenhama/ Tenryuu Hamanako Railway Line/天浜線 and get down a t small station called Tootoumi Ichinomiya/遠江一宮 and take a free limousine to the Shrine!

Barley, Wheat, Maris Otter malt, Munich Malt, Caramel Malt, Wheat malt, Magnum hop, Sylva Hop, Summer hop, Topaz hop, Shizuoka Ama Natsu Oranges
Unfiltered
Alcohol/ABV: 6%
IBU: 29
Bubbles: very fine bubbles. Longish head. creamy, white
Clarity: slightly smoky (normal considering live yeast and being unfiltered), very clean
Color: orange color
Aroma: light and dry. Citruses, biscuits.
Taste: Dry and acid attack (more acid than previous batch!)
Complex: oranges, biscuits, bread
Lingers long enough fro true tasting before departing on an even drier note with more oranges and lemon.
Varies little with food but for a further accent on its dryness.

Overall: A dry and acidic beer for all seasons!
Will marry beautifully with BBQ food and heavy food in particular!

Service: A bit shy and busy but very friendly!
Equipment & Facilities: Overall very clean. Excellent washroom
Prices: Reasonable
Strong points: Very fresh fish and seafood directly from Numazu harbor for the main part. Also features other Japanese cuisine. Good drinks list

I had the other day the occasion to visit one of Uogashi Sushi restaurants, a chain which originated in Numazu City and now has establishments as far as Yokohama.
They serve a good array of fish and seafood at comparatively (for sushi restaurants) reasonable prices. They can be classified as median regarding the standards of quality in Japan but they have the merit to serve some of the freshest produce in the country!

Shizuoka Sake Tasting: Fujinishiki Brewery-Fujinishiki Junmai Genshu Nama “Juku” (conducted at la Sommeliere in Shizuoka City)

I don’t mind repeating it all the time but I prefer conducting sake tastings in the right environment but not many places are propitious for that exercise or willing to help.
But La Sommeliere in Miyuki Cho, Aoi Ku, Shizuoka City is certainly becoming a habit as not only I can conduct my tasting in the best conditions possible but also exchange views at the same time!

This time I tasted another brew by Fujinishiki Brewery in Fujinomiya City!
It is a Junmai Genshu Nama called “Juku/塾/Matured”!

Rice: Nihonbare (Shiga Prefecture)
Rice milled down to 60%
Alcohol: 18~19 degrees
Dryness: + 6
Acidity: 1.8
Bottled in October 2015

Clarity: very clear
Color: golden hue, very similar to a white wine
Aroma: assertive, dry and fruity.
Muscat, raisins, custard, musk melon, hints of peach, ripe figs and chestnuts
Body: slightly sirupy
Taste: dry and mellow attack at first backed only with a little junmai petillant with some welcome acidity.
Complex: custard, peach, figs, chestnuts.
Lingers for while warming up the back of the palate before departing on a strong dark chocolate appearance.
Very easy to drink in spite of its high alcohol contents.

Overall: a very intriguing sake you can enjoy as a high class mellow white wine!
Will splendidly marry with practically any food.
Stays complex all the way through and showing ever-changing facets probably due to the unusual rice and the high alcohol contents.
Very unusual for a Shizuoka Prefecture sake.
A must-try not only as a sake but as a high class beverage for a whole meal.
You will overwhelm your guests!

Recommended pairings: ebi shumai, oden, cheese, chawanmushi, yakitori, terrines and pate.
