Today’s Bento/Lunch Box (12/13): Chicken Wings, Broccolini & Dekopon Bento!

Chicken wings seem to be a universal favorite and I surely like them although they are prepared with a slight difference here in Japan!

Today’s main box certainly included quite a few specialties from the Missus!

Having steamed fresh rice, she filled the main box with it and topped with chicken wings leftovers from last night.
The Missus makes her chicken wings in two steps:
1) She fries them first in oil over a hot fire.
2) After having attained a nice brown color she simmers them with mirin, soy sauce, “something else”, hot chilies and Coca Cola!
The meat is so tender and juicy that you can detach it from the bones with your fingers!
What you see above is the meat without the bones!
The Missus added her special marinated boiled egg with a sprinkle of black sesame seeds for contrast.

She added plenty of lightly boiled broccolini (also called rape flowers) seasoned with gomadare/sesame dressing and sesame seeds and a cup of home-made pickles: carrot. leaf ginger, cucumber and pimentoes.

For salad and dessert: lettuce and mini tomatoes and “dekopon” oranges. The latter come from Onuma Farm in Okitsu, Shimizu Ku, Shizuoka City (report coming soon!)! Incredibly sweet and fragrant!

Plentiful, tasty and colorful. The perfect lunch before going to interview a farmer all afternoon!

Giving fruit as a gift is a common custom in Japan. But this fruit is not your normal greengrocers’ produce, complete with bumps, bruises and blemishes. The pick of the crop is grown with exquisite care and attention to detail – and commands an eye-watering price when it comes to market.

Masaomi Suzuki has been working in his steamy greenhouses for 50 years, but even after all that time he says he still learns something new every day.

The process begins with the perfect seeds. The local farmers’ association breeds a new strain every year, seeking continuous improvements. Weak seedlings are weeded out. Then when the flowers appear, poor specimens are ruthlessly plucked and discarded.

Fruit Cocktails by Masayoshi Tainaka at Bar Le Refuge (1): Kiwi Fruit!

Service: Pro and very friendly, if a bit shy
Facilities: Great overall cleanliness. Beautiful washroom.

Strong points: Great Fruit Cocktails. Very quiet and relaxing bar. Difficult to find liqueurs.

Shizuoka Prefecture is actually the third producer of kiwi fruits in Japan way ahead of the rest!
It is full season for all kind of varieties during the winter and here is another basic recipe for any kind of this exquisite fruit!

INGREDIENTS:

Kiwi fruit: 1
Sugar (if possible “wasanbon satou/和三盆砂糖”): 2 small teaspoons
Bacardi white rum: 30 ml
Crushed ice
Mint leaves

RECIPE:

Put the cut kiwi, sugar, Bacardi white rum in a blender and blend roughly.
Taste and rectify with a dash of rum if necessary.
Add crushed ice and blend again until smooth.
Pour into an elegant cup glass.
Decorate with a half slice of kiwi fruit and a sprig of fresh mint.
Provide straws.

Very sophisticated and satisfying freshness.
A lady’s favorite, but as a man I was extremely pleased!
A very healthy cocktail actually!

French Gastronomy: Summer Desserts at Pissenlit in Shizuoka City!

As promised let me introduce you to the desserts I shared with my good friend the other day at Restaurant Pissenlit in Shizuoka City!

The title for this superb dessert was “Chilled Musk Melon Soup with Paris School” Cognac Sorbet!

The soup was conceived with white wine and musk melon from Fukuroi City, the major musk melon producing city in Japan.
The sorbet was made with French Cognac.
The two together exploded inside the palate with all kinds of flavors happily fighting with each other for supremacy!
Not a dessert to be handled by children!

The title for the second dessert was purposefully kept vague: “Today’s three-Sorbet Assortment”…

It certainly became a tantalizing dilemma to find the right order to sample the sorbets!
Watermelon…
or Cognac…
or Tropical Fruit…!?
For once, I kept my instincts in check and savored them slowly one by one!

I belatedly realized that the accompanying fruit were in direct relation with the sorbets!
Watermelon…watermelon sorbet!
Mango…tropical fruit sorbet!
Grapes…Cognac sorbet!

Alright, the organic mint is only there for the finishing touch! LOL

Nashi-Japanese Pears at Ichikawa Garden in Iwata City!

Two generations of Japanese Pear growers: Takeshi and his parents, Toshiyuki and Kumiko Ichikawa/市川、利行、久美子さん!

Nashi/梨/called Japanese Pears, Nashi Pears or Sand Pears and many other names are the fruit of hot summers par excellence!
One has to bite into one of these crunchy and extremely juicy, and absolutely delicious, fruits once to understand why Nashi Pears are also venerated as the true fruits of life!

It was another blinding hot day again yesterday and I was certainly grateful for Takeshi San to come all the way to Toyoda Cho Station and then to take me all the way again to their fields and house!
The same fields are heavily protected by nets for all kinds of obvious natural reasons!

Housui Pears/豊水梨!

The Ichikawas mainly grow two varieties of nashi pear, Housui/豊水 and Kosui/辛水, the former ripening in August and September and the latter in full production right now.
Both are extremely juicy and tasty!

Kosui Pears/辛水梨!

The Kosui Pears are lighter in color wth a different skin pattern.

Growing nashi pears organically at sea level is practically impossible but all that grass proves that the Ichikiwas use only the strict minimum of pesticides! Actually, they have cut all ties with official “Agriculture Associations” so as to conduct the agriculture they think is right!

A lot of pears fall naturally and they will be included with other natural fertilizer to be mixed with the soil when they till the ground between the trees in winter.

I can assure you it is tough work to keep these orchards clean in their three locations for a total of 40 acres, what with typhoons and other unpredictable weather conditions!

For all the hard work harvesting lettuces in winter, corn in spring, pears in summer and rice in autumn, they never stop smiling!

The crop of the day!

A lot of manual and mechanical work involved!

Takeshi’s father started his orchards 30 years ago and gradually replacing all these trees takes time and care.
The above have a difference of more than 25 years! The old one is actually about to collapse!

The orchards have to be protected not only with nets against birds but also with electric wires against civets!

Takeshi san took me to another field where new trees had been planted 5 years ago and bore their first commercial crop!
A lot of investment is involved there!

These new branches will be bent down into a canopy at head level for better reach and control!

These are actually a new variety called nikkori/にっこり that matures as late as October!

You will not find the Ichikawas’ pears in any shop as they sell them only directly at their orchards or from personal order!
Even so they have a hard time satisfying all the demand. A proof of the extravagant quality!

Already all packed and ready to go!
Don’t worry, I managed to get mine!
Actually I can help you get them personally!

As any farmers worth their salt, the Ichikawas grow all kinds of vegetables for their own use and extra earnings!
I took a big batch of those beautiful okra back home!

Shizuoka City and Prefecture are not only famous for their vegetables, but also for their fruits, and figs are certainly very popular here!
Shizuoka Prefecture also produces more than 45% of the total green tea crop in Japan, but did you know it was also the birthplace of dark tea (black or red) in Japan?

Chef Tooru Arima/有馬亨さん has this knack and talent to combine French and Japanese gastronomies in a constant search for originality and new tastes!
I wonder how much time he spends on them as the simple complete peeling of a fig before cooking it in compote is painstaking and sticky work!

Preparing food is one thing, but presenting it is certainly another!
No wonder Tooru’s desserts are so celebrated in this town!
Incidentally, this beautiful mint is organic from Hirokawa Garden in Mishima City!

The jelly is made from dark tea cultivated and processed in Shizuoka Prefecture and laid over a granite made with the juices of the fig compote!

Yes, not only a spoon but you also need a fork and knife to fully enjoy and appreciate this superb dessert!
I do not need to explain the pleasure I had cutting the fig and admiring the colors!

And it was absolutely succulent and again perfect in this hot weather!

French Cakes and Blueberries in Hamamatsu City: Abondance!

I paid a belated visit to Abondance owned by Bernard Heberle, a French national like me, in Hamamatsu City to see how well he was doing.
Mind you, I didn’t worry a iota as he has recently been elected the best Cake Shop in the Prefecture!

You can’t miss the elegant blue-colored shop in front of the Seirei Hospital!

Not many cake shops have a doormat, a sure sign of attention to customers?

The man himself who has been running his shop among many other concerns for the past 9 years!
Bernard hails from Souffleheim in Alsace, France!

His “Cuisinier de France” award!

Bernard has a passion for anything called a Citroen car!

Now, where do all these blueberries come from?

Well, Bernard always tries to get his seasonal fruit locally and his blueberries are grown for him at Aoitori Blueberry Orchard in Hamamatsu City!

Bernard with Satoshi Satoh/佐藤聡さん, first-generation blueberry grower for the last five years!

You can also pick blueberries there in season for a very reasonable fee!

A very clean and modern orchard where no pesticides are allowed!

Satoh San cultivates 20 varieties of these beauties for a regular supply.
Incidentally, he also grows some trees for Bernard’s sole use!

All fruits are ripened on the trees. These will be late bloomers.

Can’t wait to eat these when fully ripe!

Hamamatsu Fruit Park!!

Half way along our trip riding the Tenhama private Railway Line the other day we decided to pay a visit to the Fruits Park of Hamamatsu City.

We had only one hour until the next train and the walk to the Fruits Park takes 10 minutes.
We knew we would be limited in time and the blistering heat didn’t help!

At least looking at the pavement we knew we couldn’t lose our way!

The park is truly enormous and the car park is even bigger.
We realised that we had to limit this visit to the main attraction, the Tropical Fruit Dome!

The hall leading to the dome was full of information but the air-conditioning did not prepare us to the heat inside the dome!
By the way if you can read japanese check their HOMEPAGE as it will help you recognize some very strange fruit!

What is this fruit?

The temperature inside must have been well above 30 degrees with an incredible humidity.
The sweat prevented me to jot down notes and I’m afraid I don’t remember the names of some fruits! Let’s see if you can help me!

Fortunately there was plenty of running water to help cool down the dome!

Not only tropical fruit, but also plenty of beautiful flowers!
All in all, 80 varieties for 300 trees and plants!

Outside the dome a cafe/restaurant will welcome you inside a beautiful park.
But actually the Tropical Fruit Park and the big park with ponds outside represent only one fourth of the whole complex!
You will have to plan half a day for a complete visit even with the help of a mini train!

Among others, you will discover fields of plum trees, orange trees, apple trees, strawberries, grapes, blueberries, kiwi fruit, almond trees, figs, peach trees, pomegranate trees, a field of nut trees including chestnuts and a lot more inside greenhouses and experiment fields!

This park will warrant a least a couple more visits to describe it all!

Blueberries with no pesticides in Shizuoka City: Masako Mochizuki!

A true farmer’s abode growing their own food (tomatoes)!

In Shizuoka (and in Japan most of the time for that matter) you very quickly move from the sea to deep into mountains within minutes when you embark into an interview of a local farmer!

This is when you need friends, especially considering I do not drive (I never did in my life!).
Mind you, I could use a bus or even my bicycle in that case as we went as far as Gojima/後島 up the Abe River, a beautiful trip in itself!

But my good friend, Mrs. Natsuko Koyanagi/小柳奈津子さん, who knows all the farmers along the river, was on hand again to help me!

This is green tea land, too!

Tell the truth, Masako Mochizuki is a celebrity in the region. If you are lost just ask for the blueberry lady’s house!

The Mochizuki family, like all farmers around, had been growing tea and other staple crops when 15 years ago a friend approached Masako personally to ask her to grow blueberries, known to be extremely beneficent to health and eyes in particular!

One of the gadgets to fend off birds. Masako San said that it actually turned more into decoration than anything else!

A remarkable fact is that Masako San does not use any pesticide whatsoever, a notable rarity for that particular crop!
As for fertilizer she mixes only the minimum with home-made compost and others!

She grows 40 varieties, 10 of for sale, in 5 fields on a total area of 700 tsubo/2,300 sauqre meters.
I just can’t describe or take a picture (I’ll come back again anyway!) of all varieties or I’ll into a boring specialist!
But let me show a few of the trees that attracted my attention!

The different varieties will mature at different times. The above won’t be ready for harvest before at least a week.
That does not prevent Masako San and her husband from picking 10 kg of blueberries every morning between June and August!

Medium-sized type with a great balance in taste! I picked quite a few of these!

My personal harvest of two varieties. Considering that the same trees had been harvested early that morning, I was more than satisfied!

A very small part of the morning’s harvest. Truly enormous and so sweet with the right touch of acidity!
I know a lot of chef friends who are going to ask questions!

As I said previously, blueberry is also considered as natural medicine in this country, so Masako, apart of creating jams and jellies, also make blueberry soap!

Joboticaba and Tropical Fruits at Nishikawa Garden!

I finally made it to Nishikawa Garden!
It is located far into Mariko, a good hour by bicycle from the center of Shizuoka City!

I thought I was lost by the end of my journey and had to retrace my route before making another U-turn and finding the board sign I was looking for!

I knew I was in the right place when I discovered the “Truck cafe” at the entrance of the greenhouse!
I couldn’t afford to make any mistake as they open the greenhouse and cafe to the public only on Sundays!

Yoshinari and Aya Nishikawa/西川宣成と文夫妻!

Mr. Nishikawa, a tea and citrus grower got interested in tropical fruit about 8 years ago and started experimenting with Jaboticaba and mangoes in particular.

Having succeeded with their cultivation inside his two big greenhouses, he opened Jaboticaba Cafe and Garden in October 2009 to allow customers to visit his greenhouses and buy his products on Sundays!

I first visited his mango garden.
Interestingly enough they are not on sale as they are completely booked by private clients!

Although this particular crop is not officially registered as such it is grown organically without pesticides or artificial fertilizers!

Mr. Nishikawa does not follow the general practice of pairing the trees to one single mango for each main branch.
He believes in natural growth!

These will become beauties soon, but I won’t be able to buy a single one then…

Jaboticaba is an odd fruit indeed!
Mr. Nishhikawa originally imported the seeds from Okinawa.
Although “classified” as a tropical fruit it grows best in temperate conditions (around 20 degrees) and can resist lower temperatures as long as no frost occurs.
A visit to the Wikipedia Site should give you a good idea of its rarity outside Southern America, the more for it because of its fragility!

The fruit-bearing flowers appear directly on the trunk and branches away from the leaves!

Then the many flowers suddenly become green fruit before maturing later into a big dark red pearl!

Mr. Nishikawa cultivates four varieties depending on size and fruiting seasons!
All are sweet with a taste both reminiscent of lychees and grapes.

It is packed with polyphenols and antioxydants!

Some Jaboticaba are grown in Kyushu and Okinawa islands but don’t appear on the markets because of their fragility.
The only other place where they are grown in Japan (some are in Taiwan) is Nishikawa Garden in Shizuoka City! And organic to boot!

Organic coffee trees on sale!

Mr. Nishikawa has also succeeded with the organic culture of coffee but the crop is just too small to be marketed!

Now, the Nishikawas struck on the great idea of creating a Cafe to encourage customers and their families to taste the various products they make with Jaboticaba and other crops!

Have a good look at the menu before choosing between breads, cakes, jaboticaba drinks and others!

Yummy cakes, some of them made from recipes offered by Pissenlit Restaurant in Shizuoka City!

A lovely panacotta with jaboticaba jelly!
This is the only place you will find jaboticaba jelly in Japan!
They even make jams!

My neighbors were sipping those beautiful jaboticaba soda drinks!

Mrs. Nishikawa has a very unusual hobby!
Oranges that cannot be sold because of blemishes on their skin are peeled before being processed.
Mrs. Nishikawa collects the soft white part between the skin and the flesh, dries it between sheets of newspaper and use it to make this big picture of jaboticaba trees!
The technique is called “oshibana/押し花” or “Pressed Flower Art” in English!
Who said farmers could not be artists!
