Entirely Non-Smoking Restaurants (& Bars) in Shizuoka Prefecture (February 19th, 2014)

Beautiful Vegetables at Tetsuya Sugimoto in Shizuoka City!

I agree that this particular article has been long overdue.
Not only my expats friends, but many Japanese friends have been at pains at finding restaurants, bars and cafes where they wouldn’t have to put up with the hazards and stink of smoke inhaled and expelled by uncaring customers.
Some time ago I mentioned partially non-smoking restaurants but I see little point to mention them unless the entirely non-smoking times are clearly announced and respected!

This is of course not an exhaustive list, but it will be regularly updated as I visit establishments for work!
There is no special order to this list, they come as they come!

One more important point: Non-smoking is not the only criterion, good food is, too!
If you are kind enough to recommend me restaurants not introduced here it will be my pleasure to survey them!

When it comes to reasonable, healthy food in a clean environment Cenova Department Store in Aoi Ku, Shizuoka Citycan be a blessing even if it is crowded at times.
Dragon recommended me CHAO the other day and I paid it my first visit at lunch today.
The place was actually busy but I was ushered in with a smile and attention.
When I placed my order the waitress went as far as to inquire if I had ordered too much!

Shizuoka City, in Utogi for that matter, is the birthplace of wasabi. But the city itself is very large, the second largest city in Japan, area wise, and wasabi is grown in many other spots along the Abe River in particular.

my chef friends and I had to drive a long way up as proved by the snow still clinging to the mountains in the background. Actually these mountains are still part of Shizuoka City!

This is still much rural traditional Japan as typified by the Sugiyamas’family farmhouse!

It still took us one more mire to meet Masahiro’s family busy harvesting wasabi in their fields at 600 meter-altitude!
As Masahiro is the third generation as far as wasabi is concerned (he also grows tea, shiitake, konyaku roots and so on) you can see the second generation represented by his parents and the 4th generation in the person of his daughter still studying at Agricultural University in Hokkaido!

The wasabi fields which have to be protected from monkeys, wild boars, deer and other pests!

These wasabi which take about 12 to 18 months to grow from seedlings are almost ready for harvest which is conducted all year round.

Wasabi culture is organic when sawa wasabi/fresh running water wasabi is concerned.
Masahiro, for better protection against disease and insects prefers to buy his seedlings from a nearby grower than to make his own seedlings.

Wasabi culture is a tough job daily conducted whatever the temperature although the water has a constant temperature between 12 and 16 degrees all year round.

We are not far from the source of the Abe River and the water here is pure and untouched!

I can assure you that all protection is needed as we discovered whole groups of monkeys prowling nearby!

Those “steps/dams” were built a long time ago and they don’t interfere with the purity of the water.

Not only the roots of these wasabi but also the leaves and stems are very popular with the local chefs who order directly from Masahiro Sugiyama according to their own specifications!

We all took batches back home! So sweet and crunchy! You will find such at supermarkets!

No wonder these beauties fetch such a price (mind you, they are comparatively cheap here!)!

Soba or buckwheat noodles must be one of the healthiest staple food in this world.
And it complies with almost with any dietary requirements be they those of vegans, vegetarians, gluten-free dieters and what else!
And to top it all it is simply delicious!

The other day after interviewing a local wasabi grower in Umegashima, Aoi Ku, Shizuoka City, my chef friends and I decided to visit a local soba restaurant up in the mountains among farms.
You certainly need a navigator to drive there!

Very traditional atmosphere where you can sit either at a table and chair or on the tatami straw floor!

Ordering is very simple:
They serve only one kind of soba and one miso yaki!

Mind you, they have no less than three kinds of Japanese sake available!
Don’t forget that not so long ago people had to go to the local soba shop to drink Japanese sake!

Miso yaki, a typical offering at a good soba restaurant is a mixture of miso and buckwheat grilled on a wooden spoon! A must-try!

Don’t forget to mix these ingredients in the tusyu/stock soup before dipping your buckwheat noodles!

The soba are made on the day only, served exclusively at lunch and the restaurant will close as soon as the soba have been all served! So come early!

Prices: reasonable to slightly expensive, but very good value!
Strong points: Extensive use of local land and sea products. Great sake and drinks in general!

Izakaya gastronomy is THE gastronomy of Japan.
It comes at different levels and prices from the cheap small food stands to some elaborate establishments with the consequent prices.
If one truly wants to discover local food and ingredients just visit the many izakayas you are bound to find anywhere in Japan!
Now, in Shizuoka, as we are blessed (and that officially!) with the largest number of varieties of land and sea food in Japan, it becomes a delightful headache as to which place to patronize.
Even so, Bu Ichi in Aoi Ku, Shizuoka City stands head and shoulders above most izakayas in town and prefecture and a lot of regular customers from all status have more than often to battle for a seat!

If you want to sample and enjoy a true Japanese lunch and still very reasonably priced the place is Kohaku in Aoi Ku, Shizuoka City when Takashi Kawauguchi/川口貴士さん works all on its own (in the evening he gets help!) for the pleasure of his customers!

Time had finally come to pay a visit to Uzu again to enjoy the food prepared by Chef Kenya Yoshimura/吉村健也 with mainly local products of a class usully found not in an izakaya but in a top-class Japanese or Western restaurant!
I already mentioned and will always point out that Uzu is the reference when it comes to all izakaya in Shizuoka Prefecture and far beyond!

The Best Aoshima Mandarines in Japan: Mr. Kuniaki Oishi in Okabe, Fujieda City!

Shizuoka Prefecture, among other products such as green tea, wasabi, strawberries and a lot more, is celebrated all over Japan for its oranges!
The other day my good Australian friends, Nick and Yayoi Shannon, who live in Okabe, Fujieda City called me as they wanted me to meet a neighbor of theirs who had just been awarded the top prize by the Japan Agriculture, Forestry and Fisheries Minister for its Aoshima mandarines!

The Oishi’s Farmhouse!

Interestingly enough it became a real expedition last Sunday as we were joined by another good friend, Robert Hirai, an American friend who is a photographer when not working as a navigator on ships!

Time slip!

Mr. Kuniaki Oishi and his wife are the 7th generation of farmers living and working in the mountains of Okabe in Fujieda City, an area celebrated for its great agricultural and wild game. They also represent the 4th generation as Aoshima Mandarines growers.

The paper article mentions that they are 1,000 yen worth (10 US$!) each!

The Oishi’s being used to those foreigners living nearby readily took in their stride this invasion with great smiles and true hospitality!
Interviewing them was more a pleasurable and enriching chat than anything else.
Although he received the 2nd top accolade from Shizuoka Prefecture in 2011 and the very top national prize in 2012, Mr. Kuniaki Oshima (71) struck me with his modesty: “I can only say that I finally started to master my skills at the age of 60”! Farmers certainly could impart a lot of wisdom and humility to us city dwellers!

The “maturing shed”!

Before visiting Mr. Oishi’s fields, we were invited to have a look inside the maturing shed!
The harvest is done in December, which meant we did not interfere too much with the grower’s work.
Mandarines are stored inside a shed to mature for two months before being marketed.
Incidentally, Aoshima mandarines are a variety born a long time ago in Shizuoka Prefecture!

Maturing certainly requires skills and precise storing conditions.
The temperature is maintained as low as 5 degrees Celsius and a regular air circulation must be sustained throughout the whole shed where the mandarines are carefully stored in the dark.

All the wood inside the shed is “dead”, meaning that insects will not find it amenable to their nefarious activities!
We were kindly offered to taste the mandarines out of their boxes.

Although sweet, the balance in sweetness, acidity and “umami” was beyond words!
The Japanese, judges and growers alike, are very picky in their survey and Mr. Oishi had to satisfy no less than 12 different criteria from shape and sweetness to biting/chewing impression!
Needless to say that coming top in 6 of them, especially overall taste, helped him acquire the top reward!

Then we all embarked in one car and a small truck for a visiting expedition of the Oishi’s fields covering one full hectare on very steep slopes over 400-meter altitude in the nearby mountains!

On the way I noticed these electric wires to keep civets, monkeys, deer and wild boars away!

Recently wild boars have become a real plague!
This cage trap can catch a female and at least three cubs which will be culled and have their meat distributed around!

A very Japanese contraption consisting of one “rail” to easily carry harvest inside boxes that descend along terribly steep slopes. They have been used for quite some time now but bear in mind that people still had to walk up and down unpaved roads to reach their fields not so long ago!

Access to the fields is done by small trucks up tortuous roads but all the work has to be done on foot!

Although we are at an altitude of only 400 neters the landscape made the climb all the worth for it to us city dwellers!

It’s lucky that the harvesting is done in winter as the scorching heat in summer allows work only during the first and last few hours of the day!

For all the size of the mountains, space is limited as sun exposure is vital.
Moreover, a big difference of temperature between daytime and nighttime is the first condition for sweet fruit!

Organic agriculture is impossible in these conditions but Kuniaki Oishi uses only the strict minimum of pesticides and fertilizers he buys from the local government agricultural offices.

Even so it is back breaking work as the fields and trees have to be provided with mulch and protected with plastic sheets at various times of the year!
No wonder growers never get fat in this area!
And they are so fit!

And trees have a limited life.
This twenty-year old tree with almost a ten-centimeter thick trunk will have to be cut and replaced in twenty tears time!

It certainly makes you humble to realize all the work behind those fruit we take for granted!

Shizuoka Prefecture is actually the third producer of kiwi fruits in Japan way ahead of the rest!
It is full season for all kind of varieties during the winter and here is another basic recipe for any kind of this exquisite fruit!

INGREDIENTS:

Kiwi fruit: 1
Sugar (if possible “wasanbon satou/和三盆砂糖”): 2 small teaspoons
Bacardi white rum: 30 ml
Crushed ice
Mint leaves

RECIPE:

Put the cut kiwi, sugar, Bacardi white rum in a blender and blend roughly.
Taste and rectify with a dash of rum if necessary.
Add crushed ice and blend again until smooth.
Pour into an elegant cup glass.
Decorate with a half slice of kiwi fruit and a sprig of fresh mint.
Provide straws.

Very sophisticated and satisfying freshness.
A lady’s favorite, but as a man I was extremely pleased!
A very healthy cocktail actually!

The Bartenders Club Shizuoka was founded last month by 7 celebrated bartenders all owning their own cocktail bar in Shizuoka City to not only promote their businesses and make fruit cocktails in particular more accessible to customers but also to make products and their farmers better known to the public.
From January they will create cocktails from a designated Shizuoka producer and his/her fruit or vegetable at regular intervals.
Moreover, the producer will be introduced in blogs and bars to prove the traceability and safety of the delicious fruit or vegetables.

But let me continue the introduction of those seven “samurai” and their establishments with Masayoshi Tainaka at Bar Le refuge!

As its name says “Le Refuge” is an establishment away from the bustle of the center of town which offers an haven of tranquility and privacy.

The menu sign outside is welcome because this is a dark if every safe street at night!

As I do not use flash as a rule the establishment does look dark from outside!

But the inside is cozy with diffused lights.
When you learn that it used to be a car park it is certainly a great improvement!

The solid wood counter does not sit more than 9 and Masayoshi Tainaka/田井中正剛 does accept in groups of more than 3 so as to preserve the calm and welcoming atmosphere of his establishment!

Masayoshi already had 8 years of bartending experience in Shimizu Ku where he hails from before he opened his haven in May 2008.
An accomplished cocktail bartender he is always willing to venture into new concepts but his forte like his same-minded friends is fruit cocktails!

RECIPE:

Kiwi fruit: 1
Home-made limoncello (Italian lemon liqueur)
Sugar syrup: 1 teaspoon
Ice
Tonic water

Peel and manually crush the kiwi fruit finely to a pulp.
Pour inside the glass part of a Boston Shaker with all the other ingredients.
Shake well.
Take out cleanly half of the ice.
Add tonic water and stir gently.
Pour the lot in a tulip glass and decorate with fresh mint.

A very refreshing liquid dessert!
Great balance between sweetness and tanginess!
As it is low in alcohol it will suit young people and ladies!
It actually contains an excellent amount of very healthy ingredients thanks to the fresh kiwi, the lemon and the mint!

Wataru Matsumoto/松本亙 at Botanical (Comfort Bar) is not only an expert at his trade but is always keen to venture onto new paths and promote his peers!
Actually his establishment has turned into the meeting point of officionados always ready to share their views and enthusiasm with their neighbors whatever their social standing. Botanical is the place if you enjoy a nice and productive chat with your fellow drinkers and Wataru!

Kiwi cocktail (recipe in the next article!)

Wataru had already no less than 16 years in the trade in two different establishments before going independent with his cocktail bar Botanical (Comfort Bar) away from the bustle of central Shizuoka City on the 25th of July 2009.
His establishment looks like a European brick house with windows allowing for a discreet peek inside or outside ensuring both enough privacy and openness.

Wataru naturally will produce exquisite fruit and vegetables cocktails but will also please everyone with an enormous range of cocktails, fruit juices and even delicious coffe and tea for the non-drinkers you might encourage to come!
