Japanese Easy Recipe: Crispy Lotus Root Pie

Although I call this recipe Japanese, it is more fusion food than anything else as pies are universal!
As for the lotus root, if you cannot find them fresh use canned/tinned ones. Don’t forget to wash them in clean water and sponge out all humidity first in that case!

INGREDIENTS: (For one pie)

Lotus root: 100 g
Echalottes (or leeks if you don’t have them): 20 g
Mixed pork/beef minced meat: 100 g
Frozen pie sheets: 2 standard
Sake (dry white wine is ok!): 1 tablespoon
Soy sauce: 2 tablespoons
Mirin/sweet sake (if available use sweet white wine or sweet sherry!): 1 tablespoon
Sugar beet sugar: 2 teaspoons
Tomato ketchup: 1 teaspoon
Salad oil: as appropiate
Egg: 1
Water: 60 ml/a little more than a 1/4 cup
Rice vinegar: as appropriate

RECIPE:

cut the lotus root into small cubes. Drop them in a bowl. Add the rice vinegar and mix. Chop the echalottes finely.

Pour some salad oil in a fry pan. Heat. Fry the minced meat. When the color of the meat has changed add lotus root and juices and echalottes.

Add the water, soy sauce, sugar, tomato ketchup and stew until all water has evaporated.
Let cool until room temperature.

On the first pie sheet spread the meat mixture in the middle leaving enough space to make a sufficiently wide rim.

Place the second pie sheet as above. Press/seal the two sheets together with a fork all around the rims.
Make indents on the top as shown in picture above.
Brush generously the whole surface with beaten egg.
Bake at 180 degrees Celsius for 25 minutes.

Serve it as hot as possible with plenty of leaf greens!

Japanese Easy Recipe: Lotus Root and Pork Balls

Lotus root can be used with meat to make delicious and easy to prepare balls/meat balls!
A comfort food appreciated everywhere and a great snack if you like beer!

INGREDIENTS: (For 2 people)

Minced pork meat: 200 g
Lotus root: 60 g
Salt: one pinch
Soy sauce: 1 tablespoon
Ginger: 1 fresh cube 2x2x2 cm
Cornstarch: As appropriate

RECIPE:

in a large ball drop the minced pork.
Grate the lotus root over it.
Add salt.
Mix until you obtain a smooth paste.
Grate fresh ginger over it and add soy sauce.
Mix well.

Prepare one-bite sized balls and coat hem with cornstarch.
Deep-fry at 170 degrees (the best temperature!) until they have a attained a crispy brown color.

Serve at once with some leafy greens for best balance.

So simple and so yummy!
Naturally you can add spices of your liking to the recipe!

Vegan Japanese Cuisine: Lotus Root and Natto Sandwiches

I still have plenty of recipes with natto to publish!
This time I would like to introduce a very simple idea for a cruchy snack (Bazooka Gourmet will certainly have a comment for that! LOL):
Lotus Root and Natto Sandwiches!

INGREDIENTS: For 4 people

-Lotus root/Renkon: 20 cm long piece or the equivalent in 2 or 3 roots
-Natto: 1 standard pack
-Ooba/large shiso leaves/perilla leaves: 1 for each sandwich!
-Leek: as appropriate (chopped)
-Cornstarch: as appropriate
-Soy sauce: as appropriate

RECIPE:

-Cut the lotus root into 5 mm/1/2 cm thick slices. Wash in clear cold water.
Mix the natto with the chopped leeks and the tare/sauce and mustard provided in usual packs (if unavailable add some soy sauce, sesame oil and mustard).
Wash the large perilla leaves in clear cold water.

-Take water off both sides of lotus root slices with kitchen paper. Do the same with perilla leaves. Sprinkle lotus root slices with cornstarch on one side only, that is the side which will come in contact with frypan and oil.
Make sandwiches with one slice of lotus root + one perilla leaf + natto mix + one more lotus root slice.
Pour a little oil of your liking in a frypan and fry snadwiches on both sides until the lotus root is cooked and has attained a nice colour.

-Serve with a light soy sauce and yuzu kosho/lime and pepper paste for extra seasoning!

-Enjoy with a beer!

Vegan Japanese Cuisine: New Lotus Roots & Umeboshi

Lotus roots, when new and fresh, should be prized for their great natural taste. They can even be eaten almost raw after a little marinating. The Japanese have a simple and delicate way to prepare them with umeboshi/Japanese pickled plums, which should please vegans and vegetarians (and omnivores). It certainly makes for a great snack with Japanese sake or shochu!

INGREDIENTS:

-Lotus root: 1 piece, 10 cm long. Choose it absolutely fresh and comparatively slender.
-Umeboshi: 2
-Shiso/perilla leaves: 2
-Japanese sake: according to taste and preferences.
-Soy sauce: according to taste and preferences.
-Rice vinegar: according to taste and preferences.

RECIPE:

-Peel and cut the lotus root into hin slices. Wash them 2 or 3 times in cold clean water.

-In a pan heat some water to just before boiling point. Add some rice vinegar and cook the lotus roots in eat until they become translucent.
Do not overcook them. Drain them thoroughly and put aside.

-Take the seeds out of the umebshi and sieve the meat into a bowl. Add Japanese sake (or cooking sake) to make it into a thin liquid paste. add a few drops of soy sauce for seasoning. Taste. If it is too sour to your liking add some mirin/sweet Japanese sake.

-Add the umeboshi to the lotus roots slices and mix well so as to cover all the lotus root slices surface.

-Cut the shiso/perilla leaves in 3 first, then chopp them fine across.

-Serve as in the picture, lotus root sliced mounted on top of each other and topped with chopped shiso leaves.

Vegetables Fact & Tips 11: Renkon/Lotus Root (amended and expanded)

In Japan we are near the end of Lotus Roots season, but eat them all year round!
Lotus roots come from a plant called Nelumbo nucifera, also known by a number of names including Indian lotus, sacred lotus, bean of India, or simply lotus. This plant is an aquatic perennial. Under favorable circumstances its seeds may remain viable for many years.
A common misconception is referring to the lotus as a water-lily (Nymphaea), an entirely different plant.

Native to Greater India and commonly cultivated in water gardens, the lotus is the national flower of India and Vietnam.

The flowers, seeds, young leaves, and “roots” (rhizomes) are all edible. In Asia, the petals are used sometimes for garnish, while the large leaves are used as a wrap for food. In Korea, the leaves and petals are used as a tisane. Yeonkkotcha (연꽃차) is made with dried petals of white lotus and yeonipcha (연잎차) is made with the leaves. The rhizome (called ǒu (藕) in pinyin Chinese, ngau in Cantonese, bhe in Hindi, renkon (レンコン, 蓮根 in Japanese), yeongeun (연근) in Korean is used as a vegetable in soups, deep-fried, stir-fried and braised dishes. Petals, leaves, and rhizome can also all be eaten raw, but there is a risk of parasite transmission (e.g., Fasciolopsis buski): it is therefore recommended that they be cooked before eating.

FACTS:
-Season: September~December in Japan.
-Beneficial elements:
Lotus roots have been found to be rich in dietary fiber, vitamin C, potassium, thiamin, riboflavin, vitamin B1 & B6, phosphorus, copper, iron and manganese, while very low in saturated fat.
Various parts of the lotus are also used in traditional Asian herbal medicine.

TIPS:

-Choose specimens with a clear white cut section. There should not be any black spots.
-Use large specimen as they are easier to cut and use.
-To prevent oxydising, warp cut specimen into wet kitchen paper.
-Add vinegar to water when boling them to keep them white.
-The easiest way to peel them is to use a potato peeler!

COOKING:

The stamens can be dried and made into a fragrant herbal tea called liánhuā cha (蓮花茶) in Chinese, or (particularly in Vietnam) used to impart a scent to tea leaves. The lotus seeds or nuts (called liánzĭ, 蓮子; or xian liánzĭ, 鲜莲子, in Chinese) are quite versatile, and can be eaten raw or dried and popped like popcorn, phool makhana. They can also be boiled until soft and made into a paste, or boiled with dried longans and rock sugar to make a tong sui (sweet soup). Combined with sugar, lotus seed paste becomes one of the most common ingredient used in pastries such as mooncakes, daifuku, and rice flour pudding.
