Organic Japanese Plums Harvesting in Higashimine, Shizuoka City, with Marufuku Seicha Co.!

Last Sunday Asami Itoh/伊藤麻実さん, the young owner/manager of Marufuku Tea Company/丸福製茶株式会社 in Shizuoka City invited once again to participating to the harvest of organic Japanese Plums/Ume/梅 in her family-owned land up in the mountains of Shizuoka City!

The weather was not that great, what with fog and drizzle, but it was more comfortable than last year when it blazing hot!

Higashimine/東峰 is up in the mountains of Shizuoka City along the Abe River, not far from Umegashima.
It does take some time to reach it by car, but the trip itself is a joy whatever the weather with all the grand unadulterated views along the way!

There is even a small ancient Shinto Shrine to look after you there, at 1,000 meter altitude where the highest tea fields in Japan can be found!

It is a very steep way down from there but Japanese farmers are well equipped with these gasoline driven “mountain tracks” to carry heavy equipment and crops!

The field in front of the house with many old plum trees which haven’t seen any fertilizers, herbicides or pesticides for the last 25 years!
The place is regularly invaded by wild boars, monkeys, civets, deer and even bears!
They will not show up with all the noise we make, but we do have to look out for the occasional leech!

The plums have to be picked just before they ripen, otherwise they will naturally and very quickly ferment!

Japanese plums are not edible raw, but are used to make umeboshi/salted plums, umeshu/ume sake, ume jam and so forth!

Barley, Pilsner malt, Munich malt, Zats hop,Australian galaxy hop, Bohemian lager yeast, Budweiser yeast
Unfiltered
Alcohol: 5.8%
Bubbles: very fine bubbles. Short head. White
Clarity: slightly smoky (normal considering live yeast and being unfiltered), very clean
Color: Deep lemon color
Aroma: Refreshing, dry citruses
Taste: Dry and fruity attack with a little acidity.
Very refreshing. Citruses, apricots.
Lingers long enough on the palate for true tasting before departing a drier and a slightly more acid note and lemon.

Overall: very refreshing craft beer but also very satisfying with just enough acidity to leave a lasting impression.
Great on a warm afternoon, will please both genders!

Shizuoka Hot Spring Anecdote: The Cleaning Lady, The Towel & The Foreign Male Bather

One may have lived in Japan for 39 years and still find himself unprepared…

The other day, Thursday April 9th to be precise, the Dragon and I took advantage of our day offf from work to visit a hot springs spa sponsored by the City Of Shimada in Shizuoka Prefecture called Itawari No Yuu/伊太和里の湯, which is not only new (it was founded 6 years ago) and ecological (all electricity is provided by nearby solar panels) but cheap and located in the middle of the neighbouring mountains.

The access is easy as a city-sponsored bus will take you there from Shimada Station within 30 minutes for only 200 yen!

The only problem is that they do not provide an absolutely necessary item normally available in hot spring spas…
We forgot it was sponsored by a municipality with the need to cut corners for economical reasons!

Anyway, Dragon and I, after paying the cheap 500 yen fee for enjoying the bath and spa facilities went inside our separate public baths…

As I opened my locker, I noticed the absence of towels…
I asked another bather where I could find a towel…
“I’m afraid you have to bring your won!” he answered with dubious look at this foreign “old man”!

Oh, well, I had a handkerchief which should be enough as the hot water would soon dry off my body…

This when a cleaning lady almost barged inside the men’s locker room. She was pretty mature, but no one seemed the least embarrassed by a lady, however old she might be (mind you, not that old as she was probably my age!), entering a space usually reserved to men only. Peaceful, tolerant and comprehending Japan for you!

She directly addressed me in Japanese, not the least bothered by my totally naked body. I didn’t care much either as I often visit Japanese hot springs. Some might snidely remark I was probably showing off (exhibiting?).
She just told me: “Your wife told me you didn’t bring a towel with you?”
“That is right,” I equably replied, “but I have this handkerchief!”
“I’m afraid that will not do! Please wait till I come back!”

Only a minute later she came in again and handed me a towel with the name of the hot spring spa on it a small vinyl bag to take it back with me.
“Thank you so much!”
“You are most welcome!”
And she went out as if nothing had happened.

Dragon told me later that realizing our mistake upon entering her own locker room had asked the same cleaning woman who just happened to be there about the “missing” towels. The charwoman explained we had to buy towels (300 yen each) from the spa. Dragon first asked her if she could kindly inform me of the situation, which the nice lady did at once before going out and meeting Dragon again who had meanwhile bought the two towels and prayed her to hand it over to me, explaining all the time that she should easily find the only “gaijin no ojiisan/外人のお爺さん/Old foreign man” (thank you for making a whole dish of my apparent age!) in the male bathers locker room!

I very much doubt such a situation could have happened outside japan! LOL
In any case, bring a towel with you next time you visit a city-sponsored hot spring spa in Japan!

Last night I had the great pleasure to participate to the opening party of a new French Restaurant, Bistro FERME in Shizuoka City, led by one of the most promising young Chefs in Shizuoka Prefecture, namely Hiromitsu Ogasawara/小笠原光洋さん!

Located in the center of Shizuoka City, in Gofuku Cho, you can enter it either through an entrance beside an ubiquitous big chain “coffee shop”,

or through a more discreet door at the back opening onto a street paralell to Gofuku-Cho Street!

In a totally non-smoking atmosphere you can either sit at a wide counter facing the kitchen to enjoy the spectacle of great morsels being prepared in front of your eyes or at large table sitting about 10 guests.
The whole place can sit around 30 visitors, making it prefect for a private party!

The concept is that of a fixed menu for lunch (2,000 yen + TAX) and dinner (4,400 yen + TAX) with ingredients changing constantly. very reasonable when you consider the quality!
An A la Carte menu will be available in the evening!

Hiromitsu San mainly uses local ingredients obtained directly from many of his contacts among Shizuoka farmers and producers, thus insuring the best freshness and quality!

Bubbles: very fine bubbles. Longish head. Creamy. Light brown color
Clarity: slightly smoky (normal considering live yeast and being unfiltered), very clean
Color: deep brown-orange
Aroma: discreet. Bread
Taste: dry and smoky attack.
Complex: smoked meats, bread.
Varies little with food.
Lingers long enough for true tasting before departing on a mellower note.
Stays true to first impressions all the way through.

Overall: very refreshing and easy to drink craft beer!
Not overwhelming at all in spite of its naming!
Far all seasons and genders.
To be drunk for its own sake!

If you get off at Rokugo Station/六合駅 between Fujieda City and Shimada City JR Stations, go out through the south exit and you will find one of the five Shinto Shrines called Hachimangu in Shimada City!

It is quite small but ancient.
Its small park seems popular with the local lovers who don’t have many places to talk in peace in this islated part of Shimada City!

This time I tasted another interesting craft beer from Ushitora Brewery in Tochigi Prefecture: “Nenooki Koohii/Wake-up Coffee”!

Barley, 4 types of malt including “2 row” malt, Northern brewer hop, live yeast. Coffee beans
Unfiltered
Alcohol/ABV: 4.4 %
IBU: 25
Bubbles: very fine bubbles. Long head. Creamy. Milk coffee color
Clarity: slightly smoky (normal considering live yeast and being unfiltered), very clean
Color: very dark brown
Aroma: light. Coffee beans
Taste: very refreshing and dry attack. Coffee! Hints of bread.

Varies little with food but for a drier note.

Overall: very light approach for a flavored craft beer.
Very refreshing for all seasons!
It should please anyone, especially on a hot afternoon!

Japanese Fish Species 19: Shirogisu/Sillago

SILLAGO-SHIROGISU

Shirogisu, or Sillago in English probably has as many Japanese names as English names.
The Sillago found along the Japanese shores is also called sillago japonica, Whiting or Smelt-Whiting in english, Shirogisu, Kisu, Magisu and Kisugo in Japanese.

The best specimen in Japan are caught in Fukuoka (Kyushu) and Ehime (Shikoku) prefectures from Spring to Summer.
It is also a sport angler’s favourite as they come in all sizes, although the everage will not measure much more than 10 cm.

Standard Shirogisu Sashimi

As a sahimi/raw fish it van be prepared in many manners:
Standard sashimi as above.

Shirogisu Konbujime Sashimi.
As konbujime, it will be matured between two sheets of wet konbu/seaweed to attain a sweet taste.

Shirogisu Aburi Sashimi

As aburi/lightly seared, one can enjoy two different textures and tastes at the same time.
Mind you, it is not easy to sear properly as the fillets are very thin!

The greatest part of the sillago catch comes from Indonesia, Korea, Thailand, China and other Asian countries.
Fortunately, here in Shizuoka, we do catch a sizeable amount in Suruga Bay guaranting freshness in season.

Shirogisu Sushi Nigiri.

If absolutely fresh, shirohisu/sillago makes for an interesting morsel, the more for it as it is quite rare in this sushi nigiri form.

Anglers will certainly appreciate it grilled on the stick at a BBQ on the beach with a nice pint of beer!

But the most popular way of savouring it is arguably as tempura or breaded and deep-fried, although the fish taste will vary greatly with freshness!
But if absolutely fresh, don’t forget to deep-fry its bones and head!

Bubbles: very fine bubbles. Long head. Creamy. White
Clarity: Slightly smoky (normal considering live yeast and being unfiltered), very clean
Color: Deep lemon~orange color
Aroma: Dry aroma. lemon
Taste: Very refreshing, deep, dry and fruity attack.
Lemon, citruses.
No acidity in spite of strong dryness!
Stays faithful to its first impressions and lingers long enough for true tatsting.

Overall: very refreshing and tasty weizen!
Very easy to drink.
Definitely better than a thirst-quencher!
A beer for all seasons and genders!

Japanese Fish Species 16: Sawara/Spanish Mackerel

SAWARA-1

Sawara or Spanish Mackerel is considered as the best kind of Mackerel in Japan. Not only it is a big variety, but its comparatively white flesh is succulent in almost any kind of cooking!

It is known under different names such as Sagoshi and Sagochi when young and Yanagi when mature.
It is basically caught by trawling, but can be fished by line. It is, unlike other mackerels, a pretty solitary fish.

It is caught widely around Japan, off Russia, China and Korea.
The total catch has varied in recent years, but thanks to import, including 21.000 tonnes from China, it has become a feature in season from late Autumn to end of Spring.

In Winter, it is called Kan Sawara/寒鰆 (寒stands for cold, 鰆 stands for Sawara/Spring Fish) and is a sought after morsel. In Shizuoka it is sometimes caught then in Sagara bay, and I can tell you it disappears quickly from the table.

Later in Spring, it is just called Sawara and is leaner.

Japanese Fish Species 15: Sanma/Mackerel Pike

“Sanma” or Mackerel Pike usually comes on our plates with the advent of Autumn, but can be found until mid-winter in Shizuoka Prefecture
Known under other names such as “Saira” or “Banjyo”, it is a fish with red meat rich with proteins.
In season, the flesh is fatty and sweet.

Its Japanese name 秋刀魚 means Autumn Sword Fish!

It is mainly caught off the north eastern shores of Japan as the fish swims down from Hokkaido.
But the more south it is caught, the less fat it will contain.
The annual catch exceeds 20,000 tonnes, although breeding is increasingly successful.
If you eat it at a sushi restaurant, you can expect its bones and head served deep-fried.

As sashimi it can be enjoyed straight with wasabi and soy sauce.
But as it is a red-flesh fish it beautifully combines with grated ginger, sliced myoga or chopped thin leeks.

As sushi it does come in many forms and can be pretty spectacular as a single sushi nigiri serving!

In Western Japan it is very popular as oshizushi/pressed sushi.

Another popular oshizushi version is “bo-gata/whole fish sushi”!

Bo-gata is often encountered as a sushi bento/lunch box!

As it is a very rich fish, it can be eaten simply grilled with its skin and grated daikon and lemon.

It is easy to manipulate such as the above sanma and bacon roll (later grilled)!

Of course it can be simmered Jpaanese style with soy sauce, mirin, sake and ginger!

As himono/dried fish it is practical for carrying and grilling later!

Tinned/canned, it is comparatively cheap and can be accommodated in many ways, such as with kimchi!

Along the Tokaido Nature Trail to Nihondaira Peak in Shizuoka Ciy!

Mount Fuji is best seen on a winter sunny days and there is an embarrassment of choices as to from what spot to admire it!
Nihondaira Peak inside Shizuoka City, that is in suruga Ku, is one of them.
And if you feel like having some much needed exercise one way to reach Nihondaira peak is to do it on foot!
If you are a fit person, whatever your age, it will take you only a couple of hours walk.
To avoid monotony just go back by bus but beware that the last one is at about 16:00.
Let me relate how I achieved it last week!

I first took a local train from Shizuoka JR Station and got off at Kusanagi Station.
You can also reach the same destination by riding the Shizutetsu Line from Shizuoka Cenova Department Store!
Get off at Kusanagai and walk till the main crossing ahead. Turn left and look for a big Torii/鳥居 gate which will be your starting point. The torii is that of a very interesting shrine, Kusanagi Shrine I described earlier.
Walk under the torii and proceed straight ahead!

Don’t forget to look at your feet sometimes and you will discover some interesting manhole covers!

Moreover the air was a bit hazy. Next time I will take pictures earlier in the morning or before sunset (problem here as there will no more buses unless I visit the place on a busy week-end!)!

Japanese Fish Species 14: Sake/Shake/Salmon

Salmon is a favourite almost everywhere on the Globe, but it is in Japan that you can enjoy in the most numerous manners!

Like every other fish it has many names according to season and place:
Shirozake/White Salmon, Akiaji or Akizake for Autumn Salmon, Shake in Tokyo.
In Spring it is called Tokishirazu.
I don’t have to tell you there are many, many names for it all over the world!

SAKE-SUJIKO

Its roe, before processing, is called Sujiko in Japanese, whereas the salmon roe, once treated, is called Ikura.

SAKE-ROE-SUSHI

Many Japanese appreciate the roe untreated, but more people enjoy it on top of rice as it is with some soy sauce and grated wasabi.

It also makes for some splendid colourful creation on a plate of sushi!
