Shizuoka Sake Tasting: Suruga Brewery-Chumasa Daiginjo Genshu

Suruga Brewery in Suruga Ku, Shizuoka City, has certainly come a long way since they acquired the license of defunct Yoshiya Brewery!

Not only they bought the license but kept on producing the former brewery’s names: Chumasa, Tokaido and Oni goroshi!

This particular sake has been awarded the accolade from The Shizuoka Prefecture Government!

Rice: Yamada Nishiki (Hyogo Prefecture9
Rice milled down to 40%
Alcohol: 16~17 degrees
Dryness: ; 7
Acidity: 1.1
Bottled in October 2013

Clarity: Very clear
Color:Faint golden hue
Aroma: Assertive, dry, fruity. Apples
Body: Fluid
Taste: Well-rounded deep, dry, fruity attack. Pleasant alcohol.
Very complex.
Banana, apples, pears, oranges, nuts, hints of dark chocolate.
Disappears fairly quickly with drier oranges and almonds.
Takes on a sweeter turn with each sip to immediately switch back to a drier accent.
Dry banana, almonds and pears making a comeback with every sip.

Overall: A very complex and elegant sake in spite of its high alcohol content.
Although thoroughly enjoyable with any food, is best enjoyed slowly on its own, either chilled or at room temperature.
Especially comforting after a cold winter day as an aperitif, or even better as a night cap.
If you must absolutely drink it with food, enjoy it with salads or fish.
A special nectar!

I Have already introduced the 45 (out of 53 + 2) Ukiyo-e By Hiroshige (Utagawa Hiroshige), the last great ukiyo-e/wood block prints master in Japan that you can find on red granite posts all along Gofuku Street in Aoi Ku, Shizuoka City!

“Hatsushibori” means “First Press” and “Shinshu”, “New sake”!

Rice: Gohyakumangoku
Milled down to 60%
Alcohol: 15~16 degrees
Bottles in November 2013

Clarity: Very clear
Color: Light golden hue
Aroma: Assertive and fruity: Pears, custard, macadamia nuts
Body: Fluid
Taste: Dry and fruity attack backed by junmai petillant.
Complex. Chestnuts, almonds, macadamia nuts.
Disappears fairly quickly.
Varies little with food, but for a drier note.
Marries well to any food.

Overall: For all its complexity it is a straightforward brew particularly suited to heavy food in izkaya.
Solid and reliable, bring it at a BBQ!

SYNOPSIS

Utagawa Hiroshige (Japanese: 歌川 広重), also Andō Hiroshige (Japanese: 安藤 広重; 1797 – 12 October 1858) was a Japanese ukiyo-e artist, considered the last great master of that tradition.
Hiroshige is best known for his landscapes, such as the series The Fifty-three Stations of the Tōkaidō.

Although you can see all 53 wood block prints at the Hiroshige Museum in Yui, Shimizu Ku, Shizuoka City, did you know you can see 45 (at the final check today!) of them daily if you walk along Gofuku Cho Street?

I’m preparing a total compilation of the ukiyo-e only, including the ones missing, that is a total of 53+2= 57!

Sashimi Plate in Kume Island, Okinawa Archipelago!
Gastronomy offers an unlimited inspiration to photographers!
I could take pictures of sashimi and sushi all day long!
Kume Island is one of the lesser known isalands in the Okinawa Archipelago and ought to deserve far more attention what with beautiful sites and sea, and superlative seafood!
I can’t remember the name of the two local fish but the live kuruma ebi/large prawns were sublime!

Shizuoka Sake Tasting: Sanwa Brewery-Garyubai Ginjo 20 Year-old Koshu

I was lucky enough the other day to discover this “koshu/old sake” by Sanwa brewery in Shimizu Ku, Shizuoka City!

Such sake are rare, even in Shizuoka Prefecture, and you need luck to find them!
I certainly didn’t hesitate as it would have probably been the last chance to acquire it!

Alcohol: 15~16 degrees
Dryness: ; 6
Acidity: 1.3
Contents: 300 ml
Brewed in 1993
Bottled in October 2013

Clarity: Very clear
Color: Golden
Aroma: Assertive. Very dry and fruity. Pears, apples.
Body: Fluid
Taste: Very dry attack.
Complex. Reminiscent of a very fry white sherry wine.
Very dry pears, apples, oranges, pineapple.
Disappears quickly on a lasting dry nuts note. Persimmons making a comeback later.
Elegant and intriguing.
Show many new facets with every sip showing hints of nuts and chetsnuts.
Changes little with food.

Overall: A superb aperitif to be enjoyed at the beginning of a special repast.
Thoroughly enjoyable on its own.
Probably best appreciated as a night cap reading a great book or watching a memorable movie after a great meal or sipping it in great company!
More than a discovery, a privilege!

SYNOPSIS

Utagawa Hiroshige (Japanese: 歌川 広重), also Andō Hiroshige (Japanese: 安藤 広重; 1797 – 12 October 1858) was a Japanese ukiyo-e artist, considered the last great master of that tradition.
Hiroshige is best known for his landscapes, such as the series The Fifty-three Stations of the Tōkaidō.

Although you can see all 53 wood block prints at the Hiroshige Museum in Yui, Shimizu Ku, Shizuoka City, did you know you can see 42 (that what I counted and took in pictures yesterday although I’ll double check today!) of them daily if you walk along Gofuku Cho Street?

Actually I double checked and found a few more!
Moreover, the indications to find them were slightly wrong!
You will find all these ukiyo-e and more from along Gofuku Cho Street in Aoi Ku, Shizuoka City, past the first crossing up the street from Gofuku Cho Scrmable, that is where Gofuku-Cho Street crosses the main Street called Egawa Street up the Shizuoka Bank headquarters!

They concentrated on both sides of Gofuku Cho Street between Mitsukoshi-Isetan Department Store and Shizuoka Bank Headquarters Building.
As far as I know, the order seemed haphazard and I found only 42 of the 53 wood bock prints but I will hav e to double check!

I just realized yesterday I had been walking past them for years. The reason for this crazy miss is that people have the habit of stacking their bicycles against the red granite pedestals on which they stand.
A real pity as the stands themselves are carved into beautiful reliefs , all different!
I sometimes wish that the Japanese, and the Shizuokaites in particular, gave a little more respect and recognition for their culture…

Shizuoka Tourism: Shizuoka City Zagyo-So Museum Saionji Kinmochi Villa in Shimizu Ku, Shizuoka City!

Saionji Kinmochi/西園寺公望 (1849~1940) was a prominent diplomat for Japan especially in France who witnessed the passage of japan from feudalism to modern times.
He was born in October 1849 as the second son of Tokudaiji Kinito, the Minister of the Right. One of Japan’s modern elder statesmen, he live d a long life spanning the Meiji, Taisho and Showa periods as a liberal politician until the age of 91 when he passed away in November 1940.

Zagyo-So named by Viscount Chifuyu, was built facing the scenic Kiyomi lagoon in 1919 when Saionji was 70 years old as a place to lead a quiet life in his later years.

Times change and on March 18th, 1971, Zagyo-So was moved to Museum Meiji Mura located in Inuyama City, Aichi Prefecture. It is still shown today as a National Tangible Designated Cultural Asset.

Now a reproduction of Zagyo-So has been created on the land where it once stood thanks to the strong will of Okitsu (Shimizu Ku) people, the business world and the full cooperation and guidance from the Meiji Mura Foundation!

To reach Zagyo-So get down at okitsuJR Station along the Tokaido railway Line, go straight to the main street, turn right and walk past Seikenji Temple.
You will eventually find the sign above on your left-hand side. You v\can’t miss it!

Makes for a drier turn with food. Junmai petillant still strong with food. In spite of its normal content alcohol stays strong and pleasant all the time.

Overall: Very &”macho” sake by Shizuoka standards, but typical of Morimoto Brewery which always bound to concoct something different.
A sake to be enjoyed by dry but complex sake lovers.
Would marry n\magnificently with any food as very close to a well-rounded dry wine!

Seikenji Temple in Okitsu, Shimizu Ku, Shizuoka City!

I’m an agnostic and cares little for religion but it would be a grave oversight to ignore some of the grand Buddhist temples or Shinto Shrines in Japan and Shizuoka Prefecture as they are a great source of history, architecture, art and culture.
I can always leave the obvious religious connotations to the care of friend bloggers with different priorities!
There is a major Buddhist Temple in Okitsu, Shimizu Ku, Shizuoka City, which definitely deserves a lot of attention, namely Seikenji Temple/清見寺 along the Tokaido Road.
Just follow me and I’ll explain along the way!

First take a train on JR Tokaido Line and get off at Okitsu Station.

Get out of the station and walk till the main road and turn right.
At the station you will see this sign clearly indicating you are about to discover Seikenji Temple!
Bear in mind this is a good 15~20 minute walk, so choose a bright shiny (no hot) day!

The “garyubai/臥龍唄” plum tree variety was developed there by the Overlord Tokugawa Ieyasu in the beginning of the 17th Century.
It is also the name of a famous Japanese sake brand brewed by Sanwa Brewery in Shimizu Ku!

Over the entrance you will find the Hollyhock/Aoi/葵 represented on Tokugawa Ieyasu Mon/Japanese Arms/文!

Past the entrance, ring the (real bronze) bell and a monk will collect a 300 yen visiting fee (very small considering the importance of the place!)!

Don’t forget to take off your shoes and put on slippers before climbing the small stairs to the main room!

Note: There are plenty of “washrooms” there so take your time!

There is an advised route to follow but you are free to wander, so I went to have a look at the inner garden!

The real pictures of the whole crew of 104 sailors aboard the Tsukijima Maru Ship which got marooned in the Suruga Bay just in front of Okitsu.
The ship was subsequently attacked by rebel samurais who had not surrendered in spite of their defeat in Hakodate and roamed the country for many years after.
The whole crew was killed and thrown overboard.
Jirochoo, a notable of Shimizu City became a local hero when he personally collected all their bodies to give them a decent funeral.
But that is the official story… A volunteer guide confided me that the so-called hero actually was in a hurry to clean the sea and shore to allow fishing again as soon as possible…

Negami Brewery in Gotemba City have always been ahead of the other breweries in Shizuoka due to the fact they practically brew all year round at an altitude of 550 metres on the slopes of Mount Fuji, hence this very early shiboritate/just pressed sake!

Not only it is a tokubetsu junmai but it is also a genshu and nama, meaning it hasn’t been “manipulated”!

Color: Light golden hue
Aroma: Dry and very fruity. Pears
Body: Fluid
Taste: Dry and very fruity attack backed up with pleasant alcohol and puissant junmai petillant.
Complex.
Pears and custard with hints of dry nuts/macadamia.
Disappears quickly on a drier note.
Almonds appearing with later sips with notes of grapes, dark chocolate and coffee beans.
Gets very dry with food.
Junmai petillant stays strong all along.
Calls for the next sip. Drinks like a dry white wine.
easy on the palate and tongue in spite of the high alcohol content

Overall: A superb and complex sake typical of Negami Brewery!
Will drink as a wine although the alcohol content is high.
Preferably drink it with solid food.
A sure value!

Now is the season for “Hiyaoroshi” that is the outpu of sake that have been pasteurized only once.
They could be considered as halfway between nama/unpasteurized and normally twice-pasteurized sake.

Due to its location at more than 500 metres on the slopes of Mount Fuji in Gotemba City Negami Brewery brews practically all year round, and this Yamahai was conceived during the summer partly with rice from Hiroshima and mainly from Shizuoka Prefectures!

The fact that it is a genshu/no water added and a junmai:no alcohol blended in means that this particular brew is the genuine product!

Kake rice: Iwamizu (Shizuoka Prefecture) Milled down to 55%

Clarity: Very clear
Color: Golden
Aroma: Assertive, dry and fruity. Almonds, persimmons, chestnuts
Body: Fluid
Taste: Very dry and fruity attack backed by pleasant alcohol and puissant junami petillant. Welcome acidity.
Complex. Oranges, persimmons,
Lingers for a while late hints of pears and coffee beans.
Varies little with food but for getting drier with more persimmons. Dark chocolate and milk coffee appear with later sips.
Marries well with food, especially heavy izakaya fare.

Overall: A very solid sake unusual by Shizuoka standards.
Obviously designed to accompany food, especially izakaya fare.
Although only a + 2 dryness is stated, it does feel far drier probably due to the comparatively high acidity.
A “macho” sake by Shizuoka standards to be enjoyed with oden for example!

When you are looking for Negami Brewery you need to be on a constant look out and still benefit from a lot of luck!
I found it in S Pulse Dream Plaza of all places and there were two different types, one of nigori/white lees and one of ogarami/little white lees. As there was only one bottle of the latter I didn’t hesitate.

The other interesting aspect was the label which described the brewing in great detail!

Dry and complex.
Disappears fairly quickly.
Very fruity: plums, dry persimmons with notes of custard, dark chocolate and raisins.
Surprisingly stands up to food with a sweeter note, but definitely more enjoyable on its own.
Both delicate and assertive in spite of high alcohol content.
Overall: A discovery! And such a rare sake to boot!
Extremely enjoyable and sophisticated.
Makes for a superb aperitif best drunk at room temperature to discover all its changing facets.
Would do brilliantly with cheese and desserts, too!
Pity it is so limited!
