Shizuoka Sake Tasting: Shidaizumi Brewery-“Midoshi” Honjozo

Shidaizumi Brewery in Fujieda City holds this great tradtion to @roduce a honjozo with a beautiful label every year for the coming Japanese New Year!
Next year will be the year of the Serpent (Snake), that is Midshi/巳歳 in Japanese as you can see on the label!

Rice milled down to 60 %
Alcohol: 15~16 degrees
Bottled in December 2012

Clarity: Very clear
Color: Faint golden hue
Aroma: Fruity, slightly sirupy
Taste: Dry and very fruity attack.
Alcohol pleasantly warming up back of the palate.
Lots of nuts including almonds and macadamia nuts. Banan.
Lingers only for a little while with a very pleasant aftermath.
Drinks easily and insistently calls for the “next cup”.
Take a drier turn with food with strong hints of coffee beans.
Makes a quick comeback to fruity, almost sweetish attack back with plenty of nuts and stronger banana once away from food.

Overall: A sake designed to be enjoyed at length. Although obviously conceived to accompany food, I enjoyed it best slightly chilled on its own. Would make for a great nightcap! Or even an afternoon drink in summer in spite of its being designed for the cold weather at the turn of the year.
Personally I would be very willing to drink it with very strong cheese!
On the Japanese Gastronomic theater it perfectly marries with o-shinko/pickles and heavy izakaya cuisine!

Strong points: Traditional and modern izakaya gastronomy. Very inventive cuisine with introduction of some Western concepts. Great seafood. Great sake list. Wine and other alcohols available. Intensive use of local products combined with ingredients from other prefectures! Curry Lunch Sets!

The Missus had badgering me about Kohaku for some time after reading some of my reports arguing it was just not fair that I kept such places secret (which I don’t, but try to argue with a lady…)!
Well, last Monday I took her to Kohaku in Aoi Ku, Shizuoka City, to sample the delicious, generous and extremely-reasonably priced (by Japanese standards) lunches!

I did have to help the Missus finish her lunch!

Shizuoka Sake Tasting: Senju Brewery-Senju Junmai Ginjyo Genshu Shiboritate

Senju is a small but remarkable brewery in Iwata City, Western Shizuoka Prefecture, and it is not always easy to get their brews here in Shizuoka City, but for fortunately Matsuzakya Department Store has endeavored to make them known recently!

Since I found this junmai ginjo genshu, meaning it went through through no moderation, be it pure water or pure alcohol, I had the occasion to taste the original sake of the brewery!
Moreover, since the rice was grown in Shizuoka Prefecture, it makes for a truly local sake!

Rice: Shizuoka-groen Gohyakumangoku
Rice milled down to 55%
Alcohol: 17~18 degrees
Bottled in November 2012

Clarity: Very clear
Color: Light golden hue
Aroma: Strong and pleasant. Alcohol. Chestnuts. Grilled nuts.
Body: Fluid
Tasting: Very dry attack backed by puissant junmai petillant.
Very pleasant first impression in spite of the high alcohol content warming up the back of the palate.
Complex and fruity. Very difficult to “catch”.
Nutty, dry roasted nuts, yoghurt.
Disappears very quickly on a drier note.
Varies little with food, although tends to take a slight turn to sweetness then.
Very unexpected taste and flavors for a Shizuoka sake.

Overall: An unusual sake for Shizuoka Prefecture, both in approach and taste.
Dry but complex, puissant but elegant, very difficult to catch. Fleetingg, mysterious.
Although macho in approach, will attract ladies in particular for its fleeting character.
Although eminently enjoyable with food it will probably best appreciated on its own slightly chilled.
Could be served as a beautiful aperitif, too!

As promised in the report on the gunkan feast here is another example of Chef Kenta Birukawa/尾留川健太さん’s ingenuity which demonstrates why he received an award as best sushi designs from his peers this year!

Actually I had asked him to come up with a new version of his acclaimed sushi Millefeuille and instead created a Charlotte-like sushi cake!

The whole was conceived inside a metal ccircle by lining the inside first with raw salmon and tuna and then filled progressively with sushi rice and other ingredients!
The tail is grilled salmon skin! A crunchy and tasty tidbit of its own!

Once filled Chef Birukawa partly closed the top by fording the fish inside before topping it with other ingredients!

The topping consisted of ikura/salmon roe, thinly sliced cucumber and grilled salmon skin!

Senju Brewery in Iwata City is one of the ten sake breweries which also produce shochu in Shizuoka Prefecture.
Their shochu are only of the rice/kome variety but they do come with some rare treats!

This particular shochu is a rare rice shochu limited to one hundred bottles of a shochu which took no less than 8 years to mature!

The bottle with its cute pink squarish glass design is beautiful but the shochu is of the fiery variety at 43 degrees!

But it was certainly worth the 8-year wait!

Rice shochu
Alcohol: 43 degrees
Matured for 8 years. Bottled end of 2012

Clarity: Very clear
Color: Transparent

Aroma: Light and pleasant. Hints of flowers. Alcohol
Body: Fluid
Taste: Strong attack with very pleasant and fine petillant bubbling on the palate.
Very clean and flowery taste..
Strong but elegant.
Complex and difficult to catch. Plays cat and mouse over the palate enticing you to the next sip.
Hints of pears, flowers and apple.
Strong alcohol tends to surprise you more and more sip by sip.

Overall: Very strong but elegant shochu!
Extravagant in concept and maturing.
Best drunk chilled and straight or on the rocks at the very limit. Otherwise you kill the baby by losing many fleeting aspects.
Best appreciated as a (dangerous) nightcap.
For lovers of heady drinks anywhere in the world, be you a lady or gentleman!
And the design of the bottle is so lovely in a twisted square taping tower made of tinted pink glass!

Last night we visited our favorite sushi restaurant in Shizuoka City, Sushi Ko, and have once again challenged Chef Kenta Birukawa/尾留川健太さん into something different!
We just asked off the cuff to produce five dufferent “gunkan/軍艦/”Mothership” sushi nigiri but we attached no conditions to ingredients!

Facilities and equipment: overall very clean. Beautiful washroom.
Prices: Reasonable
Strong points: Authentic French and European bistro gastronomy. Slow food. Excellent and reasonable
wine list.

Any French-style bistro ought to be judged on their terrine and/or pates for the simple reason it is their most popular comfort food as well as the reference test for the chef’s skills.
That alone would have me go time and time again to Caravin in Shizuoka City!

If you can’t read Japanese just ak what terrine or pate are on the menu as Chef Onoda is churning them out like nothing!

Strong points: Great use of local meats and Vegetables. Very healthy BBQ and brochettes. Excellent reasonable wine list.

Brochette means “Kushiyaki/串焼き” in Japanese. One could say they mainly serve BBQ-style meat and vegetables on skewers for dinner. But it is not limited to that. They actually serve very reasonable full lunches!
I already have described their Japanese Hamburger Lunch in a previous post.
Here is another version of this hamburger lunch with a little twist: Japanese “Nikomi” Hamburger Lunch!
“Nikomi/煮込み” could be translated as “stewed/slowly cooked”.

Gastronomic Destinations: Taiwan

just came back from a very short stay in Taiwan!
Although my sojourn lasted only two nights, one day and a few hours, I still had time to form a first idea of the country, its people and food!

Until my next trip I can already affirm that:
-The general welcome felt better than I had expected. Warm people, comparatively soft-spoken and very helpful in spite of the language barriers.
-A lot lot lot cleaner than I had expected. No smoking in any buildings. No spitting. Old, sometimes very old buildings, but always clean inside. Old facilities, but clean. Station scrubbed to perfection.
-Great safety, Well I don’t know the seedier side (there is one even in every big city, even Tokyo!), but i flet safe walking in back streets at night.
-Last but not least great food, although nots as spicy as expected.
In a single sentence, i had to forget my expectations and learned a delightful lesson!

Taipei Railway was spotless clean and the many shops reminded very much of Japan.

As trains and taxis are really cheap ( a thiid of Japan!) we traveled to Yingge/鷲歌/Eagle song, a city famous all over Taiwan for its ceramics. Check Yingge Ceramics Museum!

Yingge is a small city full of sights worthy of a longer visit!
Like every city Yingge is full of small bikes and one has to be careful before crossing a street, the only drawback I found in this lovely country!

We found this small noodle restaurant in the Ceramic Street, a site you must absolutely visit, but I don’t know how to pronounce its name.

It was then back in Taipei in the rain and the dark looking for a restaurant called 杭州 小龍湯包 famous for its steamed 小龍湯包/Xiaolongbao located near the Chiang Kai Shek Memorial.

And then it was back in the rain, loosing our way again and finding our destination by sheer luck again after many arguments again! the restaurant was supposed to be only 5 minutes from Taipei Central Railway Station….!
The dragon wouldn’t give me the time to take a picture of the restaurant sign board….
It is very famous (with quite a few Japanese businessmen among the guests), and the old lady taking the orders could speak English and Japanese!
But I somehow found the name as HAW JI or Haoji Dan Zai Noodles/好記担仔麺! Address in Taipei: Address: Qi Lin Lu 79, five minutes from Railway Station.

Shizuoka Tourism: Shizuoka Fujisan Airport in Shimada City!

At long last I was able to make use of the aiprort they built in 2008 in Shimada City, Shizuoka Prefecture under the name of Shizuoka Fujisan Airport, that is the airport that welcomes you to Shizuoka, the home of Mont Fuji!
Why did I use it?
Because I paid a short visit to Taiwan.
I traveled from Shizuoka City, and you will discover how easy and practical it has become to travel from and to Shizuoka Prefecture!

The above map will you give you an idea of our location!
Now just follow me!

You can always board the bus from Shizuoka JR Station, platform 4, but even more practical for people who live in Shizuoka Cty is the bus station at Cenova Department Store where you are protected from all nature elements.
First go to Gate 6!

Shizutetsu Company Limousine type bus!

You can pay cash or use a Shizutesu Line Prepaid Card.
Fee: 1000 yen per person for a 52-minute trip.

French Bistro Gastronomy: Boudin Blanc at Patina in Shizuoka City!

Service: Very friendly and smiling
Facilities: Very clean. Beautiful washroom.
Prices: Reasonable
Strong points: A true cafe where to relax and enjoy a good light meal any time of the day. Interesting reasonable wine and cider list.

As I said in my previous report Boudin Blanc is a delicacy dating back to the Middle Ages and is nowadays made with white meat ( as opposed to Boudin noir/Blood sausage) with pork or veal fat added. Some chefs use more or less flour or yeast to liaise the meat and make it easier to cut.

Patina in Aoi Ku, Shizuoka City, was offering Boudin Blanc Lunch in their weekly lunch set menus and I couldn’t resist again! At less than 10 Euros, it is a bargain!

Boudin Blanc is more of an Eastern and Central France specialty but a Bordeaux wine is fine for it!

And I already told I know of other places, but this is one of the tops!

Lady Chef kondoh’s recipe is different, but she favors pan frying her carefully home-made Boudin Blanc and serve them in a Dijon seed mustard sauce!

I wonder if one has ever heard the comment, “a Boudin blanc with a feminine touch”?

Plenty of fresh local greens for great balance!

Baked sweet potatoes make for a lovely touch!

You can choose between rice and grilled soft bread. No contest there!

Lady Chef Kondoh uses no flour or liaising agent in her Boudin Blanc. It might be more difficult to cut it cleanly but the result is a tender and so light sausage!
I had great difficulty eating it slowly… A beauty!
When lady chefs surpass their male colleagues….!?

French Bistro Gastronomy: Boudin Blanc at Caravin in Shizuoka City!

Service: very friendly if a bit shy.
Facilities and equipment: overall very clean. Beautiful washroom.

Strong points: Authentic French and European bistro gastronomy. Slow food. Excellent and reasonable
wine list.

I told you no longer ago I would have to visit Caravin in Aoi Ku, Shizuoka City not before long!
Well, the other day I just couldn’t keep that Boudin Blanc out of my head and had to sample it again before I got mad!

Boudin Blanc is a delicacy dating back to the Middle Ages and is nowadays made with white meat ( as opposed to Boudin noir/Blood sausage) with pork or veal fat added.

It can be served in many ways. Chef Onoda’s preferred method is pan frying his home-made boudin blanc and serving it with the vegetables of the day.

You have to come to Japan to find Boudin Blanc presented as an artistic montage!

The Boudin Blanc is fried in light fond de veau/veal stock, jus de volaille/chicken broth and Dijon mustard and mounted on Shizuoka-grown organic Red Moon potatoes!

Enormous fresh shiitake mushrooms are also used for the support while a green touch is added with a long shishito green pepper!

Such a fine texture!
Did I say they were sublime?

True French bistro gastronomy in Japan!
