Shizuoka Sake Tasting: Fuji Takasago Brewery-Takasago Shiboritate Otafuku Honjozo Nama Genshu Muroka

Can you distinguish the “face” on the label? LOL

“Otafuku/お多福” is the name of a mask representing the visage of a woman with a small nose and large, round and smooth cheeks! The same woman is supposed to represent good fortune!

Fuji Takasago Brewery in Fujinomiya City produces this “Otafuku” sake to be drunk during the new year festivities.

This particular brand is a “shiboritate/just pressed”, “nama/unpasteurised”, “genshu/no water added” and “muroka/unfiltered”!

Alcohol: 18 degrees
Dryness: + 5
Bottled in DEcember 2013

Clarity: Very Clear
Color: Very faint golden hue
Aroma: Assertive, fruity, flowery, plums, cherries
Body: Fluid
Taste: Very strong attack backed up with puissant alcohol.
Complex. Fruity. Cherries, plums, nuts
Disappears quickly on a very dry note with dry almonds and macadamia nuts.
Changes very little with food. Enhances heavy food such as izakaya fare.

Overall: A straightforward strong sake for very dry sake lovers at parties and heavy celebrations!
To be drunk moderately unless you don’t care!

Yesterday I once again had the opportunity to meet old friends in Shizuoka City, namely the Hiragakis of Kitayama Noen in Fujinomiya City who were taking part in a Farmers’ market event held D&Department By Taita in Suruga Ku, Shizuoka City!

Taita Company opened this store and restaurant 5 years ago and the Farmers’ Market is part of their 5th Anniversary events!

The market was held between 12:00 and sunset on the lawn in front of the store and in spite of the late time for a market was busy with connoisseur customers who had been alerted though the social networks!

Hiragaki San had traveled all the way in the morning from the very slopes of Mount Fuji!

You could see their hometown in the far distance! LOL

They had brought winter vegetables as snow is already surrounding them up on the slopes of Mount Fuji!
They certainly made for great pictures: butternut, delicata, pumpkins!

I found this limited edition at the station of Izu Nagaoka along the Izu Hakane Railway Line runnning from Mishima City to Shuzenji.
The same brand is sold all over the Izu Peninsula as a regional private brand.
Izu Yama Yama means the Mountains of Izu!

I actually conducted this tatsing session by the side of an open hot spring bath in our room at the Yoshiharu Sap Resort Hotel!

Alcohol: 15~16 degrees
Nama/Unpasteurized
Bottled in October 2013

Clarity: Very clear
Color: Transparent
Aroma: Assertive and fruity. Dry almonds
Body: Fluid, slightly sirupy
Taste: Well-rounded fruity attack.
Complex. Lots of nuts, macadamia nuts.
Disappears quickly with fruity nuts, hints of custard and notes of apples and chestnuts.
Drier and drier almonds appear on back of the pl\alate with every sip.
Very easy to drink.
I especially enjoyed it a good hour after dinner as a solid and eminently elegant night cap.

Comments: Very pleasurable sake.
Unpretentious but still elegant and so satisfying.
Will please beginners and veterans, ladies and gentlemen alike.
Best appreciated chilled.
Would make for a beautiful and lighter digestif.
You must try it with cheese!
Will surprise many a person with its ever-changing facets!
Since it is sold in small bottles only, it would make a nice present to be enjoyed after a great meal!

Shizuoka Sake Tasting: Fuji-Takasago Brewery-Junmai Ginjo “Nama”

It’s been a long time since I enjoyed a “nama”/unpasteurized sake by Fuji-Takasago Brewery in Fujinomiya City!
If you don’t want to spend or drink too much it is always a good idea to buy smaller bottles containing only 180 ml, or even drink two them if you want variation in low quantities!

I can recommend Cenova Department Store in Shizuoka as they take the pains of adding extra information!

Rice milled down to 60%
Alcohol: 14.5 degrees
Dryness: + 4
Bottled in May 2013

Clarity: Very clear
Color: Light golden
Aroma: Assertive. Dry and fruity. Pineapple, citruses.
Body: Fluid
Taste: Very dry attack wit strong junmai petillant.
Complex.
Lots of nuts.Oranges.
Lingers for a little while warming up the back of the palate.
Ends up on an even drier note with oranges, nuts, almonds, chestnuts.
tends to take a back step with food although junmai petillant is still very strong and dryness more accentuated with more nuts.

Overall: A sake for dry sake lovers!
Enjoyable with and away from food.
Strong in spite of normal alcohol content.
Tends to take a mellow turn once away fro food again.
Although I appreciated it on its ow, it is probably conceived to be drunk with heavy izakaya food.

Fuji-Takasago Brewery is located in Fujinomiya City and as I said since Mount Fuji has been accepted by the UNESCO as a World Cultural Heritage, the brewery felt obliged to advertise the event!

I suspect they printed that particular “flying label” for all their bottles! LOL

Clarity: Very clear
Color: Very light golden hue
Aroma: Faint, almost shy. Fruity and sweetish. rice
Body: Fluid
Taste: Well-rounded fruity and sweetish attack with assertive junmai petillant.
Complex. Pears, almonds, hints of chocolate. Later, hints of sweet milk coffee.
Lingers for a while warming up the palate.
Tends to sweeten up with second long sip.
Marries well with food.
Surprisingly sweetish and pleasant sake for a yamahai.

Overall: A sake obviously designed to be enjoyed with heavy izakaya food, although thoroughly enjoyable on its own chilled.
Probably best enjoyed by ladies thanks to its sweetish approach.
Try it with cheese!

As I said before, with the advent of Mount Fuji and Matsubara Beach being chosen as the New UNESCO World Culture Heritage, the sake breweries have been scrambling to put on sale brews commemorating the event!
Fujinishiki Brewery located in Fujinomiya City at the foot of Mount Fuji, came up with a beautiful label representing Mount Fuji in different seasons!

The small label on the bottle neck states the recent registration and election of Mount Fuji and Matsubara Beach as a new UNESCO World Cultural Heritage!

Alcohol: 15~16 degrees

Clarity: Very clear

Aroma: Fruity. Coffee beans, nuts, loquats.
Body: fluid, slightly syrupy
Taste: Sweetish attack backed up with assertive junmai petillant.
Fruity and complex.
Nuts, chestnuts, loquats, apricots, notes of coffee beans.
Linger for a while before disappearing on a drier note.
Tends to mellow with food.
Marries beautifully with food, although it tends to take a back step.

Overall: A typical sake from Fujinishiki Brewery conceived to marry beautifully with food, especially izakaya food, although it tends to make itself discreet then.
Eminently drinkable on its own at all temperatures.
Take it to great BBQ outdoors or as a present!

Shizuoka Shochu Tasting: Fujinishiki Brewery-Kaguyahime no Sasayaki Mugi/Grain Shochu

Fujinishiki Brewery in Fujinomiya City at the foot of Mount Fuji distills the only “Mugi Shochu”, that is a shochu made from grain/barley in Shizuoka Prefecture!

Extremely-reasonably priced but nonetheless extravagant mugi shochu, it makes for a nice present with its box!

Yeast: grain yeast
Alcohol: 25 degrees

Clarity: Very clear
Color: Transparent
Aroma: Rich and fruity. Faint banana, almonds.
Body: Fluid
Taste: Solid and fruity attack.
Complex and sophisticated: bananas with a late appearance by almonds.
Very refreshing in spite of the the strong alcohol.
But for a beginning on an almost sweetish note, it will abandon you on a drier note with hints of nuts.

Overall: There is no need whatsoever to mix it with water!
Pour it on plenty of ice and sip it slowly!
Can be enjoyed at any time in the afternoon and evening as an aperitif or as a digestif.
Drinks most splendidly on a warm summer night!
Drink it slowly as it is dangerously tempting!

Clarity: Very clear
Color: Golden hue
Aroma: Assertive and fruity. Pears with notes of banana. Alcohol.
Body: Fluid
Taste: Well-rounded fruity attack backed up with some palate-warming junmai petillant.
Complex: pears, chocolate, persimmon.
Disappears quickly on a strong nutty note.
Mellows with food for a great marriage.

Overall: A typical sake from Fuji-Takasago Brewery.
Shizuoka Prefecture-grown Homare Fuji sake rice seems to come into many intriguing guises demonstrating that the same rice with basically the same water and yeasts can give birth to a great variety of bectars!

With the advent of Mount Fuji and Matsubara Beach being chosen as the New UNESCO World Culture Heritage, the sake breweries have been scrambling to put on sale brews commemorating the event!

The red tag makes sure you understand the purpose of this particular sake brewed in Fujinomiya City by Makino Brewery at the foot of Mount Fuji.
Actually the brand name “Fujisan” is owned by only two breweries, one in Yamanashi Prefecture and by Makino Brewery!

Rice milled down to 70%
Alcohol: 15 degrees
Bottled in June 2013

Clarity: Very clear
Color: Very faint golden hue
Aroma: Light and fruity. Rice, banana.
Body: Fluid
Tasting: Very well-rounded dry attack, fruity with a muted junmai petillant backup.
Lingers for a while warming up back of the mouth.
Complex.
Loquats, almonds, apricots, macadamia nuts, apples.
Changes very little with food but for a drier note. Actually marries well with any food, especially izakaya fare.
Better enjoyed with food as it “nags” you into the next cup.

Overall: A typical sake from Shizuoka Prefecture with a lot of complexity, fruit and dry but smooth attck.
Whenever enjoyed with food or not, it insistently pulls you back into the next cup, a sure sign of an eminently drinkable sake!
The kind of sake to bring to any party including food, be it a bbq or a sophisticated affair!

Sometimes, actually more often than thought, sake brewers do have a special feeling for wine and present their best sake in the same fashion!

Fuji-Takasago brewery in Fujinomiya City goes as far as present it with a very special box for collectors!

The Missus has already put her hands on that particular box!
Actually “SOLEIL”, meaning “SUN” in French, has been produced as very special brand every year and is naturally very limited.
Incidentally there is not a single mistake in the French label!

Rice milled down to 35%
Alcohol: 15,5 degrees
Bottled in September 2012

Clarity: Very clear
Color: Light golden hue
Aroma: Assertive. Fruity and dry. Alcohol. Banana, pineapple
Body: fluid, slightly sirupy
Taste: Strong pleasant alcohol accompanying fruity attack.
Nuts: chestnuts, walnuts, almonds, macadamia nuts.
Ends fairly quickly on a dry coffee beans,banana and dark chocolate note.
Elegant in spite of its fairly strong attack.
Complex with facets surging from nowhere.
Turns drier with food and takes a back step with heavy fare but marries well akin to a slightly dry wine.

Overall: Quite extravagant!
Mind you, it is a daiginjo created in a very peculiar fashion with rice milled all the way down to 35%, an extremely low level!
Probably best appreciated on its own like a fine mild/moelleux white wine.
Its very nutty taste would make would make for a beautiful liqueur slightly chilled.
Actually, I would recommend it instead of a wine to go with chocolate or cheese.
All in all, you couldn’t beat it as a nightcap in very special company!

On Friday February 8th Le Comptoir de Bio-S witnessed the visit of three wine producers from Bourgogne, France, who introduced their creations to wine lovers in Shizuoka in the company of gastronomy based on local products!

Quite a palette as you can imagine!
Arnaud, Rodolphe and Georges, ably helped by their interpreter/guide Ms. Emi Tanabe, proved the model of gastronomic ambassadors who helped so much on that night make some very lucky guests discover the marvels of Bourgogne (my home, incidentally!)!
Their wines married splendidly with the repast concocted by the chefs which proved a discovery for the French wine producers themselves!

Shizuoka Prefecture is a large Prefecture by Japanese standards and its peculiar shape make it feel even larger. It takes no less than three hours non-stop to cross it by normal train!
Yesterday I had the occasion to travel (by car) again to Fujinomiya City located on the western slopes of Mount Fuji, which means it is protected from the cold weather coming from the east and is a thriving agricultural area in an already very rich prefecture.

Every year Fuji Takasago Brewery in Fujinomiya City has the interesting habit of producing a limited brew called “Kotobuki/寿?, meaning “Congratulations” with “leftovers of different brew concocted during the year.
Actually it is a very happy blend of sake difficult to classify but eminently enjoyable, the more for it that it is limited!
Note the character 寿/kotobuki/congratulations has been designed in the shape of a Snake as 2103 is the Year of the Snake!

Dryness: + 5.0
Bottled in November 21012

Clarity: Very clear
Color: Light golden hue
Aroma: Light and fruity. Melon
Body: Fluid
Taste: Well-rounded fruity attack with beautiful alcohol warming up back of the palate.
Disappears quickly.
Very fruity in spite of its announced dryness.
Complex. Nutty flavor almost exploding on the tongue.
Almonds, dark chocolate, macadamia nuts.
Tends to become even drier with plenty of almonds popping up at the back of the palate after a few sips.

Overall: Very easy to drink and more elegant than expected!
Great with food, although could actually be enjoyed on its own as a chilled aperitif or a night cap!
Would greatly marry with cheese!

Shizuoka Sake tasting: Fujimasa Brewery-Junmai

Usually I’m not really keen to acquire “souvenir sets” when it come to sake, but Fujimasa Brewery in Fujinomiya City, whose sake are not easy to buy in Shizuoka City, put out an interesting set I could not resist!

Instead of the difficult to handle one-cup sake they offered their products in 180 ml bottles making it so practical for individual tasting of 3 different sake instead of having to buy the bigger bottles.

You are invited to compare the three different tastes!

The third bottle: Junmai!

Rice milled down to 60%
Alcohol: 15~16 degrees
Bottled in August 2012

Clarity: Very clear
Color: Golden hue
Aroma: Dry and fruity. Very dry bananas, almonds
Body: Fluid
Taste: Very dry attack backed by a little junmai petillant.
Very nutty flavors: almonds, macadamia nuts, and faint oranges.
Disappears very quickly with faint notes of oranges and more nuts.
Very easy to drink.
Constantly calls for the next cup.
Stays dry and very smooth with every cup.
Take an even drier turn with food.
Changes little with food but tends to take a back seat then with more oranges and nuts.
Tends to become a little sweeter on the palate when away from food again.

Overall: A junmai obviously designed for food.
Shows little of the characteristics of a junmai but is nonetheless very pleasant and marries well with food.
Even though, being very dry, it could be drunk best as an aperitif. A dry sherry?
Definitely for dry sake lovers!

Usually I’m not really keen to acquire “souvenir sets” when it come to sake, but Fujimasa Brewery in Fujinomiya City, whose sake are not easy to buy in Shizuoka City, put out an interesting set I could not resist!

Instead of the difficult to handle one-cup sake they offered their products in 180 ml bottles making it so practical for individual tasting of 3 different sake instead of having to buy the bigger bottles.

The second bottle! A honjozo!

Rice milled down to 65%
Alcohol: 15=16 degrees
Bottled in August 2012

Clarity: Very clear
Color: Light golden hue
Aroma: Strong, fruity and spicy. Green apples, melon, almonds and faint notes of banana.
Body: Fluid
Taste: Well-rounded attack with a strong and pleasant alcohol bak up warming up the palate.
Complex. Dry, fruity and spicy.
Almonds, dark chocolate, chestnuts.
Lingers for a little while before leaving the stage on a dry and spicy note.
Easy to drink on its own away from food in spite of its dry and spicy nature.
Dry almonds make a strong comeback with the second cup.
Varies little with food, persevering with its delicious spiciness. Actually tends to take on a softer turn inside the palate with a wealth of nuts.
Oranges, macadamia nuts, almonds and chestnuts combine for a very pleasant nutty sweetish taste away from food.

Overall: Another sake obviously designed for food, but eminently enjoyable on its own.
A sake one could bring to any izakaya, BBQ or outdoors party!
The spicy nutty taste will surprise and please quite a few, especially for the fact it tends to reveal new facets from the third glass onward!
