French Gastronomy: Dinner at FIGARO Food & Wine in Shizuoka City!

Last night after a long walk in the late afternoon Dragon felt like visiting a new place.
I took the opportunity to introduce her to FIGARO (Figaro Food & Wine), a reasonable French bistro-style restaurant cum wine bar in Aoba Park Street, Aoi Ku, Shizuoka City!

Although the allow smoking in the evenings (lunch time is entirely non-smoking), the place is very clean with small but superb washroom.
It is very popular indeed with guests of all ages, genders and stations.

Apart of a solid regular menu Chef Toshiharu Matsuura/松浦敏春さん, an old acquaintance of mine also offers additional dishes every day!

They also have the great merit to serve wine by the glass and bottle for all budgets!

In any case consult Sommelier Yoshinori Shimizu/清水芳則さん who spent a whole year in Beaujolais region, France, before you decide what to drink.

For people who want to taste wines without overdrinking themselves into oblivion they propose a very reasonable triple tasting set!

Last night was a long night out I started before 6 to finish well after 11!
On my fourth stop of the night I decided to have a break from all the beer to have a glass of wine!

Since I was prowling around Aoba Park Street, Aoi Ku, Shizuoka City in the vicinity of Figaro and because it stays until very late my destination had been written on the wall (pavement!) all the time!

Since my birthplace and family home are in Bourgogne, France, I just couldn’t resist the Escargots A La Bourguignonne/Burgundy-style snails on the menu!

Most people think French snails, especially from Bourgogne for that matter, are always served in their shells with plenty of butter, garlic, parsley and white wine (and grated almond!), but this usually turns in a mey business. The other popular style back home is “meurette!

They are served in a ramequin pot cooked with brandy, fresh cream and mushrooms!
Frankly speaking I prefer that style. It is actually tastier, healthier and more elegant!

What’s going to be the next dish there? You will have to wait until next week maybe?

French Gastronomy: Pan-fried Seabream and Organic Spring Vegetables at Pissenlit in Shizuoka City!

Service: Excellent and very friendly.
Facilities: Great cleanliness overall. Superb washroom (mouthwash and toothpicks provided!)!
Prices: Reasonable to slightly expensive, very good value.
Strong points: Interesting wine list. Great use of local products, especially organic vegetables and Shizuoka-bred meat and caught fish. Very inventive French gastronomy.

Shizuoka has an abundant supply of fish, especially madai/真鯛/True seabream, and a wealth of vegetables in Spring!
It is only a question of combining them together!

Chef Toru Arima/有馬亨さん keeps things simple.
he will first fry the fish skin down over a hot fire until it it has attained a paper thin cracking aspect.
Then he will turn it over and let it cook for a while inside the oven!

All the spring vegetables are first lightly boiled in slightly salted water, drained and placed on the plate.
Notice the long rape flower placed under the fish to make sure that it does not come in direct contact with plate! Both decorative and technical!

The sauce is an extraordinarily elegant and healthy seasoning made with walnuts, shiso/perilla leaves, asparagus and anchovy!

the steamed white and green asparaguses cultivated in Shimo, Aoi Ku, Shizuoka City by Mr. Enomoto and the Yaizu City-grown fukinoto beignets (fritters)!
Fukinoto/フキノトウ is Giant Japanese butterbur, a very popular sanasai/笹井/wild mountain vegetable in Japan which appears on the market end of February~beginning of March!

The fukinoto sauce consists basically of white butter, olive oil, chopped fukinoto and herbs!

As for the beignet/fritter, it is basically the same concept as for zucchini flower fritters!

Shizuoka City is divided into 3 distinct wards, Aoi Ku, Suruga Ku, and Shimizu Ku. Suruga Ku south of Shizuoka JR Station is rapidly evolving into a gastronomic area to provide for a growing population and palliate for the congested Aoi Ku north of Shizuoka JR Station.

In Mabuchi you will find a small island of Southern France called “C’est La Vie” (“This is life”!) offering inventive and healthy French gastronomy concocted by Chef Keisuke Suzuki/鈴木啓介さん to an ever-growing clientele.

I decided to combine the plate 8 organic vegetables cultivated at Gomi Farm in Yamanashi prefecture and a slice of pate de campagne and salad!

French gastronomy and restaurants are not so many in Shizuoka City which tends more for Italian tastes, so it is always with an augmented pleasure when you can find a new one!

La Table du Boucher (the Butcher’s Table) specializes, as its name indicates, in meat dishes found in all corners of France. But it also the particularity to double up as a wine bar!

The other particularity, and a real boon for a wine bar, is that it is entirely non-smoking!

The only problem I would have is because of the cozy atmosphere it is quite dark inside, making pictures difficult to take!

The often changed menu is seasonal, eclectic and making great use of local and non-local products including a lot of home-made meat dishes!

Due to a double cold and flu we could have our New Year Dinner only last night at Pissenlit French Restaurant in Pissenlit, but it certainly was worth it!

Cava.K. French Restaurant is lost in the mountains near green tea fields in Kikugawa City, western Shizuoka prefecture for a good reason: Chef Hiroyuki Yamaguchi/山口祐之さん wants to stay as close as possible to local hunters for best supply of game whatever the season!

He also grows his own garden to supply variety to the local products!

The reason he called his French Resaurant Cava.K. is twofold: “Ca va” in French means “It’s fine”. The district where the restaurant is located is called 沢水加/sabaka. When you that “K” is pronouced “ka” in French, the whole name almost sounds the same!

If you don’t understand Japanese, don’t worry, the staff can at least tell it in French!

We came six of us that day for a business lunch. We had to skip alcohol but I can tell you that made it a feast, including game!

Important note: for those who think we are eating Japan wild life into extinction, stand corrected! All these animals had to be culled in the wild by professional hunters as they proliferate to very dangerous numbers for the local ecology. At least they become useful!

Don’t ask me how much we pay! It was ridiculously cheap considering the quality, the originality and the supreme flavors, aromas and savors!

I very much doubt you will find the equivalent in Tokyo, so reserve your train ticket!

Being French, I knew they meant “Terrine de Campagne Sandwich”!

Shizuoka Prefecture being practically “sandwiched” between sea and land in the mildest part of Japan occupies the most favorable location for a constant supply of fresh produce from the sea, the land and the mountains all year round.
It is more a question of finding new ideas to combine such products in season than to look for a rare product and try to arrange it.
Shizuoka conger eels or anago/穴子 are famed all over the country and can be sampled at many Japanese Restaurants.

Chef Toru Arima/有馬亨さん being Japanese but first and foremost a French cuisine chef came up with the idea of preparing conger eel almost in Japanese manner by first sauteed and baking it to a crisp and seasoning with a sauce combining both traditional Japanese and French sauce ingredients (secrets, I’m afraid!) I can only guess, but the result leaves you baffled in between two traditions for your utter gustative pleasure!

Now, the wing bean (also known as the Goa bean and Asparagus pea, Four-angled bean and Winged pea) placed symmetrically atop the conger eel is actually called “Square bean/Shikaku Mame/しかく豆” in Japanese.
Would you believe it is a tropical legume plant native to Papua New Guinea?
It is a very valuable vegetable when it comes to all kinds of beneficial elements.
It has recently acquired a big reputation here in Shizuoka and is presented and eaten in all kinds of sizes.
The one used Tooru is still small and young.
Not only it is a tasty and healthy vegetable but it also offers all sorts of design idea thanks to its fresh color which helps enhance the darker colors of meat or fish!
Incidentally this winged bean was organically grown in Fujinomiya City at the foot of Mount Fuji!

Shizuoka Prefecture boasts many seafood varieties as its specialties: Sakura Ebi/Cherry Shrimps, Shirasu/Sardine Whiting, Tachiuo/Scabbard Fish, Takahashi Gani:the largest crab in the world. and so on, but the fish it is most proud of is arguably katsuo or bonito!

We are very much in season is coming through the Suruga Bay and along our shores back to colder waters. We call it “Modori Katsuo/Bonito on his way back”!

Chef Toru Arima/有馬亨さん often serves as a sublime appetizer in tataki form with organic vegetables, jelly and matcha tea and curry powder for a last seasoning touch!

Bonito fillets are first seared on all sides before being plunged in icy water to stop the cooking.
Once completely cooled down it is cut in thick slices across the fillet.
Note the edible and so cute shiso/perilla flowers for a simple and so elegant touch!

There are times when you feel you ought to take a very long look at a dish to leave an indelible image in your brain.
Tetsuya Sugimoto, owner-chef of the eponymous restaurant in Shizuoka City, Aoi Ku, tries never to interfere with the natural colors of the vegetables he utilizes in his superlative dishes.

It becomes a photographic challenge when the plate comes in front of you at first and generally speaking the first photograph as above is rarely the best one!
So you start turning the plate around and take pictures from every possible angle.
Although Tetsuya does not mind at all, keep in mind that the dish, even served on a hot plate, will eventually cool down, so do hurry! (And you had better be alone, as the dragon will always start making snide remarks about my lack of concern for her or our company!)!

Testuya’s technique is both simple and sophisticated. he will add almost no seasoning or sauce and will use the natural juices of the vegetables for the sauce with the addition of a little lemon juice and secret vinegar both to preserve the color.

As for perfect cooking I know that he makes almost invisible incisions with a very thin and sharp knife inside the pieces of vegetables when they are thick to achieve a uniform cooking.
Incidentally all his vegetables are organic and grown in Shizuoka Prefecture.
And on request he can make such a dish purely vegan!

French Desserts at Pissenlit French Restaurant in Shizuoka City!

For all its French concept I very much doubt you will find such a dessert in France! See below.

Service: Excellent and very friendly.
Facilities: Great cleanliness overall. Superb washroom (mouthwash and toothpicks provided!)!
Prices: Reasonable to slightly expensive, very good value.
Strong points: Interesting wine list. Great use of local products, especially organic vegetables and Shizuoka-bred meat and caught fish. Very inventive French gastronomy.

I have always had a sweet tooth and a weakness for desserts although I do not appreciate over sweet dishes. I’m always looking for something more natural combining inventiveness with classical concepts.
I Always make a point to order desserts at Pissenlit French Restaurant in shizuoka City, Aoi Ku, as Chef Toru Arima/有馬亨さん is always bound to come up with unexpected and sublime desserts which will not tax your health!
Here is a succinct selection of what I \had the pleasure to enjoy recently!

This two-tier dessert was created with “croquignolles”, both very soft and crisp biscuits made with plenty of egg whites.

Black sesame (no pun intended!) with black sesame and pear sorbets, and decorated with custard and raspberry sauces!
