American Gastronomy: Crazy Double Decker at Tequila’s Diner in Shizuoka City!

Service: Shy but very friendly
Equipment & Facilities: Good general cleanliness. Excellent washroom

I was long due for a visit to a favorite hamburger diner of mine in Shizuoka City, namely Tequila’s Diner, especially it had gone through a couple of welcome changes!

The small terrace has been renovated into a small wooden lodge!
I’m all the happier for it as this is my favorite spot, even in winter!

Incidentally the patties are some insipid and spongy things, but knife-chopped Shizuoka beef with a superb bite!
Meat in hamburgers should be chewed, not gulped down!

I got very hungry after lunch time after I had to report about gastronomic a research and demonstration held by members of the Wasabi Kai (report coming soon!) without properly eating, so I decided to do my own “research” in the hamburger menu at newly opened BLUE BOOKS cafe where I already have enjoyed their Foe Gras Hamburger.
There are 5 basic hamburgers and a possibility of adding more ingredients. I’m actually planning to ask for a combination of mine soon!
Anyway this time I was craving for fish so I couldn’t help ordering the fish and tartar sauce hamburger!
Since it is made with a slice of marlin tuna, all the better!

Very busy on opening day in spite of Typhoon No 27!

The center of Shizuoka City is definitely taking a big turn towards modernity with a completely renovated Den Building in Aoi Ku 5-10 minutes straight walk from the Shizuoka JR Station!

Taita Company opened its new venture of the first floor of Den building with a vast cafe cum book store with the name of Blue Books Cafe. This the 19th different restaurant or cafe (to which must be added 6 more stores) although the company has succeeded to conceive them all in different genres.

It is both a cafe restaurant for lunch, a cafe in the afternoon and a restaurant in the evening although you could easily combine two of them as you are welcome to stay as long as you want for a drink.
It also doubles up as a multi-genred bookstore of a higher level.

JUICY-HAMBAAGU-1

The Japanese make a clear distinction between hamburgers served sandwiched between buns or bread and open hamburgers.

They call the American variety served between buns “hanbaaga” whereas minced meat steaks (stak hache in French) “hanbaagu”! Very little diffrenec in pronuciation but big difference in concept and serving!

Moreover the Japanese like their “hanbaagu” as “juicy” as possible, which explains why so many people prefer the open hamburgers in this country.
Here is a slightly off the beaten tracks recipe which should please those who like their favorite food soft and juicy!

Bear in mind that I leave the quantities open to allow for personal priorities. This is only the basic recipe left open to many variations!

INGREDIENTS:

Finely ground meat: preferably a mixture of beef and pork. Beef only is fine (for hallal and kosher cuisinesin particular)!
Finely chopped onion
Salt
Black pepper
Nutmeg
Breadcrumbs/panko
Milk (replace with light beef stock for kosher cuisine)
Eggs
Butter (skip or use fake butter for kosher cuisine)
Balsamico vinegar
Optional spices: Chili pepper, etc.
Optional vegetables: finely chopped vegetables (garlic, carrits, etc.) to be added to chopped onion

RECIPE:

JUICY-HAMBAAGU-2

Right away this recipe differs from more conventional ones:
On a cold frying pan drop finely chopped onion. Pour oil over the onion (not before dropping the onion in the frying pan) and stir-fry over low fire. This will allow oil to coat onion and prevent the taste to escape! Fry onion until they have become soft and transparent.
Let the onion cool completely first!

JUICY-HAMBAAGU-3

In a bowl drop the meat and add salt. Mix the salt in with a spatula.
Do not use your fingers! Otherwise the fat inside the meat will liquefy.

JUICY-HAMBAAGU-4

Mix the salt and meat until the meat attains a paste aspect. This requires some effort but this is one the keys for a juicy and soft “hanbaagu”!

Once you have achieved a paste form add onion, bredacrumbs, egg, milk, black pepper and mix well.
This time mix by hand! You should obtain a very sticky mixture than.

Note: as for salt added to the meat, the right amount is 0.8 % of the meat weight. This is the best amount to help control the amount of of water inside all ingredients. Too much salt and the meat will become watery. Not enough salt and the meat will dry down. A bit complicated, I understand! Actually this the amount of salt found inside a human body!

JUICY-HAMBAAGU-6

On a cold frying pan pour some oil. Deposit the hanbaagu over the oil and fry over a low fire.
A hot fire will mean a hard surface and a raw inside! Moreover the water contained inside the meat will escape and break the hanbaagu.
This is another important key to a juicy hanbaagu!

JUICY-HAMBAAGU-7

Do not put a lid over the meat! Other wise the temperature will rise too quickly and the hanbaagu will end flat!
Sponge off the first liquid coming out of the meat with kitchen paper as shown above.
When the bottom face has been properly cooked turn over and again sponge off any liquid coming out.

JUICY-HAMBAAGU-8

As an indication, once more than half of the meat has turned whitish it means that the bottom face is properly cooked. At this time turn the hanbaagu over.

JUICY-HAMBAAGU-9

It will take 12~13 minutes to cook the hanbaagu properly on both faces. When yo see some transparent juices seeping out the meat will have been cooked properly.

JUICY-HAMBAAGU-10

Take hanbaagu off the frying pan.
Add balsamico vinegar to the juices and reduce until half of it over a medium fire.
Add salt then if necessary.
Mix in some butter to liaise the sauce.
Place the hanbaagu over the sauce and coat both sides/faces and serve immediately with the rest of the sauce poured over the meat.

JUICY-HAMBAAGU-11

When you cut the hanbaagu it should be soft and well cooked but juices should not run out. But you bite it you will then be able to taste the juices inside the meat!

Since QUIZOXY seems to be so interested here are two more American specialties I had the pleasure to savor the past week:

Today saw some dog day’s weather with an insistent cold rain to make you feel reaaly reasonable.
That is when I suddenly felt a craving for a hamburger for lunch! I mean a real one!
And there is only one place to go then in Shizuoka City!

These past years, for the pleasure of quality-minded hamburger lovers, we are witnessing the emergence of new diners (as they say in the States) which not only have the merit not to be part of chain stores with all the consequent disappointments, but which also endeavor to serve full and appetizing repasts in a slow enough manner to guarantee unhurried satisfaction.

I had meant to visit Tequila’s Diner in Aoi ku, Shizuoka City for quite some time, especially at lunch.
The problem is that it is really busy and the waiting is long, it being slow food!

They do make an effort at their English!

The menu is clearly posted outside! A plus, definitely!

And written in both languages!

I had decided on my order before entering the place!

The Japanese customers prefer to sit inside in a congested room sitting about 14~16 people but I wouldn’t give away that small table outside to anyone!
The place was full so the table outside was gladly agreed with on my request!
The Chef even asked me if I wanted the parasol fit in for me (which I declined!)
Next time I’ll make sure to have the same place in the evening!
For all his tattoos and scars, Chef Chihirou Okamoto is a shy and friendly bloke always ready to serve!

For 200 more yen I got a glass of beer and one soft drink and two small appetizers!

My “Tequila’s Favorite” order!

I noted with pleasure that the fried potatoes were not served with the usual mountain of salt but with just enough salt and black pepper!

The appetizers: corn salad and ham on coleslaw!

No, I didn’t use my hands but ate the whole the slow way with fork and knife!

The egg was fried to perfection, although I’m sure you can request it cooked longer for those who don’t like runny eggs!

Being from Bourgogne I always add mustard on my potatoes!

I told you that a good hamburger is a full meal: bread, Fresh and cooked vegetables, beef, bacon, cheese and egg!

I’m definitely planning to come back soon one evening with an American friend and enjoy real American food outside, away from the smoke!

Hamburgers in Shizuoka 1: G.O.T. Hamburger at Good Old Table in Shizuoka City!

Service: Very Friendly
Equipment & Facilities: Old but clean. Very clean washroom
Prices: Reasonable
Strong points: Hamburgers and Tec-Mex gastronomy.

I’ve always wondered about the meaning of “Junk & Soul Food”!
Friends of mine had told me their hamburgers were nice enough so I took the opportunity to visit the place during my lunch break today!

The whole place is inspired by US and Mexican lore, but I’m sure it is a lot cleaner!

The writing on the walls certainly invites you to enjoy the food! LOL

Have a look at their “newsletter”!
Someone might feel inclined to give an American English lesson!
Although I’m sure no one did in their four years of existence!

The menus are everywhere, on the tables, pinned on the walls and even in the washroom!

My order: GOT (Good Old Table) Hamburger Lunch Set including potatoes (Fried or mashed), soup, salad and drink (I had a hot coffee).

Hot soup and mixed coleslaw salad.

The size is definitely American!

You cannot eat it with your fingers as it is a nikomi/slowly cooked and simmered style.
Forks, knives and spoons are provided.

I had chosen mashed potatoes to scoop with all the hamburger sauce!

It actually makes for a copious well-balanced meal!

And yes! The meat was tender and properly cooked!
And very tasty! Heads and shoulders above McDonald’s. And volume for volume, cheaper!
A very good place indeed for hungry expats and Japanese alike!
