My Ten Best Foie Gras Dishes in Shizuoka City!

PISSENLIT-FOIE-PAIN

Pain de Foie Gras Matured with Mirin White Lees, Chouchou Farm Kankankan Musume Corn Vychissoise and soft pancake made with inca mezame potatoes served at at Pissenlit French Restaurant in Shizuoka City!
Mirin is sweet sake, and brewed in Fujieda City! A rare dish if there was one!

I love foie gras! Well, I’m French!
But the Japanese, especially in Shizuoka City, have convinced me that they have the right way to prepare it in the most delicious and (comparatively) healthy manner!

Here is, including the above, a selction of the arguably best 10 foie gras dishes I have enjoed in this gastronomic City of Shizuoka, Japan!

Prices: Reasonable
Strong points: Very generous cafe/bistro multi-genred gastronomy. Great variety. Great products. Entirely non-smoking in very modern atmosphere. Great books!

Very busy on opening day in spite of Typhoon No 27!

The center of Shizuoka City is definitely taking a big turn towards modernity with a completely renovated Den Building in Aoi Ku 5-10 minutes straight walk from the Shizuoka JR Station!

Taita Company opened its new venture of the first floor of Den building with a vast cafe cum book store with the name of Blue Books Cafe. This the 19th different restaurant or cafe (to which must be added 6 more stores) although the company has succeeded to conceive them all in different genres.

It is both a cafe restaurant for lunch, a cafe in the afternoon and a restaurant in the evening although you could easily combine two of them as you are welcome to stay as long as you want for a drink.
It also doubles up as a multi-genred bookstore of a higher level.

Since it was my first visit I decided to have a go at one of the best offerings: Foie Gras Poele (not “poire” which means “pear”! LOL) and Berry sauce Burger!

As I said yesterday the seasons change and excellent gastronomy follows the same seasons! Fortunately it’s not all about the heavy rains we have been treated with these days!
It is the season for eggplants/aubergines in Japan and Shizuoka Prefecture!
This is the second of two creations I have just savored for lunch at Pissenlit: Eggplants/Aubergines, Foie gras and Burdock Root Sauce!

Incidentally, all the vegetables used in this recipe are organic and were grown by Shizen no Chikara Garden in Shizuoka City!

The eggplants/aubergines, a variety callled bei-nasu/美茄子, were first fried and then baked to allow them to basorb back their own juices while protecting the shape of their cuts and juicy tenderness!
They made for a soft bed for the foie gras whose strong taste they balanced so well!

For all the succulent calories it was also a very well-balanced healthy dish with the fibers and vitamins provided by the lettuce!

It was simply sauteed/”poele” before its juices and fat were reduced with Madeira and Port wine and added to the burdock root sauce.

As for the burdock root, not only it was a true beauty but it was also a mystery!
Chef Touru Arima would only tell me that it consisted of finely chopped burdock root, a short and white variety, olive oil and juices of whatnot…
To think that such a simple root can be turned in the perfect sauce makes you the humbler for it!

Another reason for visiting Pissenlit on a regular basis is that Chef Tooru Arima is capable of using the most extravagant ingredients and still offer them at a very reasonable price.

This Duck foie gras (how about that, Arnie?LOL) from the Landes area, South Western France) was fried/flambe to perfection. It sounds easy, but the timing is extremely difficult. I should know as I cannot count the times I have failed.
Now the Madeira sauce was in perfect balance with the foie gras, whereas the truffles risotto offered the salted counterpoint to the sweetness of the foie gras and sauce!

Alright, how much? Less than 30 US $!
