Japanese Appetizer (O-toushi/お通し): Kamoboko!

O-toushi/お通しis actually a bit difficult to translate.
In a Japanese (in Japan) izakaya it is an appetizer that is served with the first drink and that you pay for in general in lieu of a cover charge.
I have nothing against such a notion as it gives you a good idea of the chef’s skills!

Kamaboko/蒲鉾 is made with steamed fish paste.
Shizuoka prefecture has many producers thanks to its many harbors and they do come in uncountable varieties!

Dragon prepared a typical O-toushi/お通し like those found served in izakaya:
Using kamaboko steamed on a small wooden slat she cut out half-circle slices and cut each slice in its middle down to two thirds of its height.
She then inserted green shiso/perilla leaf.
Finally she “filled” it with very soft honey-preserved ume boshi/pickled Japanese plums and sprinkled some black sesame seeds for the final touch!

Very yummy and healthy!
And cute!

By the way the small glazed earthenware cup was discovered in Yakushima Island in Kagoshima Prefecture!

Shizuoka sake Tasting: Senju Brewery-IMANOURA Homarefuji Junmai Daiginjo Nama Genshu

Senju Brewery in Iwata City is decidedly showing some great skills by succeeding to create no less than a junmai daiginjo with the Shizuoka-grown homarefuji rice after having milled it down to 50%, another feat in itself!

Of course it is a limited edition!
Junmai nama Genshu means that the sake produced hasn’t been modified whatsoever as shown by the white lees found inside!

Rice: Shizuoka-grown Homarefuji
Rice milled down to 50%
Dryness: + 3
Acidity: 1.4
Amino acids: 0.7
Alcohol: 17~18 degrees
Bottled in February 2014

Clarity: Smoky due to the white lees
Color: Transparent when lees are settles
Aroma: Dry. Dry dark chocolate, dry milk coffee
Body: Fluid
Taste: Dry and fruity attack backed by both puissant junmai petillant and dry alcohol.
Comparatively easy to drink in spite of the genshu high alcohol contents.
Very complex. Dry dark chocolate, coffee beans, oranges.
Oranges tend to grow in stature with the second cup.
Disappears with elusive notes of nuts, dates and more oranges.
Takes on a drier turn with food with more oranges lingering on.
Interestingly enough, superbly marries with cakes and biscuits.

Overall: A very unusual sake by Shizuoka standards!
Both elegant and aggressive.
Probably best enjoyed on its own, although it will surprise more than one with its ability to combine with cakes and cheese!
Tends to reveal all kinds of facets with swift turnarounds.
A sake for a circle of connoisseurs to discuss around!

Manhole Covers in Shizuoka Prefecture 33: Kanbara, Shimizu Ku, Shizuoka City!

Kanbara, located between Yui and Shin kambara in Shimizu Ku, Shizuoka City, was merged into Shizuoka City on March 1st, 2006, but Shimizu City became part of Shizuoka City as Shimizu Ku on April 1st, 2004.
On the other hand Yui merged with Shimizu Ku into Shizuoka City only on November 1st, 2008 with some confusing results when it comes to manhole covers!
Soon or later, especially after I have covered Shin Kanbara, I will have to to publish a compilation of only the truly decorated manhole covers in the whole of Shizuoka City, and that is mor than 2 dozens of them!

This is the most representative fire hydrant manhole cover of Kanabara. Even though, the crest is that of Yui, but the mark/first kanji/蒲 of Kanbara is included!

It is often found together with a water valve pit!

This pattern exists elsewhere but it is inscribed with “Kanbara Town”!

This cover reflects the confusion. It is a soccer fire hydrant manhole cover from Shimizu City before it was merged into Shizuoka City, which could have been set either before or after the merger!

This water valve pit being very recent it tends to prove that the Shimizu City covers were later used in Shimizu Ku which includes Kanbara Town as it was called before the merger!

Dragon last night came up with an idea to finish the last muffin left in the bread basket!
It looks more like an American snack, but it isn’t!

First she grilled the muffin.
She then spread pork soboro (minced pork fried the Japanese way into a kind of caorse powder) over the muffin.
She added some crumbled onsen tamgo (Japanese style boiled eggs seasoned with soy sauce, etc.).
Finally she spread some melty cheese over and grill the lot again!

Great with bee, wine and Japanese sake!

The series is going on!

Cherry Blossoms At Last Blooming in Shizuoka City!

The cherry blossoms are at last beginning to bloom, at least some varieties, in Shizuoka City!

As far I can figure out at least two varieties are blooming, although it could be the same one!

These can be found in the vicinity of Sumpu Castle in Shzuoka City, although the variety grown over the ramparts are different and out yet!

the weather has been and is still pretty bad this month and the blooming is definitely late compared to last year!
It is actually a blessing in disguise as the Shizuoka City Festival will take place next week!
last year the cherry blossoms had disappeared by then!

Walking around the mount you will discover some real old trees on the “city side” of the street!

Incidentally, did you know that all the cherry trees offered by Japan to the United States during the Meiji Era originated from one single tree in Shimizu Ku, Shizuoka City?

Hatsukame Brewery in Okabe, Fujieda City has come up with its own black label!

The unusual name “Ikigakoi” could be translated as “Stylish Enclosure”! Even so it is a bit difficult to understand in another language!
But it certainly makes for a beautiful label!

Alcohol: 15~6 degrees
Dryness: + 4
Acidity: 1.30
Yeast: NO-2
Bottled in March 2014

Clarity: Very clear
Color: Faint golden hue
Aroma: Dry and fruity. Apples
Body: Slightly sirupy
Taste: Strong attack backed up with pleasant alcohol.
Complex and fruity. Apples, honey.
At first almost sweetish and liquorish before ending up on a very dry note.
Disappears fairly quickly with hints of dry honey.
Actually difficult to “catch” as it tends to show new and very elusive facets.
Changes little with food but for a less liquorish impression.

Overall: Another typical sake from Hatsukame Brewery conceived not only to accompany but to happily marry and enhance food.
A sure value to drink on its own or enjoy with any meal. The kind of sake that will make new converts at a BBQ!

Shizuoka Sake Tasting: Suruga Brewery-Hagi No Kura Junmai

Hagi no Kura sake name certainly has a complicated story!
When the present owners of Suruga Brewery were brewing sake in Kakegawa City with the help of Dogatsuru Brewery, they renamed the brewery Dogatsuru-Hagi no Kura Brewery and produced this new name Hagi no Kura.

Since then Suruga Brewery left Kakegawa City and Dogatsuru Brewery to acquire the license of defunct Yoshiya Brewery in Shizuoka City.
On the other hand Dogatsuru Brewery’s license was acquired by Shizuoka Hiraki Brewery in Shizuoka City!

Now, luckily enough Suruga Brewery is still brewing a sake under the name of Hagi no Kura, proving thus a great attachment to culture and history!

Rice milled down to 60%
Alcohol: 15~16 gegrees
Dryness: + 2
Acidity: 1.4
Bottled in February 2014

Clarity: Very clear
Color: Faint golden hue
Aroma: Dry and fruity. Almonds, pineapple, custard
Body: Fluid, slightly sirupy
Taste: Dry and very fruity attacked backed up by puissant junmai petillant.
Very complex. Custard, milk coffee, milk chocolate.
Lingers on only for a little while.
Very easy to drink with a liquorish touch.
Takes on slightly drier turn with food. Otherwise varies very little then but for an appearance of oranges.

Overall: Very easy to drink and enjoyable at all temperatures, with or without food.
Very complex. Tends to show new facets with every cup.
Probably at its best on its own slightly chilled away from food.
Should please ladies in particular!

Japanese Appetizer (O-toushi/お通し): Boiled Shirasu/Sardine Whitings!

O-toushi/お通しis actually a bit difficult to translate.
In a Japanese (in Japan) izakaya it is an appetizer that is served with the first drink and that you pay for in general in lieu of a cover charge.
I have nothing against such a notion as it gives you a good idea of the chef’s skills!

Dragon decided that she could serve her own (free of charge!) O-toushi/お通し at home with our first drink at dinner time!
It promises to be the start of a long series!

This time she served big (comparatively) boiled shirasu/sardine whitings with chopped thin scallions, fresh orange bits, olive oil. She added the finishing touch by sprinkling some golden sesame seeds on top!
Yummy!

I’m just repeating myself, not now but always it is time to have a good look (and buy) seafood and fish at the big supermarket in Parche, Shizuoka JR Station, in Shizuoka City, especially local! And once again I had a good look yesterday as Mondays are especially busy!

The more for it we eat in an environment totally void of smoke! Actually not so many soba restaurants prohibit smoking!

A new type of Tsunami Shelter called “SAFE PLUS” was announced in the Shizuoka Newspaper today!

Tajima Corporation (headquarters in Tokyo) has developped a new type of Tsunami Shelter in its Automobile Research Center in Iwata City.
They are looking forward to to selling a hundred of them in 2014 alone.

The shelter has the following dimensions:
Length: 6.20 meters
Height: 2.30 meters
Width: 2.30 meters
Weight (empty): 3.30 tons

It can house uo to 20 persons.
Using a special ramp it can also rapidly accommodate refugees on wheelchairs.
Its first trial model was tested in April last year.

The price tag is 4,500,000 yen (45,000 US $).

Tajima Motors is mainly targeting companies in dangerous zones!
