Organic and Natural Agriculture with Mentally-impaired Patients at “Workshop Leaf “in Shizuoka City (2)!

Organic green peas!

Shizuoka City is very active with the welfare of mentally and physically impaired children, and consequently adults, because it is the location of one of the only two “Children Hospitals” in Japan.
It is also very much used as research center or “test case” to find ways to make life easier for such patients.
The fact that Shizuoka City has a mild climate all year through was played an important role in choosing and equipping such a location. But children eventually have to leave hospitals and be looked after in special institutions.
One such institution is Workshop Leaf in Kita, Aoi Ku, Shizuoka City.

They came up with the idea of creating a garden under the leadership of young Ryoji Takeda/武田良治さん to grow organic and natural vegetables in 2009.
JAS (Japanese Agricultural Standard/日本農林規格) gave them recognition as an organic agriculture farm in September 2014.

Yesterday was my second visit and I brought along a good friend, Ms. Hiromi Hasegawa/長谷川浩美さん who was very much interested in acquiring their products, especially leaf vegetables and herbs, for her establishment, La Sommeliere in Miyuki-Cho, Aoi Ku, Shizuoka City!!

Hiromi San and I were particularly interested in these fennel heads, very difficult to obtain on the Japanese market!

The whole plant is edible and can be cooked in so many ways!

Of course Ryoji san gave us a lift to visit his small greenhouse at the foot of the local mountains to show Hiromi San where the dried herbs she had also acquired came from!

Hachimangu (八幡宮), Inari Daimyoujin(稲荷大明神) and Hie (日枝神社) Shrines and Mount Fuji-Viewing Park in Hyahata, Shizuoka City!

South of Shizuoka JR Station in Suruga Ku, in Yahata/八幡 (the locals pronounce it “Yaata”!) stands a small mountain called Hyahata San/八幡山 full of history hwere you can discover no less than three different Shinto Shrines and enjoy a splendid view of Mount Fuji!

The rice straw garland/shimenawa/注連縄 around both lion guards has a special meaning as they have stood there for exactly 100 years!

The “smiling” (actually his closed mouth means that he shelters and keeps in the good spirits) is also stadning on a pedestal made of volcanic rocks collected on the slopes of Mount Fuji!

Last night I had the great pleasure to participate to the opening party of a new French Restaurant, Bistro FERME in Shizuoka City, led by one of the most promising young Chefs in Shizuoka Prefecture, namely Hiromitsu Ogasawara/小笠原光洋さん!

Located in the center of Shizuoka City, in Gofuku Cho, you can enter it either through an entrance beside an ubiquitous big chain “coffee shop”,

or through a more discreet door at the back opening onto a street paralell to Gofuku-Cho Street!

In a totally non-smoking atmosphere you can either sit at a wide counter facing the kitchen to enjoy the spectacle of great morsels being prepared in front of your eyes or at large table sitting about 10 guests.
The whole place can sit around 30 visitors, making it prefect for a private party!

The concept is that of a fixed menu for lunch (2,000 yen + TAX) and dinner (4,400 yen + TAX) with ingredients changing constantly. very reasonable when you consider the quality!

Shizuoka Sake Tasting: Eikun Brewery-Eikun Daidai Junmai Ginjo Muroka Nama Genshu (conducted at La Sommeliere in Shizuoka City)

I don’t mind repeating it all the time but I prefer conducting sake tastings in the right environment but not many places are propitious for that exercise or willing to help.
But La Sommeliere in Miyuki Cho, Aoi Ku, Shizuoka City is certainly becoming a habit as not only I can conduct my tasting in the best conditions possible but also exchange views at the same time!

This time we conducted the tasting of a brand new brew by Eikun Brewery in Yui, Shimizu Ku, Shizuoka City:
Eikun Daidai (“orange” for “rnage label”) Junmai (no pure wrice alcohol blended in) Ginjo Muroka (unfiltered) Nama (unpasteurized) Genshu (no pure water blended in)!

Rice: Bizen Ohmachi (Okayama Prefecture)
Rice milled down to 55%
Yeast: Shizuoka HD-101
Alcohol: 17~18 degrees
Dryness: +6
Acidity: 1.6
Bottled in March 2015

Clarity: very clear
Color: faint golden hue
Aroma: dry and fruity. Banana, custard. Hints of pineapple and mango
Body: fluid
Tasting: very dry and fruity attack backed up with strong junmai petillant and pleasant acohol.
Complex. Dark chocolate, chestnuts, cashew nuts, banana.
Lingers for a short while warming up the palate before before departing on notes of dry coffee nuts, dark chocolate and oranges.

Overall: Eminently enjoyable on its own in spite of its strong alcohol.
Would superbly marry with cheese and chocolate in particular.
For all its declared “macho” approach would probably please ladies more.

Sushi Ko is a favorite sushi bar/restaurant of mine in Shizuoka City for many reasons:
The prices are clearly indicated (bear in mind though that the o-toshi/snack will be charged). If you ask for a special order the staff will be glad to prepare according to a pre-agreed budget.
The variety of seafood is unequaled in the City thanks to very very strong links with fishermen and fish markets all over Japan. Moreover, it serves a splendid array of local products seasoned with locally-grown fresh wasabi!
Even vegetarians and vegans can be catered for!

We always start with a plate of sashimi, and I can assure you it is always an embarrassment of choices!

Did you know that Suruga Bay in Shizuoka Prefecture is the richest sea in seafood varieties in japan?

When it comes to sushi nigiri/寿司握り/sushi served atop a rice ball, we always order “Maguro zuke/鮪漬/tuna marinated in soy sauce, mirin, sake and other ingredients beforehand! Almost a dessert!

When it comes to Tachiuo/太刀魚/Scabbard Fish or Spear Fish, another fish abundant in Suruga Bay, you can choose from many ways of preparation: raw, seared, pre-seasoned and so on.
Our favorite is to have it served seared on one side first, then seasoned with momiji oroshi/紅葉下ろし/grated daikon mixed with red chili pepper powder, and a dash of ponzu/ポン酢/a citrus-based sauce lighter and tastier than soy sauce!

When it comes to rolls, we are very fond of another Shizuoka specialty: Anakyuu/穴キュー/a roll made with raw cucumber (“kyuu”) and broiled conger eel (“ana” from “anago/穴子”!) seasoned with tare/垂れ/japanese broiling sauce!

Another roll I always order that should please all vegetarians and vegans: natto-shiso-ume maki/納豆紫蘇梅巻”!
It is made with natto/fermented soy beans, shiso/perilla leaf and ume/pickled Japanese plum!

Some ingredients are best served in “gunkan/軍艦/Mother Ship Style/ atop a rice ball wrapped in dry seaweed/nori/海苔! Shiroebi/白海老/White Shrimps from Toyama Prefecture!

Sushi Ko is great not only for their sushi and sashimi but also for eminently enjoyable cooked food such as this tempura/天婦羅 plate in the above picture!

To bring the last touch to a delicious dinner we have favorites of our own.
Dragon will always order a ikura ko-donburi/イクラ子丼!Ssmall bowl of sushi rice topped with salmon roe nicely decorated with finely sliced cucumber and seasoned with freshly grated wasabi!

As for me, it is a dessert consisting of tamagoyaki/卵焼き/Japanese omelet!

On March 17th was held a special sake tasting at MIRAIE Community Hall in Shichiken Cho under the auspices of Hasegawa Wayoushu Co., a major wine and sake distributor in Shizuoka City, featuring sake made with Homarefuji rice by the seven breweries located in Shizuoka City!

The seventh tasting was a Tenkou Tokubetsu Junmai Homarefuji by Suruga Brewery in Suruga Ku, Shizuoka City!

Rice milled down to 60%
Alcohol: 15~16 degrees
Dryness: +4
Acidity: 1.8
Bottled in February 2015

Clarity: very clear
Color: very faint golden hue
Aroma: Heady and fruity. Custard, lemon
Body: fluid
Taste: dry and fruity attack backed with strong junmai petillant.
Complex. Custard, juniper.
Stays dry all the way through.
Lingers on only for a little while before departing on notes of greens, vegetables and dry oranges.

Overall: Straightforward and uncomplicated.
Definitely conceived to be enjoyed with food.
Would particularly do well with grilled red meat or any meat dishes!

Dryness: -5
Bottled in February 2015

Clarity: very clear
Color: very faint golden hue
Aroma: light, dry. faint banana and melon, flowers
Body: fluid, a little sirupy
Taste: dry and very fruity attack backed with moderate junmai petillant.
Complex: pears, marshmallow, lemon.
Lingers only for a while warming up back of the palate before departing with notes of dry nuts and walnuts.
Faint oranges appearing later.
Really melts on the tongue.

Overall: Elegant and very satisfying.
Drier than expected in spite of its “-5” dryness announced because of its very fruity approach.
Should please all genders!
Would beautifully pair with chocolate!

Taste: Almost sweetish and fruity attack. Creamy. Very moderate junmai petillant.
Complex. Citruses, lime, lemon, faint melon.
Late appearance of pears and apples.
Lingers only for a while before departing with hints of coffee beans.
Revealing different facets with every sip.

Overall: Very enjoyable on its own but would definitely emphasize food.
Would happily pair with egg dishes!

Overall: very dry but elegant sake. Eminently drinkable.
Very complex, intriguing and enjoyable.
Would par beautifully with tempura, BBQ and tonkatsu!

Just tasted a new version of Aoi Brewing’s Pale Ale at AOI BEER STAND in Shizuoka City!

It is a new version of their Pale Ale although they didn’t come with a new name!
The ingredients are the same, but more skills have been used into its brewing!

barley, Maris Otter malt, Crystal malt, Australian galaxy hop, Kent Holding hop
Unfiltered
Alcohol: 5.6%
Bubbles: very fine bubbles. Long head. Creamy. White
Clarity: Slightly smoky (normal considering live yeast and being unfiltered), very clean
Color: Deep persimmon color
Aroma: Fresh and dry. Bread
Taste: Refreshing, dry and very fruity attack.
Complex with a great balance between acidity and fruitiness.
Citruses, bread.
Acidity and umami tending to compete in turns for recognition with fruitiness.
Otherwise stays true to first impressions all the way through.
Lingers long enough in palate for true tasting before departing on an even drier note with nuts.

Overall: very impressive improvement on an already top-class craft beer!
Very complex with dryness, fruitiness and umami constantly fighting for supremacy.

The “drinking scene” in Shizuoka City has been changing pretty quickly recently and an area worth a second and third look is a new alley tucked on the first floor of a building called Imakoko in Shichiken Cho Aoi Ku) in the a street just parallel to Showa Street.

Among the bars, restaurants and izakaya you will discover a quaint place with an even stranger name, “13 Anchorz”!

The young owner, Kyoken Sugiyama/杉山陽平さん, after a stint in the Japanese Self Defense Army did spend quite some time in Ireland before deciding to open his impossible to classify establishment as it is a combination of a bar and izakaya!

Strong points: 34 coffees and teas, craft beers, light food and bagels

Hug Coffee Company in Shizuoka City has three cafes/shops/bars in town, all different in style and concept.
They are increasingly becoming popular with all genders and ages for their convenience.
My favorite is the one called Hug Coffee Espresso Rosters (also called “sangouten”, meaning “3rd shop”!) between Cenova Department Store 109 Building for many reasons.

It reminds me of my psychedelic years and the staff is cool and sometimes outright zany.
Actually the Lady In Charge, Miyako Suzuki/鈴木京さん is a god friend of mine.
First of all smokers are kindly asked to pry their trade far away for the shop!

All drinks are made on site to satisfy all cravings!

But the main attraction is their beers including no less than 9 brews by Baird Beer, the most famous craft beer Company in Shizuoka prefecture!

They even serve a very limited (hurry, as it is only seasonal, although they plan to serve it every year!) Morning Coffee Stout made in collaboration with Bryan Baird and their own coffee!
