Italian Gastronomy: Winter-Spring Dinner at Soloio in Shizuoka City!

Service: Shy but so attentive!
Equipment & facilities: spotless clean. Superb washroom. Entirely non smoking.
Prices: reasonable to slightly expensive
Strong points: authentic Milanese cuisine with fresh products. Very inventive. Greta wines.

i don’t have to introduce Soloio again, arguably the best Italian restaurant in Shizuoka Prefecture!
So, what did we have?
As above picture, beef carpaccio! the beef comes from Okamura arm in Fujinomiya City!

Japanese wild boar terrine and home pickled vegetables!

Mushroom salad with mushrooms cultivated by Hasegawa Farm in Fuji City!

Sole/flatfish fritters!

Octopus and potato salad!

Very, very unusual Cacao tagliatelle!

Soloio’s specialty: black truffles risotto!

Ice cream and expresso!

Italian Trattoria Lunch at Terra Costa in Shizuoka City!

Service: kind, smiling attentive
Equipment and facilities: very clean overall. Excellent separate gender wwashroom. Car park
Prices: very reasonable
Strong points:
fine Italian style trattoria. Excellent local products. Large portions.

I must admit it was a surprise to find this uncomplicated, modest and above average Italian trattoria along the sea shore in South Shizuoka away from the crowds and even surprised to find it crowded!
If you go there for lunch make a point to reserve your seats (actually you will be offered a plate of fried potatoes for the effort! good hospitality!)!

They do have a long enough menu but before you check the other menu know that the best deal is to choose a “set menu” as in above picture!
If you are two, three of more you will be able to choose all different dishes to share together!
The three of us opted for the 1,630 yen (tax included) menu with an original ice tea, a starters plate and a choice of pizza, pasta and risotto each! Plus a choice of desserts and coffee!
Very reasonable when you consider the size of the portions!

Incidentally there is also an enormous set lunch for two at 3,700 ye, tax included for two persons!

Now, what did we share?

The plate of starters/antipasti misto!
This was the main reason we ended up with full stomachs at the end! Well above average and excellent fresh produce!

Quatro formaggio/four cheese pizza!

Crab tomato sauce spaghetti!

Porcini mushrooms cream risotto!

Chocolate cake, tiramisu and creme brulee for dessert!
And coffee to wash it down.
Pity we were driving, otherwise a glass of wine would have been welcome! LOL

Italian Gastronomy: Dinner at Il Dritto in Shimada city!

Service: Kind, attentive and very informative
Equipment and facilities: Overall spotless clean. Superb washroom
Prices: Reasonable
Strong points: inventive modern Italian cuisine making use of many local products. Interesting and reasonable Italian wine list including wines from Kumamaoto Prefecture!
Doubles up a gastronomic bar in the evening!

Succulent and elegant Italian cheese amuse!

I have always thought that Shimada City deserved better when it came to food. They are already blessed with some of the best sake in Japan and when it comes o Japanese gastronomy they are blessed with a couple of very good restaurants/izakaya. But when it came to Western cuisine they definitely missed higher class Italian Restaurant.
Now, they have it with the arrival of Il Dritto a few months ago!

Check he specials of the day!

It is not only a restaurant but also a wine bar (with food if desired) at a small counter until last orders at 22:00!
Otherwise it does not sit so many guests,and I recommend to reserve in advance unless you want to try your luck at opening time at 18:00. As for the week ends it is definitely crowded!
This was our first visit so I don’t know what happens at lunch time on week ends but you expect crowds and single set menus!

As for the evenings it is real fun reading and choosing from the menu board!
Do take your time! You will discover a very interesting fusion of Japanese and Italian cuisine definitely served in the Italian fashion, I would say high fashion!


I know some Italian friends who would be very intrigued and tempted by the “Aburi Ankimo/Hal grilled monkfish liver”
A real fusion creation using ankimo/monkfish liver first steamed the japanese way and then slghtly grilled served an Italian-concept fish sauce! Very, very unusual which the the creative talent of young owner chef Daisuke Hirabayashi

Of course the herb bread is exclusively home-baked!

Aburi/haf grilled Sanma/Pacific saury wits liver sauce and fine vegetables!

Another fine marriage of Japanese and Italian cuisine!
Pacific saury is a Japanese fish par excellence and again my Italian friends are in for another surprise!

Kumamomoto Prefecture Horsemeat Carpaccio!
As a frenchman I just couldn’t ignore that morsel! Mind you, my Italian friends will have a pleasure to dispute that!
Smiling Owner Sommelier Megumi Hirabayashi shy (Daisuke’s wife) actually hails from Kumamoto Prefecture and you can expect some rare wines from her own Prefecture!


Talking of wines we had this reasonably-priced and very fine Valpolicella!

We had a bit of a fight to choose either pasta or risotto for our visit, but I lost the jankenpon/stone paper scissors and we opted for this beautiful seafood pescatore linguine with prawns, squid, scallops and cockles!
Don’t have to mention the little ensuing fight! LOL

Consequently I was “allowed” to choose one of my favorites for the next dish: Roasted duck breast with red wine sauce and fine vegetables! A dish that has made the French and Italian friends forever! LOL

It was time for dessert, then? Then, what did I choose to satisfy my male chauvinistic preference?

Who said the Italian are limited when it come to dessert? So sweet! corny comment, sorry!)

My only regret? I could sample all the dishes!
But I will have my revenge soon!

Italian Cuisine: Dinner at Gentile in Shizuoka City!

We finally found the opportunity to visit Chef/owner Masaru Aoki’s new Italian Restaurant, Gentile, in Shizuoka City!

It is located where another Italian restaurant stood in the vicinity of Isetan whose owner suddenly had to go back to Tokyo for family reasons.

You had better reserve as this place can become very busy, especially at lunch time!
For dinner you can choose between set courses or individual dishes a la carte, or just come for a drink!

It has completely refurbished along a triple concept.
First a standing bar for customers only willing to partake of wine or spirits.

A counter with chairs for guests who come alone or wish to share a word with the chef and his sommelier.

As for white wine (after a glass of Italian sparkling wine) we first ordered a bottle of Il Civettaio, Vermentino!

An unfiltered biological white wine with a beautiful color, splendid aroma and superb balance!

To accompany the sparkling wine we were offered a light salad made of finely cut local vegetables and wheat!

The first dish consisted of seared saury pike and sauteed horse mackerel from Suruga Bay and local marinated vegetables!

Extravagant aged Parma ham and raw mushrooms grown in Shizuoka Prefecture!

A dish difficult to find even in Tokyo: Sauteed black bass with renkon/lotus root from Asabata District in Shizuoka City!

A nectar with an unusual name, Banshee! Created with Sangiovese grapes grown in Maremma, Toscana!

Asparagus Gastronomy in Shizuoka City!

French white asparaguses with Italian Summer Truffles at Solio!

Asparaguses have been a favorite at Japanese, French and Italian Restaurants in Japan and Shizuoka for such a long time that we tend to forget that they came late in this country in spite of Japan being the 3rd largest importer of the vegetable after the United States and the European Union. They were first used as ornamental plants in the 1800’s. The first cannery appeared in Hokkaido in 1920. The Japanese developed a taste for green asparagus and consumption of the latter exceeded tahat of white asparaguses in 1978. Now, Japan produces a lot of its own white and green asparaguses to the tune of 24,000 tons in 1998!
Restaurants in Shizuoka City have the choice to use green or white asparaguses grown locally or white asparaguses imported mainly from France and Italy in spite of China being the biggest exporter in the world.

Here a only a few examples of what to expect in Shizuoka City alone! If I find more I7ll make sure to add them to this article!

TETSUYA SUGIMOTO (French Restaurant)

I was served these white asparaguses from Hokkaido as an appetizer by Chef Tetsuya Sugimoto/杉本哲也さん in his typically artistic but so simple-looking manner!

Boiled to perfection and served with a light sauce made with Shizuoka-bred pheasant bouillon and Japanese (yes, you read it well!) fermented butter!

Yesterday was one of those very rare Sunday evening when we go out together to enjoy a repast on that particular day of the week.
Although this is the second time we visited Solio in less than 2 weeks this had been planned for some time.
Now, we had the occasion to enjoy two cute little desserts I have the pleasure to introduce here.
Note that good Italian restaurants in Japan come up with far more simple and sophisticated desserts than in Italy!

Adding seasonal fruit contributes so much to elegance, colors and taste!

This Royal Milk Tea is both rich and light as the Japanese do not add as much sugar as we Europeans.
The result is a light and sophisticated panacotta that leaves such a nice fianl not after a rich dinner!

I have already introduced Solio, one of the very top references in Itlian Gastronomy in the whole Shizuoka Prefecture therefore let me talk immediately about we had during our last and very quick visit!

We noticed in the glassed display this locally-grown enormous David Cross okra with such a beautiful pattern!
We couldn’t help and ask for another simple but so elegant appetizer!

Shizuoka Prefecture is rapidly becoming famous for its pork and there must be more than 12 different varieties in our Prefecture alone. This particular pork is called “mugiton/From pigs fed with grain” and is raised in the Western part of Shizuoka!

Shizuoka has certainly contributed to the letters of nobility attached to such a seemingly common meat!

I’ve already said and still claim that Chef Takehiko Katoh/加藤武彦makes the best risotto in town!
This time we just could not resist the Italian summer truffles risotto!
Simply extravagant (but so reasonably-priced!)!

Instead of dessert we had to utter pleasure to sample a new creation by Sommelier Mieko Osawa/小澤三江子: home-made limonicello liqueur!

The other evening, after another long day of shopping, the Missus and I were not in a hurry to go back home and start cooking!
We decided to visit Solio to sample their Autumn menu, mostly made with Shizuoka Prefecture local products!

To cut a long story short, what de we order?

Antimisto Pasti!

Pork roulade with mushrooms marinade!
Note that all vegetables, raw or cooked are from Shizuoka Prefecture, most of them organic!

Very soft!

There are days and nights when Solio Restaurant is so practical as it opens as early as 16:00 and as late as 24:00!
But it is could also be said it is a venture fraught with dangers, what with the constant temptation to drink and dine late! LOL

Solio always has an array of appetizers/antipasti ready to be chosen from, a boon for hungry and busy people!
We had this little delicious asparagus and shrimps salad!
It was with the beer we had first after a long day of shopping!

Apart of the regular printed menu and specialties of the day written on the overhead blackboard make sure to have a look at the small seasonal menu included on a loose sheet inside the menu!
There are discoveries to be made as the above white shrimps from Toyama Prefecture served deep-fried!

We had to have one of the two risottos of the day (I wished we had both!)!
Spring cabbage (very tender and sweet) and cockles risotto cooked in the cockles soup/juices!

It was a fight as whether to have pasta or dessert!
This fight resolved it was a second struggle as to which pasta we would order!

Italian Gastronomy: Spring “Tidbits” at Soloio in Shizuoka City, Japan!

Whenever I discover a new risotto concocted by Chef Takehiko Katoh/加藤武彦, who unofficially make the best in Shizuoka Prefecture, it seems to reminds me of Charles at Five Euro Food.. It might be time to challenge him to create a risotto for 5 euros!

I’ve already introduced Solio in Shizuoka many a time, but I go there regularly for a glass of wine and a single dish in between work I’ll just proceed directly to introduce the “tidbits” I recently enjoyed!

This salad was prepared with enormous lucolla/roquette leaves organically grown by one of the Chef’s neighbors!
In Shizuoka there is very little in using imported or mass-produced vegetables!

Beautiful lucolla leaves! Enormous, crispy and so delicious with a minimal dressing. Health in heaven!

The orange tomatoes are also grown in Shizuoka City!

Solio’s risottos are mostly seasonal.
The other day I asked if Chef Takehiko Katoh/加藤武彦 had any secrets for his famous recipes.
He simply enough replied:
“Any good chef can come up with truly great risottos if he uses good and fresh products. The only difference is the stock/stock soup!”
Great answer, but I will never know his secret stock!
Now, what was the above risotto made with?

Shizuoka-grown Na no Hana/Broccolini and Hokkaido “Kegani/毛蟹/Horsehair crab, Horse crab, supposedly the best crab in Japan!
Extravagant!

Now, how about this creamy one I had last night?

Sora mame/蚕豆/Broad beans and Talegio Cheese!

Takehiko asked me to try and come when the restaurant is not too busy as I tend to request dishes that are written on the official menu…

Italian Gastronomy: Late Night Escapade at Soloio in Shizuoka City!

Service: Pro and very friendly
Equipment & Facilities: Great overall cleanliness and superb washroom
Prices: Reasonable
Strong points: Fresh local ingredients whenever possible. Both traditional and inventive Italian cuisine. Good wine list at moderate prices. Open late!

The other day, after an “official function” with chefs, producers and journalists the Missus and I still felt somewhat unsatisfied and at 10:00 p.m. were looking for a decent place before returning home.
This was a bit of a no-winner as the Missus’ radar was already fixed on Italian food and she knew too well that at that time of the night the options were pretty reduced. It was only natural (I still suspect my “worst half” to have it planned all the time!) that we ended up in Soloio, one of the very best Italian restaurants in town, and definitely the best at this time of the night!
Alright, what did we have/savor?

A plate of all vegetable antipasto!
Most of the vegetables are locally grown, naturally!

We discovered the above on the day’s specials: Scampi al Form!

Just beautiful and succulent!

Pan-fried seabream/”madai” from Suruga Bay!

Soloio is fast becoming famous for their great care when it comes to choosing and preparing vegetables!
Vegetarians are welcome there!

The skin of the fish was fired to a perfect crisp. I’m not that fond of fish skin, but I would go for that any time!

Then we noticed something interesting at the bottom of the overhead board! Mind you, you need some reading knowledge!

Wagyu Beef rump Tagliata!

Nothing less than an extravagant variety of carpaccio!

By then the escapade was turning into a full meal!
Finally it was down to a fight between having pasta or risotto. The latter won by a whisker!

Risotto made with the last Piemonte truffles in store!
We’ll have to wait until next year for another one!

We needed something sweet to finish!

Strong expresso coffee poured over vanilla ice-cream!

Kitayama Organic Farm: Great Chefs meet Great Farmers in Fujinomiya City!

Fuminori Nishitani/藤谷文紀 of Nori in Fujieda City, Tooru Arima/有馬亨 of Pissenlit in Shizuoka City and the Hirakakis, Masaaki and Kiko/平垣正明・紀子 at Kitayama Organic Farm/北山農園 in Fujinomiya City!

Today I finally had the honor and pleasure to introduce two of the very top chefs in Shizuoka Prefecture, namely Fuminori Nishitani/藤谷文紀 of Nori in Fujieda City and Tooru Arima/有馬亨 of Pissenlit in Shizuoka City to the Hirakakis, Masaaki and Kiko/正明・紀子, owners and producers at Kitayama Organic Farm/北山農園 in Fujinomiya City!
This had been long in the offing and the three of us decided to drive this Tuesday all the way from Shizuoka City to Fujinomiya City at the very foot of Mount Fuji to visit the Organic Farm of the Kitayamas not only for a formal meeting but also to establish a gastronomic event to take place in the very near future!

The Hirakakis have refurbished this ancient farmhouse on their own!
Both were professional photographers before deciding to venture in organic farming!

Pure water gushing down the slopes of Mount Fuji is one reason why Fujinomiya City is so celebrated for its superlative agriculture!

Having gone through the necessary introductions I made myself scarce after a while to let them discuss their plans.
The two chefs had struck on the idea of a collaboration dinner at Restaurant Pissenlit on the 10th of March based on the vegetables grown by the Kitayamas whose merits I had praised for some time.

Time had finally come to make a grand tour of the 3 ha where the Kitayamas grow more than 190 varieties of organic vegetables at different times of the year!
