Gastronomic Destinations: Kanazawa City 2: Itaru (Honten) Izakaya!

SN3O5095

Sashimi plate, all local fish!

Service: Friendly and very attentive
Facilities and equipment: Very clean overall. Excellent washroom
Prices: Reasonable (considering the quality)
Strong points: Local fish, sashimi or cooked, crab and seafood, local vegetables. Great sake list!

SN3O5108

In Kanazawa City winter means early and cold nights.
People tend to go earlier to their favorite haunts and it is always a good idea to reserve as good or popular establishments are full by 6:00 p.m.!

SN3O5109

For our first night we chose to visit Itaru (Honten, there is another one)!
We came early enough and were lucky actually to get the best seat at the corner of the counter with a full view of the kitchen!

SN3O5094

In such a cold part of Japan, entrances are deceptively narrow to keep the cold out, but once inside you usually find yourself with plenty of space!
But it is still cold for some and knee blankets are available!

SN3O5093

Such a spot by the counter does not seem that popular there and we were really glad to grab it, which allowed us not only to watch the chefs at work but to share a chat with them!

SN3O5092Of course I ordered local sake!

In Kamazawa City, izakayas are proud of their heritage and always have plenty of local sake on their menu!
The above was Tengu no Mai!

SN3O5106

O-shino/home-made pickles!
Kanazawa is also famous for its countryside providing a wealth of vegetables!

SN3O5095

Local seafood for our sashimi plate:
Octopus, tuna, sweet shrimps, yellow tail and seaweed marinated seabream!
Interestingly enough the freshly grated wasabi is made with roots from Izu peninsula!

SN3O5097

from another angle!

SN3O5100

A local grilled fish: Nodokuro/Black throat!

SN3O5099

Expensive, even in Kanazawa!

SN3O5101

Another local specialty: Lotus root chawanmushi!

SN3O5102

Another local sake. Sorry, I forgot to note down the name!

SN3O5104

Another local specialty: hako crab sushi donburi!

SN3O5105

And to finish pork and vegetable stew!

SN3O5107

tasty, comforting and healthy!

French Gastronomy: Boudin Noir (Blood Sausage) at Caravin in Shizuoka City!

SN3O5295

Service: very friendly if a bit shy.
Facilities and equipment: overall very clean. Beautiful washroom.
Prices: Reasonable
Strong points: Authentic French and European bistro gastronomy. Slow food. Excellent and reasonable wine list.

SN3O5293

For a long time Chef Onoda at Caravin Restaurant in Aoi Ku, Shizuoka City had promised to challenge boudin noir or blood (pork) sausage!

SN3O5294

Back in France it is delicacy you can buy anywhere to eat back at home, but in Japan it is still very much a rarity, especially home-made!

SN3O5295

A truly magnificent if somewhat of modest origins with all the extras needed!

SN3O5296

Served with an unctuous mashed potato puree I will the pleasure to mix with the boudin later!

SN3O5297

Caramelized apples are a must for a perfect balance!

SN3O5298

Naturally with some leaf vegetables for a healthy dish!

SN3O5299

It is always such a pleasure to cut the thin skin and mix the soft insides with the mashed potatoes!

Gastronomic Destinations: Kanazawa City 1-Mori Mori Sushi!

SN3O5036

Service: Easy-going and friendly
Facilities and Equipment: Overall very clean. Very clean wasroom
Prices: Reasonable
Strong points: Very good value for many local fish and seafood! Better than average conveyor belt sushi! Entirely non-smoking!

SN3O5026

Usually I’m not so keen on kaiten sushi/回転すし/Conveyor belt sushi, but when you happen to enjoy food in a Prefecture and City famed for their fish and seaood I’m willing to make a concession, with a few conditions attached that is!

SN3O5052

Mori Mori Sushi is a big sushi restaurant chain in Japan, with no less than 15 establishments allowing them to make extensive use of computerized service.

SN3O5029

It is a busy place, but you do not have to sit elbow to elbow with other customers as the “belts” also run along the booth-style table seatings!

SN3O5027

The table we were offered was the epitome of sushi high tech!

SN3O5031

You can choose your morsels in two different manners:
via the computer digital screen or by picking plates running along on belts!

SN3O5043

Now I must admit that this system should appeal to non-Japanese speaking tourists as you can switch to English, Korean, Chinese and Mandarin (Taiwan) Chinese!

SN3O5028

The lid covered plates running along is a show by itself!

SN3O5047

Plenty of simple instructions:
Smoking prohibited!
Do not ride the belts (that’s for silly kids!)!
Mind your sleeves!
Do not return a plate onto the belt!

SN3O5048

You are free to collect leftovers to take back home! (no waste!)
Pay your bill to the staff at your table (no need to search for the register. You can pay by card at your table!)!
Refrain from drinking alcohol if you are driving!
No pets allowed!
Do not block large trays on the belt (such large trays are private oreders, anyway!)!

SN3O5032

The belt move slowly enough for you to look and pick up an individual plate!

SN3O5030

Yummy!

SN3O5039

These trays on the train are private orders that will be delivered at only one table. Don’t try to block it!

SN3O5033

Don’t worry, there are plenty of cartes on hands for the analogs like me to have a good look at the offereings!

SN3O5035

have a good look at the sets, too!

SN3O5034

Gunkans/ships and Rolls!

SN3O5038

There is also a special additional daily menu! You might need some help there!

SN3O5036

Our first set, all different shrimps!

SN3O5037

Our second set!

SN3O5040

We had just disembarked from a 4-hour train trip and were very hungry at this first lunch so we ordered some extra!
“Gasuebi sshrimps”!

SN3O5041

Sea urchin and salmon roe!

SN3O5042

Shiroebi shrimps”!

SN3O5044

Scallops!

SN3O5045

Natto and cuttle fish/squid!

SN3O5046

Negitoro and quail eggs!

SN3O5049

Our last order came by train!

SN3O5050

Tamagoyaki nigiri!

SN3O5051

When you call for your bills the staff will pass a computer reader along them and voila, your bill will be ready!
Note that the plates are of different colors indicating a pre-ordained price including drinks. So do not worry if you are served empty colored plates with your drinks!
Tea is free and you can mix it and serve it yourself thanks to a hot water tap at your table!

Café Hanya (般若) in Shimizu Ku, Shizuoka City!

Service: Very friendly and quiet
Facilities: Great overall cleanliness and beautiful gender-separated toilets
Prices: Very reasonable
Strong points: Traditional Coffee shop. Very reasonable “home food”. Very quiet. A rare non-smoking coffee house!
English and French fluently spoken by the owner!

In an era crowded with chain shops of dubious taste and hygiene it is so refreshing to discover a new coffee shop who offers a relaxing calm atmosphere, allows you to stay as long as you want, serves very reasonably-priced meals and spares you from any smoke in a quiet environment only a few minutes walk from the bustle of town and civilization!

just drop off the Tokaido Line at Kusanagi Station, take the first street on the street on the left until you reach a small river and turn right. There you will discover the coffee shop sign!

No, this is not a demon, but a protection against evil spirits!

The place used to be a very busy cramming school until the Yokoyamas retired last year and decided to transform it into a quiet and homely coffee house.

They also double up as a tiny gallery for local artists.

The tables and chairs are all different either by walls or large windows.
Just choose your little corner!

There are tables for groups of 4, couples and individuals.

Beautiful noren/entrance curtain opening onto the washroom!

Plenty of reading material as you may stay as long as you want!

Drapes help diffuse the light!

Hanya Noh Theater mask!
Hanya is a character found in the Noh Theater lore!

A lot of customers will be tempted to take the table paper cloth away!

Cute goblin!

A personal toothpick is provided with the chopsticks!

At lunch take a good look at the different set menu as they tend to come up with something different very quickly according to the mood and season!
On that day there were two new sets offered. The picture above shows a baked cheese curry!

I chose the other new set: open hamburger steak lunch!

You can’t beat a fresh homely lunch!

All lunches come with coffee or tea and a dessert!
How much did I pay for that? A mere 800 yen!

For people who just wish for a drink and dessert set I would recommend hot green tea (this is Shizuoka after all!) and home-made cake set!

Such a pleasant way to serve green tea!

To be continued…

Japanese Gastronomy: New Year’s Lunch at Setsugekka Soba Restaurant!

Yuzu/Lime and Jyuwari Soba!

Service: Very friendly and attentive
Facilities: Great overall cleanliness. Beautiful washroom
Prices: reasonable
Strong points: High quality soba. Beautiful tempura. Great local sake

It is a tradition in Japan to eat soba on the New Year and the Missus and I do not hesitate to spend some time in the train to savor them at our favorite soba restaurant, Setsugekka in Shimada City!

Next to the Restaurant is the great site of Oomuraya Sake Brewery (with the brewmaster standing outside as we arrived!). No wonder the sake served at Setsugekka are superlative!

If it’s available, make sure to take the small room overlooking the street!

A nice little corner away from the crowd!

But the whole place is so pleasant and comfortable!

The kitchen!

A nice little snack coming with the first drink: Soba tofu coated with kinako!

Very Japanese!

Another snack: deep-fried soba!

The soba tray is set on the table before the first tempura is served!

But first, the appetizers!

Miso yaki! Miso paste mixed with whole soba seeds cooked under the grill.

Plain juwari/100% buckwheat noodles in cold water to allow you to appreciate their true original taste!

Buckwheat/soba tofu served in soy sauce with grated yamaimo, whole grilled buckwheat seeds and grated wasabi!

Shimonita/下仁田 leek tempura with katsuobushi!

Bamboo shoot, carrot and taro tempura!

Shrimp and lily bulb kakiage tempura!

Next, the soba! All seiro style!

I had two types of soba, while the Missus had three: first elegant yuzu/lime jyuwari soba!

Plain thick jyuwari soba!
Note the well-used vessels!

Plain thin jyuwari soba!

And the desserts!

A rare buckwheat ice-cream!

I still haven’t visited the place at dinner! Next article?

Non-Smoking & Partially non-Smoking Restaurants List in Shizuoka Prefecture (updated/June 2011)

I agree that this particular article has been long overdue.
Not only my expats friends, but many Japanese friends have been at pains at finding restaurants, bars and cafes where they wouldn’t have to put up with the hazards and stink of smoke inhaled and expelled by uncaring customers.

This is of course not an exhaustive list, but it will be regularly updated as I visit establishments for work!

One more important point: Non-smoking is not the only criterion, good food is, too!

French Cuisine: Veal and Macha Creme Brulee at Pissenlit!

Time to visit one the very best French restaurants in Shizuoka Prefecture: Pissenlit!
In this particular case I just barged in on Sunday for lunch and looked at the specialties of the day board!

For once I couldn’t drink alcohol and opted for Chef Arima’s delicious ginger ale made with real ginger roots!

To help me wait for my order (after all, all good food is slow food!) I was offered rillettes made with wild boar hunted in Noda, Shimada City! I could have ordered it!LOL

The appetizer was a delicious salad of udo and bamboo shoots. They had been lightly steamed/boiled before being served with a succulent vinaigrette. Udo/Aralia Cordata is a kind of sansai/山菜/Wild mountain vegetables. This particular one was found up Abe River in Shizuoka City. The bamboo is also grown in Shizuoka Prefecture.

A vegetarian delight!

And now for the main dish: veal!
Veal is not easy to find bred in Japan and even more difficult bred in Shizuoka Prefecture!
This extravagant meat comes from a one-month old 120 kg calf bred in natural environment with its herd.
Chef Arima shared half it with Matsuki Bio Farm’s Restaurant in Fujinomiya City where the calf hed been raised.

The veal was pan-fried/oven-roasted before being seasoned with a beautifully soft Dijon mustard seed sauce. The perfect marriage!

It was presented atop an extraordinary pancake made with potatoes/seri (セリ/Chinese celery or Japanese parsley) and cheese! I garantee you that pancake alone is worth ordering!

As usual the vegetables were all organic from Hirokawa Garden in Mishima City!

I never tire of looking at (and tasting) them!

Always cooked to perfection for maximum enjoynment of their true savors and tastes!

The veal is a beautiful pink with juices oozing instead of the unhealthy dry white samples imported to this country!

And now a real Shizuoka dessert: matcha creme brulee!

Shizuoka-grown Benihoppe/Red Cheeks strawberries!

It is just a pleasure to crack the caramel open and to delve into the cream below!

And the more you delve, the more matcha!

To be continued…

Service: excellent and very friendly
Facilities: great washroom, great cleanliness overall
Prices: reasonable, good value.
Strong points: Interesting wine list. Great use of local products.

(from top middle, clockwise: Salted Cuttle fish marinated in tea leaves and rice yeast, Conger eel pike and urchin in green tea jellied fish broth, Tea leaves walnut tofu curd, Tuna simmered in green tea with tea leaves dumpling cake, Matutake mushroom cooked in tea leaves)

On Thursday, November 1st was held a Tea Dinner Party at Fugetsuro Restaurant, Shizuoka City, as part of the events organized for the World Tea Festival.
Apart of the usual personalities, that food was the main interest.
“Tea for food” was the them a opposed to “tea as drink”.
fugetsuro-1.jpg
Mr. Hitoshi Yamada, Master Chef at Fugetsuro was asked to design a dinner for some 120 guests including tea in all dishes.

Including the first dish described above, the menu ran as follows (I let you judge!)
fugetsuro-3.jpg
(Raw fish assortment: Tuna, seabream, sole, seasoned with fresh tea, edible flowers, salt and soy sauce)

fugetsuro-4.jpg
(Surugani: tea sob/buckwheat noodles, seabream cooked in whole rice, “kouyou” carrot, tea leaves)
