Organic Tea First Harvest with Marufuku Tea Factory!

This year’s green tea in Shizuoka, although of high quality, grew very slowly due to an unusually cold winter and spring, but I finally had the pleasure to experience my first ichiban (first of the year) green tea picking!

We drove all the way along off the beaten tracks thoroughfares just wide enough for a mini car up to an altitude of 8oo meters in Hirano along the Abe River and not far from the famous wasabi fields of Utogi.

Some tea fields can be found on steeper slopes, but this was already pretty steep!

Mr. Bunji Itoh has been growing exclusively organic green tea on these particular slopes for some time and plans to expand these fields. You know that no chemicals are used when you discover the luxuriant moss on the path!

The first leaves were just long enough to be picked!

These are the most valuable tea leaves of the year!

When you pick them by hand you twist off the stems just under the second leaf. If it does not snap between your thumb and index, cut the stem just under the first leaves!

This was my personal harvest in my hip tea basket with some wild mountain vegetables found around the rows!

These leaves are exceptionally delicious as tempura (Pissenlit Restaurant in Shizuoka City!)!

While I was picking some of the best leaves by hand Mr. Itoh’s employees were “shaving” the rows with curved cutting machines like this one. That is the reason behind the peculiar shape of Japanese tea tree rows!

You have to work in teams of three as one has to hold the bag for the leaves being cut by the other two holding the cutter walking between the rows!

Tea trees rows have to be “shaved” in two steps, along the left and then back along the right!

They let me help with (only) one row. Not easy work as you have to walk backwards. I didn’t too badly as they let me do it until the end of the (long) row!

On the way back Mr. Itoh showed me the house of Oomura Family which has been growing tea there since the Edo Era!

They have grown green tea in this same spot for hundreds of years!

Finding ourselves brought back in time!

The whole (privately-owned) property has been registered as Cultural Asset!

Mr. Itoh finally took me to a local tea-processing factory he is contracted with to show me how these organic leaves are treated, not so much as for tea, but as edible organic tea leaves.
The fresh leaves are first steamed.

They are then dried.

And next they will be frozen to be sold to restaurants!

Mr. Itoh also has a field of organic of Japanese plum trees. I will go there soon to pick ume/plums to make umeshu!

2nd Great Shizuoka Local Food Meet by Nagashima Liquor Shop!

Shizen No Chikara Organic Farm was participating!

A great consciousness of the merits, both gastronomic and healthy, of locally produced foods, drinks and processed foods has developed into a veritable revolution in Shizuoka Prefecture.
Uncountable events are organized and eagerly participated to all over the Prefecture, and one such event of note is the “Chisan Chishou.Shindofuji-Umai Mon Kai
./地産地消.身土不二・旨いもん会/ Locally produced and Consumed. Good Food Slogan and Association organized on May 29th by Nagashima Liquor Shop (Shizuoka City) at Fugetsuro/浮月楼, the former last residence of the Tokugawa Shogun Family.
Shindofuji/身土不二 was a slogan created in 1907 to exhort citizens to produce and eat local food!

Nagashima Liquor Shop was also contributing part of the fees paid by guests to help the victims of the recent terrible earthquake and tsunami in the north east of Japan!

As usual I came a bit early to check the preparations and take pictures of all participants before the guests would be in the way!

Well, after that I was very busy for the next two hours tasting, eating, chatting and introducing many friends to each other.

At the end of the party Nagashima Liquor Shop and Kasai Izakaya expressed their sincere thanks to all the guests for a very successful party again!
More of the same is planned in the very near future, I can tell you!
Anyway this will lead to many interviews in the near future!

Yesterday a party for 23 happy guests was organized by Shizen no Chikara Garden (“The Power of Nature”) at Aquavite with the help of Chef Masaru Aoki/青木勝!

A printed menu had been prepared for everyone for easy comprehension (if you asked for the translation in Italian, anyone would have understood! LOL)

I usually make a point to come a bit early at such parties “to take the temperature”!
The place was used to full capacity on that day!

The preparations started as early as the day before!
Incidentally I was sitting at the middle of the counter away from the crowd!

French Cuisine: Harmony in Iwata City

Service: easy-going and friendly

Do not be misled by the somewhat passé look of this Restaurant and Souvenir Shop along a busy thoroughfare and its interior of a past gone.

The decor might be out of date but the food is alive and worth regular visits!

The sign is not easy to miss in any case!

A retro look?
Maybe, but Chef Hiroyuki Adachi is on a mission: he has devoted his life and craft to the local producers, breeders and fishermen and endeavored to make them known to all through his exclusively seasonal menus he offers his guests whoever they are!

Each month witnesses a different lunch course titled according to the flavor or ingredient of the season/month!

Mr. Adachi has little problem finding his ingredients, surrounded as he is by arguably the richest garden in Japan in Iwata City!

A quick walk in the vicinity after lunch (before the next interview) certainly revealed how good food was close by!

As this was my first visit I opted for the “mini-dinner course lunch” to get a good idea of the food offered at Harmony!

Chef Hidetake Suzuki/鈴木秀武 has his own “secret” source of vegetables in his own home-town, Fujieda City, about 20 minutes away by train from Shizuoka City.
When I say “secret”, it is actually more or less true as the farmer who grows these Italian/French vegetables do it on the chef’s request.
Although the two of us will visit that particular garden very soon, I am not allowed to divulge the name or its address!

Regular customers or friends at such an establishment do not need to look through a menu. A quiet word to the waitress (“please ask the chef to prepare a small antipasto misti for a start”) and a succulent array of appetizers will quickly materialize!

The artichoke also comes from that “secret” garden in Fujieda City!

Beautiful Ameera Tomatoes (and other vegetables) from Shizuoka Prefecture!

But I came for this: fresh fennel grown in the “secret” garden!

It was on the specialty of the day menu last week and although it had disappeared I knew there was still some of the vegetable in the fridge!

Incidentally, when I was a kid there were a lot of leafy vegetables I wouldn’t eat including fennel.
My departed Mum must be screaming at me from where she is seeing me having developed a craving for them!

A very light bechamel sauce emphasized the natural taste of the fennel.
As it was hot I did take my time to savor it! LOL

In France we usually boil or steam the fennel beforehand or even fry it to soften it first, but it becomes a totally different dish.
This gratin with its fennel just cooked enough to enjoy its true taste is not only delicious but also so healthy!

What will the chef come up with next time…

I agree that this particular article has been long overdue.
Not only my expats friends, but many Japanese friends have been at pains at finding restaurants, bars and cafes where they wouldn’t have to put up with the hazards and stink of smoke inhaled and expelled by uncaring customers.

Italian Cuisine: Shizuoka Agricultural products-Lunch at Via Del Borgo!

On a hot day (and the temperature has been hovering around a very unseasonal 30 degress celsius these past days) an Italian restaurant is probaby a good bet for lunch.
About time to check the latest lunch menu at Via Del Borgo, then!

One good thing about this spacious restaurant is that you can choose your spot among the available space without having to explain your reasons (not evident in Japan!)

I have already introduced Chef Takahiko Katoh/加藤隆彦 and I intend to folllow him around if he intends to go independent someday (all great chefs are bound to in Shizuoka), so let's have a look at what I had the pleasure to taste this time:
Onion confit crostini!

Antipasti misto!

Grilled zucchini and bamboo shoot (the latter from Shizuoka) and pork and vegetables roll.

Light vegetable omelette.

Avocado and Scallops with pomegranate seeds and balsamico dressing.

Home-baked bread, premium olive oil and wine!

White beans and asapragus tips soup.

Crispy asparagus tips (not the overcooked and soggy stuff!)!

I said before this the place for risotto!
Chicken ragu and mushrooms risotto!

For once I chose the fish main dish: pan-fried and oven-baked red grouper with cold fruit tomato ratatouille and hot sauteed vegetables.
All ingredients are from Shizuoka Prefecture!

The fruit tomatoes offered an intriguing contrast with their chilled swetness!

All vegetables sauteed to perfection to enhance their taste and flavor: small spring onion, okra, rape seed flower and maountain wild mountain vegetables!

I usually do not eat cooked fish skin but the marriage of the tender flesh with and of the crackling skin of this madai/真鯛/red grouper was too much to ignore and I was rewarded with a supreme experience! Probably the “simplest” and best way to enjoy white-fleshed fish!

Panacotta and fruit for a light and delicious dessert!

Instead of the usual coffee I had a refreshing orange juice and the little biscuits!

SHIZUOKA X CANNES 2011

The cities of Shizuoka and Cannes in France (you know, the Cannes Film Festival!) have been sister cities for quite a while now.
The citizens of Shizuoka have been holding their own event every year in the middle of May in Shikencho street in Aoi kU in Shizuoka City.
This year Agrigraph joined the event as a great opportunity to introduce local farmers and their produce.
This year the event is held on May 14th and 15th from 13:00 to 17:00 in Shichikencho. You still have tomorrow left! Do visit and I can garantee you will discover quite a few things to your liking!
Anyway I visited the event today and I hope this quick report will encourage you to have a good look tomorrow!

It seems ages since Toshiharu Matsuura opened his charmingly quaint izakaya, Villa D’Est Quisine, in Takajyo, Shizuoka City, when the area was not yet the famed gastronomic venue it has become since!

The whole place was conceived in Traditional Japanese style all with dark wood for a cozy meal, especially appreciated by ladies.

From the inside you don’t see the street hidden by greenery.

You can sit at the counter, tables or on the floor at a Japanese traditional low table.

BBQ with Shizuoka Agricultural Products Under Mount Fuji!

Last Monday we were lucky and blessed with splendid weather before Typhoon No1 fell around our ears the next day!

Our merry band of gastronomes rode from Shizuoka City to Fujinomiya City getting nearer and nearer Mount Fuji!

We finally arrived at our destination, Bayern Meister Bier, run by Stephan Rager already busy preparing the BBQ in the space outside the Brewery.
Alright before I lose them for good let me imtroduce the true gastronomes of Shizuoka Prefecture who attended the event:

At any BBQ (in Japan) you expect beer and a lot of it!
What better place then to hold our BBQ at Bayern Meister Bier! Stephan Rager, the only German Beer masterbrewer owning and making beer in his own brewery in Japan founded his establishment 7 years ago.

One can visit the brewery any time of the year as it also includes a small restautrant and shop (it can be really cold in winter there!).

Of course the whole place, inside and outside can be rented for parties!

Stephan even grows his own hop for special limited brews!

The three regular beers: Weissen, Prinz and Spezial (don’t worry, a more detailed interview is in the offing!)!

All the meat, beef, pork and chicken (all local!), and local vegetables were provide by Mr. Sano of Sanoman. Extravagant!

While the yakitori grilled we took a pause for the very Japanese tradition of self-introctions (mine was the shortest!LOL)!

Ready to eat! With a little salt and pepper, nothing else, just perfect!

And then the start of the real Fujinomiya Yakisoba!

After the BBQ we visited Mr. Kuwahara’s Yukai Farm where truly extravagant pigs are bred in incredible surroundings!

Right under Mount Fuji which provides all the water to the farm!

Everyone had to comply to the strict hygiene rules and sterelize their footwear!

Although the pigs tend to herd together they benefit from more space than in any usual farm. And their sties are cleaned twice a day.
The pigs are taken away from other herds kept at a long distance to avoid any disease and the culling is done away from the farm by a specialized company or maximum quality and minimum stress.

Visitors must go upstairs to observe the pigs without causing any stress to the animals.

They are literally kept in an incredibly clean “house” naturally ventilated. Not only the water but also the air they breathe is pure!

As for their feed, even humans can safely eat it. I actually did (sweet corn!)!
The motto is: “Quality, not quantity”!
As for traceability, you just can’t beat them!

As the last stage of our day we visited “mangenton” delicatessen owned and run by Mr, Sano’s Sanoman Co.

They even have a restaurant for private parties!

They even have a TV screen to suggest you recipes!

Last but not least they sell their own smoked ham!
I don’t need to tell you what my next visit will be all about!

Yakisoba: Fujinomiya Yakisoba-The real one!

Fujinomiya City is famous all over Japan for the so-called B-Class Gourmet Fujinomiya Yakisoba.
Actually I have little liking for this “B-Class Gourmet/B-Kyu-Gourmet/B級グルメ” branding which has been invented by scoop-hungry TV channels in Japan with a total disregard for authenticity and true local gastronomy.
Well, at least some honest gastronomes are fighting hard to put things into their right place!
Yesterday I spent the whole day in Fujinomiya City as I was invited to a grand BBQ (article coming soon!) where a true Fujinomiya-style yakisoba was prepared with the best ingredients that could be found in Fujinomiya City!

The pork, the same as shown in above picture was provided by Sanoman Co/さの萬株式会社 which produces some of the best pork in Japan.
As for vegetables, good quality cabbage (especially in the Spring!) grown in Fujinomiya City is enough as it will contribute all the water you need!

Just a little good oil to fry the pork and the cabbage together. The pork will add all the necessary extra fat for a lighter fare!
Good salt and pepper only for first seasoning! The yakisoba are first put on top while more pork is added.

And naturally who else but Mr. Sano, President of Sanoman, would graciously volunteer to cook it all!?

Luckily the BBQ was held at Bayern Meister Bier run by Stephan Rager, the only German Brewmaster to run his own Brewery in Japan (article coming, too!).

The best yakisoba are not prepared with water, but with beer!
And Stephan added his own beer! Extravagant!

French Cuisine: Veal and Macha Creme Brulee at Pissenlit!

Time to visit one the very best French restaurants in Shizuoka Prefecture: Pissenlit!
In this particular case I just barged in on Sunday for lunch and looked at the specialties of the day board!

For once I couldn’t drink alcohol and opted for Chef Arima’s delicious ginger ale made with real ginger roots!

To help me wait for my order (after all, all good food is slow food!) I was offered rillettes made with wild boar hunted in Noda, Shimada City! I could have ordered it!LOL

The appetizer was a delicious salad of udo and bamboo shoots. They had been lightly steamed/boiled before being served with a succulent vinaigrette. Udo/Aralia Cordata is a kind of sansai/山菜/Wild mountain vegetables. This particular one was found up Abe River in Shizuoka City. The bamboo is also grown in Shizuoka Prefecture.

A vegetarian delight!

And now for the main dish: veal!
Veal is not easy to find bred in Japan and even more difficult bred in Shizuoka Prefecture!
This extravagant meat comes from a one-month old 120 kg calf bred in natural environment with its herd.
Chef Arima shared half it with Matsuki Bio Farm’s Restaurant in Fujinomiya City where the calf hed been raised.

The veal was pan-fried/oven-roasted before being seasoned with a beautifully soft Dijon mustard seed sauce. The perfect marriage!

It was presented atop an extraordinary pancake made with potatoes/seri (セリ/Chinese celery or Japanese parsley) and cheese! I garantee you that pancake alone is worth ordering!

As usual the vegetables were all organic from Hirokawa Garden in Mishima City!

I never tire of looking at (and tasting) them!

Always cooked to perfection for maximum enjoynment of their true savors and tastes!

The veal is a beautiful pink with juices oozing instead of the unhealthy dry white samples imported to this country!

And now a real Shizuoka dessert: matcha creme brulee!

Shizuoka-grown Benihoppe/Red Cheeks strawberries!

It is just a pleasure to crack the caramel open and to delve into the cream below!

And the more you delve, the more matcha!

Shizuoka Ekiben/Railway Station Bento: Haru Chisen

About this time of the year Tokaiken Co. offers a seasonal ekiben at Shizuoka JR Station called “Haru Chisen/春千扇”, or “The Thousand Fans of Spring to celebrate the most important season in Japan! It is slightly more expensive (1,000 yen), but it is certainly worth it!

The box is the color of cherry blossoms, the symbol of Spring!

The contents are clearly indicated as usual!

As you lift the cover you will find another film of transparent paper protecting the food inside.

Now, what do we have?

Sansai maze gohan: Rice steamed together with wild mountain vegetables. Another indication that we are in Spring!

Shiozuke sakura no hana: edible cherry blossom preserved in salt!

Let’s have a look at the section on the left… beautiful colors!

Flower-shaped daikon pickled in sweet vinegar on na no hana/rapeseed flowers and umeboshi-pickled daikon.

Tara no me/a Japanese wild mountain vegetable.
Tofu edamame fuwafuwa: deep-fried tofu cake containing edamame and other vegetables.
Tamagoyaki/Japanese omelette.

Now, let’s turn to the right section: More colors!

Nimono/simmered vegetables: Carrot, taro, shiitake mushroom, green peas in their pod, bamboo shoot and cherry-blossom-shaped jelly.

Now for the “main dish”: pork shuumai/dim sung, sawara/young Spanish mackerel (from the Suruga Bay) and deep-fried chikuwa/fish paste roll stuffed with umeboshi paste.

By now you should know the color of Spring in Japan!

Chef Hidetake Suzuki/鈴木秀武 is back with a vengeance after opening his new Italian Restaurant, Osteria Porta Porta on the 28th of March in Takajyo machi, Shizuoka City!

I’ve always been a great fan of his simple and delicious recipes from Southern Italy.
This is the kind of place you can visit either at lunch or dinner and ask for wine and a plate of appetizers and be more than satisfied!

The restaurant used to be a Japanese establishment and it has been reformed into a clear clean place with a bright atmosphere.

Next time I shall sit here for lunch!

But make sure to have a good look at the specialties of the day!
You are certainly in for a good surprise or two!

Great choice of pasta! Take your pick!

And also check the wine list. Wines come at 2,900 yen to 25,000 yen a bottle. I can assure you there some very decent offerings at very good prices!

For this first quick lunch visit I ordered a plate of appetizers with my wine!

The vegetables are all from Fujieda City In Shizuoka prefecture.
The pork is from Italy for the most part but Hidetake also makes his own!

Scrumptious crostini and all!

Now, this is a surprise: the first artichoke of the year (they take one and a half years to grow) grown by a farmer in Yoshida-Chi. The same farmer also grows fennel! Hidetake and I will interview him before the end of the month!

I’ve already said that an Italian restaurant which serves real sugar and fresh cream for lunch is always a telltale of good quality!

Next time see you at dinner! I want to try that fennel gratin!

Shizuoka Ekiben/Railway Station Bento: Shizuoka Monogatari

Even if the many ekiben/Raliway bento/Railway Box Lunches at Shizuoka JR Station are all prepared by the same company, Tokaiken Co., they still have to satisfy not only a great variety of individual tastes but also “multiple tastes”.
Some people don’t want rice only or not one kind of the latter.
Shizuoka Monogatari/静岡物語 (Shizuoka Story) is a typical example of an ekiben conceived to satisfy an eclectic customer!

Orange is the official color of Shizuoka Prefecture!

As usual everything is clearly indicated!

No, the picture is not blurry. It is only that the food is protected by a film of hard transparent paper!

Now, what do we have here?

Due to the design of the ekiben I will have to repeat myself!
The rice at the bottom is topped with deep-fried cherry shrimps/sakura ebi, only found in Shizuoka Prefecture!
The spaghetti are peperocino style!

The rice at the right has been steamed with Shizuoka green tea!

Bottom left: Nimono/stewed vegetables: carrot, bamboo shoots, string beans.
Bottom right: Yaki saba/grilled mackerel and sweet beans dessert (called “uguisu mame”)
Top left: Unagi kabayaki/broiled eel with pickled leaf ginger and lettuce
Top right: Maguro Kakuni/stewed tuna cubes, Kuro hanpen/Sardine paste (both Shizuoka specialties)

Bottom right: Shuumai, soy sauce bottle and apricot preserve dessert
Top right: Tamagoyaki/Japanese omelette (containing minced meat) and pickled daikon
