Italian Gastronomy: Shizuoka Products Feast at NORI in Fujieda City!

I’m not afraid to aver that NORI in Fujieda City is the best Italian restaurant in Shizuoka Prefecture, and I’m certainly not the only person to venture in such a declaration!

Fuminori and Eri Nishitani/西谷文紀砥英里御夫妻!

After years in Italy honing his talents, Fuminori Nishitani opened his Restaurant NORI in Fujieda City completely off the beaten tracks inside a splendid house that his mother originally used an atelier on October 1st 2003 in the company of his wife, Eri, who looks after the dining room/hall in spite of a growing family.

The main dining room sits up to 20 guests at tables while a side room can sit small parties as well one other room with Japanese style seating.
Incidentally you are asked to take your shoes off to wear comfortable slippers and the whole place is absolutely non-smoking!

A bulletin informs all guests of coming events in a simple manner.

The decoration and furniture are certainly worth a second and third look for its beautiful combination of many genres!

Even the layout of the tables reflects a sweet marriage of cultures!

If you sit at the right table you can see the Chef at work in the distant kitchen!

The “official wine list”!

An excellent wine list is on offer but bear in mind there are many more nectars stashed away for your asking!

The menu of the night!

Whereas at lunch time you do not need to reserve (but play safe by calling beforehand!) dinner has to be reserved over the phone.
You will be asked to propose your own budget and the Chef will prepare a menu accordingly!
If you ask a few days in advance you can also arrange for specialties of your liking with the Chef.
You will find a personal menu card waiting for you beside your plate for you to take back home with notes you can write on as each dish is carefully explained to you!

Here is the wine we ordered:
Maurus 207, Vie de Romans, Merlot Grapes in Piemonte!
Solid but very smooth and fruity!

Foie gras crostini!

As a rule, I do not mention prices, but this is an exceptional case: I had reserved a dinner according to a budget of 7,000 yen per person (drinks not included), that is, 70 Euros or nearly 90 US$, to show you the great value!
The above foie gras crostini was not mentioned on the menu card!

Salad of Sayori/針魚/Japanese Halfbeak in Champagne Vinaigrette and Shizuoka Vegetables!
Sayori or halfbeak is a favorite at sushi restaurants. They are in their best season right now in the Suruga Bay bathing our shores!
That particular fish was caught in Sagami/相模.

The fish was served as a variant of carpaccio with a succulent Champagne vinaigrette and chrysanthememum petals.
The pearl tomatoes are grown by Mr. Suzuki in Iwata City while all the other vegetables come from the Farm of Mr. Iguchi in Fujieda City!

Home-baked soft walnut bread!

Home-baked Shizuoka green tea bread!

A potage made with “uangi imo” from Hamamatsu City!
Unagi imo is a very sweet kind of sweet potato/satsuma imo. No sugar was added in spite of its incredible sweetness! A discovery!

“Aburi Anago no Spaghetti, Yuzu Koshio Fuuaji”/炙り穴子スパゲッティ柚子胡椒風味

Capellini-style spaghetti with conger eel seasoned with yuzu koshio/lime pepper sauce!

The leaf vegetable on top of the conger eel (very famous product of Western Shizuoka!) is urui/うるい/Hosta Montana, a kind of wild mountain vegetable!

Whole wheat garganerri with gibier sauce!
Unfortunately the ingredients in the game sauce were a secret but I suspect that wild boar and venison were involved…

Chef Nishitani brought this contraption from Italy to make his own garganerri!

Ezo Shika Venison from Hokkaido with a symphony of Shizuoka vegetables!
For once, a product not from Shizuoka Prefecture but the vegetables were proud to contribute!

And it was finally time for desserts!
The Missus was served (the desserts will be different!) the above Mousse made from chestnuts and pears!

Naturally savors and taste were absolutely mind-rocking! I hope the above pictures will give you a good idea of what to expect!
Actually I’ll be guiding Chef Nishitani in an enormous organic vegetable farm in Fujinomiya City at the foot of Mount Fuji next week (report in the offing, of course!)!

Today’s Bento/Lunch Box (12/07): Tuna Balls Bento!

The Missus (or Greenpeace…) will have mine for posting such a title…
But the Missus loves meat balls and tuna, so the combination was only natural!

For once I must say that the rice dish was more elaborate than all the rest!

Everything was laid on plain steamed rice.
The balls were made with “negitoro”/tuna flesh grated off the inside of the skin. I only know that the Missus seasoned it with mayonnaise, Japanese sake and wasabi dressing and what else before shaping small balls and stir-frying them in light sauce, probably ponzu, soy sauce and mirin.
She just placed them atop the rice beside opened snap peas in their pod. Interesting design!

She then added a typical Japanese garnish: hijiki/sweet seaweed, small pieces of carrot, red cabbage and aburage/deep-fried tofu pouches and peas all lightly fried and seasoned together. A vegan’s delight!

The salad dish consisted of a half-boiled egg, lightly marinated and seasoned with black sesame seeds, fresh buckwheat sprouts, lettuce and mini tomatoes!
Very colorful!

This picture will prove that the Missus enjoyed her own cooking as she had exactly the same for lunch!

Japanese Gastronomy: Fuji-Takasago Brewery Public Opening with Sanoman Delicatessen in Fujinomiya City!

For the last 8 years or so Fuji-Takasago Brewery has been holding a Brewery Public Opening Day on their premises in Fujinomiya City with the collaboration of Sanoman Co., the largest delicatessen company in the Prefecture.
The event is attracting a lot of attention from the whole of Shizuoka Prefecture as demonstrated by thousands of visitors from all corners of the Prefecture!
The joint event has become a reference for an ever-growing number of similar festivals in Shizuoka!

The train saw a lot of people going down at Nishi Fujinomiya Station at a walking distance from the Brewery. Some of them took the opportunity to eat hot pork soups at Sanoman Co. which stands on the other side of the street!

They were the more welcome by the cold weather!

I had a quick look inside Sanoman Co. as I knew quite a few of their products would be on sale on the Brewery premises!

And then we had only the street to cross to enter Fuji-Takasago Brewery!

The whole staff with their young owner were busy welcoming everyone!

Take note of the Fuji-Takasago sake kegs!

Quite a few notable visitors were already enjoying themselves including Kenya Yoshimura, owner of Uzu Restaurant in Shizuoka City!

Sakekasu/sake white lees were on sale for customers who will use them for amazake/sweet sake or nabe/hotpot back home!

Fujinomiya Yakisoba!

Visitors were even treated to a show by local folklore dance groups!

Slightly tired performers!

But my first destination was the sake served for free by the brewmasters (Noto School) themselves!

Directly from the brewing tanks!

Many local producers were selling their products!

Strawberry jams and cakes!

But the cold weather required plenty of hot food: Delicious croquettes by Sanoman Co.!

Hot tonjiru soup!

It certainly brought smiles on many faces!

Even so, quite a few visitors gathered around one of the many fires!

Another method to keep away from the cold was to queue for more free sake!

What with visitors coming from far away the brewery staff was busy selling their nectars!

It was a battle to reach the bottles!

Sake is fine but one can’t drink on an empty stomach, so it was back to the food stands!

Mind you, there was plenty of green tea on offer!

Now, what is this freshly made anko/sweetmeats for?

Apart of Fuji-Takasago Brewery and Sanoman Delicatessen, there were two more stars present!
First Kunugi Rainbow Trout Farm from Fujinomiya City!

It was non-stop work for the Kunugis!

Couldn’t wait for these beauties to be ready!

The other star was yakitori by Aoki Chicken Farm in Fuji City!

They certainly needed a lot to satisfy the enormous demand!

Absolutely non-stop work again!

I can guarantee you they were worth the wait!

I’ll have to come earlier next year!

Memorable Gastronomy with Shizuoka Products in 2011!

Fujiyama Wagyu Beef, Utogi Wasabi and Ameera Rubbins Pearl Tomatoes!

2011 was an eventful year for many reasons, some unwanted, even dreadful, and others more conducive to social happiness. I would prefer to remember the latter to help nurture a positive attitude towards a future we cannot predict! Being a convinced agnostic hedonist does help but I’m sure that gastronomes, whatever their credo, will realize how lucky we are in Shizuoka to be able to attain to ever-growing pleasures with seemingly simple local ingredients!
Here is a proposal for a full course, albeit a long one, representative of a dinner I would have enjoyed in 2011!

APPETIZERS/STARTERS:

Rainbow Trout Sashimi Plate!
These rainbow trouts are raised by Mr. Kunugi in Fujinomiya City!

in any repast drinks are most important as they are they insure the link between the dishes!
Japanese sake brewed by Takashima Brewery in Numazu City!
These labels are of a particular interest as they advertized the edible seaweed varieties found in Shizuoka Prefecture!
Note: For friends who may not drink alcohol I would recommend ginger ale made with Shizuoka-grown ginger or Shizuoka green (and black!) tea under various forms!

Tomato Tempura!
Uzu Izakaya in Shizuoka City serves it regularly with organic tomatoes seasoned with home-made yuzu koshio paste!

Sakekasu tempura!
Setsugekka Soba Restaurant in Shimada City serves this tempura concocted qith sake lees produced by their neighbors at Oomuraya Brewery!

Carrot Soup and Carrot Leaves Mousse on a Tomato Bed!
All vegetables are organic served at Pissenlit in Shizuoka city making use of the whole vegetables!

Fujiyama Wagyu is one of the thirteen varieties of wagyu bred in Shizuoka Prefecture which positively compare to Kobe Beef!
The wasabi is grown by Maruichi Farm in Utogi, the birthplace of this most remarkable ingredient!
The Ameera Rubbins Pearl Tomatoes are grown in Iwata City!

Foie gras poele on Corn Galette with Madeira Sauce!
This can qualify as an extravagant appetizer too!
The galette was concocted at Pissenlit in Shizuoka City with high-grade Kankanmusume Corn grown by Chouchou Farm in Iwata City!

Jidori Chicken Poêlé served with a Old Mimolette Cheese topping!
Fuji City is famed for its Jidori Chicken and Gentil in Shizuoka City serves it in extravagant simplicity with a topping of 24-months old Mimolette Cheese!

DESSERTS

Soy sauce and Brown Sugar Mousse Cake, Frozen Organic Mandarine and Lemon Sorbet!

Tetsuya Sugimoto in Shizuoka City is a master of off the beaten track desserts!
The soy sauce is created by Amano Company in Gotemba City and the brown sugar is made with sugarcane grown in Kakegawa City. As for the mandarine and lemon, they are of course organic!

Carrot Crème Brulée and Mandarine Caramelisée!

As served at Pissenlit in Shizuoka City. Both the carrot and mandarine are organic!

Organic Carrot ice Cream!
This could be served as an appetizer, a refresher between dishes or a dessert at Comptoir de Bios in Shizuoka City!

Pheasant Egg Pudding and brown Sugar ice Cream!
Again created by Tetsuya Sugimoto in Shizuoka City with pheasant eggs produced in Hamamatsu City and brown sugar made from sugarcane grown in Kakegawa City!

Naturally I still have missed a lot and I sincerely hope I will be able to introduce other discoveries by the end of this year!

Izakaya: Hachokura in Shizuoka City JR Station!

Service: Friendly
Facilities: Clean
Prices: Reasonable
Strong points: Lots of fresh local fish and produce. Great range of sake and shochu.

If you happen to be hungry but still limited in time, be it for lunch or dinner, Shizuoka City JR Railway Station will offer you plenty of reasonable and decent enough establishments that will serve you either fare found all over Japan, or for the more adventurous, ingredients mainly from Shizuoka Prefecture!

Hachokura in the western building of Asty Mall is such a place.
You cannot miss it with its big board describing local fare!

Even if you are in a hurry, take the time to have a good look at all the seafood and sake on offer. You are bound to make some interesting discoveries!

You can choose a seat at the counter or in a private room.

Traditional Japanese country atmosphere?

You may also sit at tables by the window.
I paid them a visit at lunch time when it is quieter. Evenings are really busy!

Sitting at the counter can turn into a lot of reading!

Tuna Carpaccio is really reasonably-priced!

Local fish and local sake!

Again, a lot to choose from!

You can always choose one of their lunch boxes/plates but their lunch sets are a real bargain when you consider that the beer is included!

So my lunch set started with beer and a snack.

Sashimi plate (tuna, horse mackerel, salmon, cuttlefish, sweet shrimp, tamagoyaki). Note the freshly grated Shizuoka-grown wasabi!

Potato and minced meat croquette and deep-fried chicken “nankotsu/cartilages”!

“Karaage niwatori nankotsu”, chicken soft cartilages deep-fried with some of their meat attached. Great snack for beer!

Simple, tasty and reasonably-priced traditional local fare!

Sushi Set in a Shizuoka City Supermarket!

There is this kind of quaint rivalry between Tokyo and the rest of Japan when it comes to gastronomy, a situation which is fueled by some famous/notorious guides of international repute/disrepute for obvious financial reasons.
How many times was I told almost brutally by other expats living the grand life of Tokyo that nothing compares with the metropolis when it comes to gastronomy…
Admittedly some regions of Japan are grudgingly granted some kind of recognition, i.e. Kyoto, Hokkaido, etc. under the leadership of the media cited above, but for the rest….
The case of Shizuoka is particularly acute. Tokyo expats (not all, mind ou!) go as far as considering Izu Peninsula and Mount Fuji as their own back gardens!
The situation is purposefully exacerbated by most famous restaurants in the Capital who certainly do not wish people at large to know too much about Shizuoka Prefecture for the simple reason that many of them wouldn’t exist without the myriads of vegetables, meat and fish varieties produced here.
Just visit a supermarket in Shizuoka City and you will understand my meaning! Actually, I stopped completely eating in Tokyo! My money is better spent looking for the hidden treasures of faraway Prefectures.
Enough complaining, and just allow me to show you an example to illustrate this topic:
As the Missus was working today I was responsible for the shopping.

This is what I found at the nearby Shizutetsu Supermarket: a sushi set prepared by Uogashi Company (they have a branch in Yokohama), a fish and sushi company located in Numazu City, in the Eastern part of Shizuoka Prefecture.

The price: 980 yen! Less than 10 Euros or 13 US $!

And all the ingredients are clearly indicated!
Actually, you could buy in lieu of a bento box!
All the fish comes from nearby seas!

Now, what do we have?

From top to bottom, left to right:
Maguro & maguro akami/鮪赤身/tuna lean part. Not the bluefin tuna, but most probably mebachi maguro/目鉢鮪/big eye tuna.
Ika/烏賊/Cuttlefish, most probably surume ika/鯣烏賊/Japanese flying squid.
Shiradai (also called Shirodai)/白鯛/”White seabream” (Gymnocranius euanus Günther).
Sanma/秋刀魚/Pacific saury topped with chopped leek.
Tachiuo/太刀魚/Scabbard fish or largehead hairtail.

From top to bottom, left to right:
Ika/烏賊/Cuttlefish, most probably surme ika/鯣烏賊/Japanese flying squid.
Suzuki/鱸/Japanese seabass/seeperch.
Tamagoyaki/玉焼き/Japanese omelette.
Tachiuo/太刀魚/Scabbard fish or largehead hairtail.
Shirasu gunkan/シラス軍艦/A gunkan style sushi topped with raw sardine whitebait seasoned with chopped leek and ginger.
Sakuraebi Gunkan/桜海老軍艦/Cherry Shrimps seasoned with grated ginger.
You will not find the last two in Tokyo except in ridiculously priced exclusive restaurants!
Soy sauce and grated wasabi.

You will not find such a set at that kind of low price (if you are lucky enough to discover them fresh) for such variety and quality in Tokyo!

Sushi Restaurants: Shizuoka Seafood at Sushi Ko (December 2011)

Service: Pro and very friendly
Facilities: Very clean. Excellent toilets
Prices: Reasonable
Strong points: Great variety of seafood from Shizuoka Prefecture and the rest of Japan. Great list of sake!

December has seen the cold weather settle in at long last!
This is good news for sushi lovers as a marked change of weather means new seafood varieties coming in!
Naturally, we visited our favorite sushi restaurant in Shizuoka, namely Sushi Ko in Aoba Koen Street!
Here is what we enjoyed!

Snack coming with the first drink: Kanpachi aburi/環八炙り, seared Amberjack.

No need to say that sake was on order: Masu Ichi Brewery from Shizuoka City!

Little beauties from Shizuoka and Akita Prefectures!

Sakura ebi/桜海老/Cherry shrimps from Yui!

Shirauo/白魚/Icefish from Akita Prefecture!

Hirame/平目/Flafish sashimi from Suruga Bay!

Seguro Iwashi/背黒鰯/”Black back” Sardine sashimi from Suruga Bay!

Buri/鰤/Yellowtail chu toro and toro sashimi from Ishikawa Prefecture!

It’s not all raw fish at Sushi Ko!
Among their cooked specialties we have a special fondness for their Ponkara Maguro/ポンカラ鮪/Deep-fried tuna cubes served with momijioroshi/紅葉下ろし/grated daikon with chili pepper!

Kampachi Tataki/環八タタキ/Amberjack filets that have been seared well before being plunged into cold water and later served as sashimi.

Sushi Ko’s specialty: Sushi Millefeuille!

I cannot visit a sushi restaurant without asking for Maguro Zuke/鮪漬け”/marinated tuna akami/lean part

Comfort dishes for a cold winter: Hotate guratan/帆立グラタン/Scallops Gratin!

Chawanmushi/茶碗蒸し/Japanese hot salted pudding!

Geso karaage/ゲソ唐揚げ/Deep-fried squid tentacles!

Back to raw food! Hotate nigiri/帆立握り?Scallops nigiri!

Ama ebi/甘海老/Sweet Shrimps

Sushi for vegetarians: Yama Imo Gunkan/山芋軍艦!

A universal favorite: Piri kara hotate kariforunya roru/ピリ辛帆立カリフォルニアロル/Hot scallops California Roll!

Tamagoyaki/玉子焼き/Japanese omelette for dessert!

And kinoko miso siru/キノコ味噌汁/miso soup with mushrooms, and plenty of seaweed, to wash it all down!

Gastronomic Izakaya: Autumnal Dinner at UZU in Shizuoka City!

Facilities: good washroom facilities. Great cleanliness overall
Prices: reasonable.
Strong points: Splendid use of local vegetables, meat and seafood! Great sake from Shizuoka and Japan Great Shochu. Home-made umeshu.

Kenya Yoshimura/吉村健也, the owner-chef of Uzu in Aoi Ku, Shizuoka City, although it is celebrated as one of true exponents of Shizuoka Gastronomy, has always averred that his establishment will be first and always an izakaya!

In Shizuoka City this is a fine line which is easily crossed over and over by many establishments, whatever the genre, in a rare region of Japan where almost all ingredients are available all year round!
It is Paul Bocuse who said, “There are no great chefs, only great ingredients!”. A bit simplistic, although it could be very well the best way to describe gastronomy in this Prefecture!

Kan Sawara Aburi/寒鰆炙り/Seared “Cold Weather” Spanish mackerel

To put it briefly, it had become grand time to pay a visit to Uzu in Shizuoka City and check what seasonal fares were on offer!

Spanish mackerels come back in reduced numbers through the Suruga Bay in Autumn and they are best appreciated seared on the skin and served in fairly thick and tender sashimi!
Kenya exclusively uses wasabi roots from a single producer up the Abe River/安倍川 in Umegashima/梅ヶ島. He added that he uses only medium-sized roots for best taste!

Take your time before choosing your drink and do not hesitate to ask for advice!
I chose a beautifully strong Ginjyou Genshu by Hatsukame Brewery in Okabe/Fujieda City!

Always served in glassware or earthenware created by local artists!

I always order the seasonal “goro goro” salad mainly consisting of local organic vegetables lightly sauteed beforehand before being seasoned into a magnificent salad. Enough to feed a vegetarian!
Can you see the chestnuts in front cooked whole with their crispy “skins”. A discovery!

Bear in mind that this is a very limited offering you had better order in advance on a busy night!

Uzu is one one of the few establishments in Shizuoka to offer Mokomodake/もこもだけ/Manchurian Wild Rice whose swollen crisp white stems are edible in many manners!

In season Kenya simply serves them grilled with mayonnaise!

Another great treat for vegetarians!

Last for the night we ordered a truly extravagant and rare delicacy only found in Shizuoka!
Grilled thigh of Amagi Shamo Chicken/天城軍鶏 exclusively bred by Mr. Horie/堀江さん in Izu Peninsula and served with a fresh wasabi dressing!
This is arguably the best chicken in Japan and it certainly tastes more like game than anything else!

Shizuoka Fish & Seafood at Shizuoka JR Station Parche Supermarket! (October 2011)

One way to know your local food is naturally to visit regularly the local supermarkets.
In Shizuoka City we are blessed with a fantastic, maybe not in size but certainly in variety and quality, supermarket inside the JR Station Parche Building.
Now, this is the place to study all about the local (and from other shores!) marine life that will find its way onto your plates!
I do make regular visits just for the joy of it, so let me share with you the photographs of exclusively local seafood caught in the Suruga Bay or around the Izu Peninsula!

Sashimi Appetizer Plate at Tomii (October 2011)

Service: Professional and attentive
Equipment: Great overall cleanliness, superb washroom
Prices: Slightly expensive
Strong Points: Refined Japanese gastronomy. Great list of Shizuoka Sake.

Tomii is the typical Japanese high-class Japanese restaurant with all the trappings you ought to expect. The quality certainly warrants the prices, but it is always an experience, be it for a quick visit or a more elaborate repast.
The other day, taking a break away from the computer, I restored myself there before going back to work. I would like to introduce the individual sashimi appetizer plate I ordered then:

An indeed very sophisticated serving of five different sashimi!

Maguro akami/鮪赤身, lean part of tuna.

Kampachi/勘八, great Amberjack from Sagara, Shizuoka Prefecture.

Kochi/鯒, Sand Borer-Papilloculiceps longiceps, from Mochimune in Shizuoka Prefecture.

Hata/羽太, Grouper

Aka Ika/赤烏賊, red squid.

Naturally, the freshly grated wasabi and the shiso, sprouts and other vegetables are from Shizuoka Prefecture!

BBQ With Shizuoka Local Products!

In Japan and Shizuoka BBQ’s are taken very seriously!
Today, Sunday October 9th, I took part in the 2nd Shizuoka Products BBQ organized by Nagashima Wine Shop in Shizuoka City!
The event catered for no less than 50 people and certainly required some organization like the Japanese are so good at!

The event took place on the bbq space of Yamako/山幸 soba shop up in the Mariko mountains in Shizuoka City!

The BBQ was scheduled for 11:00 a.m. but I came early to give a hand and to be able to report on the whole day!
It certainly was hot for an October Sunday!

Plenty of hands needed, but organizing committee included some hefty guys!

We still took time to share a joke or two!

Kazutaka Takashima makes it known all through his sake labels that the Suruga Bay has the largest number of edible seaweed varieties in Japan!

The water of the day all came from Takashima Brewery’s own well!

All the guests were provided a sake cup with a removable cap to make sure not a single drop would be spilled!

Local Food at Cenova Department Store in Shizuoka City!

After 3 years in the making Cenova Department Store has been finished and went through a pre-opening gala today.
Formerly known as Shin Shizuoka Center, the crumbling store has been completely rebuilt into a brand new venture reminiscing better store in bigger cities.
I was curious about what local food they would offer and decided to investigate today since I had obtained an invitation, a rigmarole necessary for the day!

At least the entrance was grand enough and all the ceilings very high. No complain there!

I immediately went down to the basement solely dedicated to food and drinks. It certainly was as big as the other department stores in town and was divided into Shizutetsu Store, the building owning company’s own store and tenants.
I checked the tenants first!

Shizuoka Green Tea! Shizuoka Prefecture produces 45~50% of the total Japanese crops!

Cana, a great chiffon cake specialist from Yaizu City!

Korokuya Co. Is also a tenant at Shizuoka JR Station Parche Department Store.

Shizuoka-grown shiitake mushrooms!

Fresh wasabi roots from Izu Peninsuloa!

Shizuoka-grown “Akagara” satoimo/taro!

Shizuoka-bred Suku Suku Chicken!

Fish and seafood from Shizuoka Prefecture. The same company are also tenants in Parche!

That was about as far as the tenants were concerned. Actually it was more than I expected.
I then moved to the Shizutetsu Store space.

All these vegetables come from Shizuoka Prefecture producers on contact with Shizutetsu Store!

The farm’s name and owner picture are all featured at this special stand. How about that for traceability!

Shizuoka Prefecture is also celebrated for its succulent mandarine oranges!

Not many people know that grapes were first grown in Shizuoka Prefecture in Japan!

The mushrooms grown by Mr. Hasegawa in Fuji City are famous beyond our Prefecture!

Fish and seafood from 5 different fishing harbors in Shizuoka Prefecture!

Beautiful fish in the company of a whole wasabi, toot, stems and leaves. You won’t see that outside our Prefecture!

Plenty of sake from Shizuoka Prefecture!

A sake brand devised for the opening of Cenova by Hana no Mai Brewery in Hamamatsu City!

And more mandarine oranges!

All in all, I must admit I found more than I expected!
Next time I will investigate in more detail!

Fuji No Kuni Gastronomic Fair in Fuji City (September 2011)

On September 22nd another “Fuji no Kuni” Gastronomic Fair was held under the auspices of the Shizuoka Prefecture Economy & Industry Bureau at Maison De Anniversaire in Fuji City to support the local food and producers.

As the event started at 7 p.m. I arrived a bit early at Shin Fuji Station where I was greeted by a beautiful sunset!
As the site of the event took place high at the foot of Mount Fuji I did well to reach the Station at 6 p.m.!

Arriving early gave me ample time to greet some friends and acquaintances like Mr. Sano, owner of Sanoman Co. in Fujinomiya City!

It also allowed me to survey the dining room and have a look at the menu and appetizers on my plate before exchanging business cards with many another guest. Actually most guests, representing companies or coming as individuals, had some kind of direct relation with the economy and agriculture of Shizuoka Prefecture.
Incidentally, the appetizers were Mangenton ball in escabeche from Sanoman Co. and the chicken roulade was made with Koshamo chicken from Aoki Farm in Fuji City!

The beer that day was brewed by Stephan Rager at Bayern Meister Beer Co. in Fujinomiya City!

And the Japanese sake was provided by Fuji-Takasago Brewery in Fujinomya City!

A honjyozo called “Raku/楽/Enjoy Yourself!”

Guests including some celebrities taking their seats in all informality.

The MC of the day: Mrs. Kyouko Ishigami, a Shizuoka sake expert!

The dinner started with a vegetable and salmon trout jelly terrine and organic salad!

The salmon trout was bred by Kunugi Fish Farm and all the organic vegetables were grown by Mtsuki Bio Farm, both in Fujinomiya City!

Each producer involved in the preparation of the repast introduced their venture on the mike: Mr. Sano of Sanoman Co.

Beautiful mushroom soup with imo/taro. The mushrooms were cultivated by Mr. Hasegawa in Fuji City!

Madai/Seabream (brought from Yui, Shimizu Ku, Shizuoka City) poelee with a galette of sakura shrimps from the same harbour. The vegetables are of course from Matsuki Bio Farm and the bacon from Sanoman Co.

French Gastronomy: Shizuoka Seafood and Vegetables at Chez Satsukawa!

Service: Very friendly and easy-going, more professional in the “room”.
Facilities: very Clean and beautiful washroom!
Prices: Reasonable
Strong points: French food in Izakaya style. Great sake and wines!

Chez Satsukawa has the great merit to both provide relaxation at their counter and sophistication in their dining-room for the pleasure of individuals, couples and groups alike!

Even in a comparably relaxed atmosphere it is the attention brought to the little details that make the difference!

Natural source water “Wasan” collected in Numazu City at the foot of Mount Fuji!

They bake their own bread!

The Chef/Owner has always had a preference for seafood as shown above by a carpaccio of “kinnaku/金無 sole” caught off Miho Peninsula in Shimizu Ku, Shizuoka City!

Prime fish served with prime olive oil and condiments!

Beautifully chopped fresh Shizuoka leeks and home-made myoga pickles for a great color contribution to a succulent dish!

Being Japanese, Fujio Satsukawa has a great love for raw seafood but his real love is for Southern France Cuisine when it comes to cooking the catch of the sea such as the above red cuttlefish from the Suruga Bay prepared with a ratatouille!

Splendid red cuttlefish!

Having cleaned the cuttlefish and filled it with Shizuoka vegetables prepared as a rough ratatouille, he flambeed it before cooking it in olive oil until the flesh was tender but not overcooked. Great balance in bite and savors!

More Shizuoka-grown vegetables were lightly deep-fried to add more bite and flavors to the whole dish!
This is the kind of manipulation/marriage you can expect form a top-class chef working from a multinational vantage!
