Vegan Snack: Almonds & Pistachio Genmai (Whole Brown Rice) O-Mochi (Rice cakes) by Ando Rice Shop in Shizuoka City!

I have just discovered, albeit quite famous, Ando rice Shop Ando, Aoi Ku, Shizuoka City (report coming soon!) who sell some a rare rice called Kamiakarai, which is grown by only 4 farmers in the whole of Japan!
As for the o-mochi (rice cakes) herein introduced, they are mad with kamiakari rice organically grown in Fujieda City by Mr. Yamashita, the same person who grows organic Yamada Nishiki sake rice used by Aoshima Brewery for some incredible sake!

These genmai/brown rice o-mochi come into two different combinations: one mixed with pistachio, the other with almonds!

These o-mochi are made of brown rice and pistachio or almonds, and nothing else!

This time I just simply grilled one of each.
Another popular way to cook them is to cut them into small cubes and fry thrm in a little drop of good oil.

They will not swell/puff like normal o-mochi, so you do need to experiment how far you are going to grill them!
I might have done better with leaving them a little longer on the grill although I tasted them fried last week!
Both ways they are excellent!
But remember that since they don’t contain any sugar they are not sweet at all!

If you want them sweet, you could always serve them with a sweets sauce or jam, although they make a great and healthy snack with soy sauce!

There are all kinds and levels of Chinese gastronomy in Chinatown, Yokohama City, but Tung Fat is a secure venue with a great quality/price ratio!
Make sure you enter the right one as a family share many restaurants of the same nme on the same side of the same street.
Lunch is very reasonable and we asked for the regular set menus and added a couple a dishes!
Incidentally jasmine tea is free there!

Kura: Japanese Traditional Warehouses in Shizuoka Prefecture 14: Ishi kura/Stone Kura with Map Cafe Shizuoka In Shimizu Ku, Shizuoka City!

“Kura” (in Japanese 蔵 or 倉) means “warehouse” or “Storehouse”.
In traditional Japan, especially during the Edo Era, as most of buildings and urba/village structures were made of wood, fires were the bane of society by and large.
However well-protected a fire would consume a house or buildings and all its properties within minutes.
Hence a special building or warehouse was needed to protect goods and properties against such a catastrophe.
But erecting a storehouse solely made of concrete, stones and some metal cost a vast amount of silver and gold and only rich merchants and nobility could afford them. Even castles could not be built entirely of stone then.

The other day I had the pleasure to witness the good use of an old kura for an event!
The place is one of the many kuras found around Jirocho area in Shimizu Ku, shimizu, which used to stand just by the harbor.
Now the harbor has moved completely away and the area around the Tomoe River whose mouth was part of the harbor, has gone quiet.

The owners of the old house and kura are still living there but they stopped their liquor shop business which used to be housed inside the two old big kuras.

But they the enormous merit to lend the premises to events and parties from time to time!
On that day a remarkable young group of young Japanese called MAP CAFE SHIZUOKA (FACEBOOK) led by a young artist named Tomoyuki Sugiyama</strong> were holding a Map Cafe Event!

Actually a shimizu Kura Club does exist!
They contributed to the event by holding very instructive conversations with all willing visitors!

They were all holding a one-day Map Cafe Shizuoka Coffee Shop there.
I found them also organizing a kind of BBQ for the veening!

The forefront kura is a bit derelict and used as a shed but the kura at the back is splendid!

For all their ancestry, the door and roof are so well-preserved!

In comparison the window shutters of the forefront kura are dangerously peeling away!

The place is simply and aptly called “KURA/蔵” althoough everybody agrees on its nickname “Ishi Kura/石蔵/Stone Kura”!

Not only the kura is lent for events but it also includes a minuscule museum!

As well as maps of Shimizu when it was a city and still a harbor next to the kura.
No wonder MAP CAFE SHIZUOKA had chosen this location!

Now is the time to have a good look (and buy) seafood and fish at the big supermarket in Parche, Shizuoka JR Station, in Shizuoka City, especially local!
I had a quick look today as I was shopping for tonight’s dinner and I did find some things of great interest as usual!

At 698 yen for 100 grams, they are not cheap, but they will not stay long there!
They were caught in the Suruga Bay off Mochimune, one the main fishing harbors in Shizuoka City with those of Shimizu and Yui!

More than in French or Italian Restaurants they will find their way to some expensive/exclusive Japanese restaurant as these are wild lobsters!

I had a very f\good reason to visit Aoi Beer Stand in Aoi Ku, Shizuoka City today!
They started serving a great snack: Char siu/叉燒/チャーシュー made by Mr. Tsurutaya in Shizuoka City!
Actually, Mr. Tsurutaya is in the process of moving his ramen restaurant to Aoi Ku. I shall be able to pay him a visit soon!

Now, this elegant char siu concocted by Mr. Tsurutaya is not your run-of-the-mill foodstuff.
This is a real delicacy, tender, juicy, tasty and quite healthy in fact!

How many times have I read and seen (on screens!) about those great meals being the preamble to great love?
I’ve always wondered about the truth, if not the feasibility, of such perfection…

Mind you, like Gerard Depardieu, you may not have to worry about such earthly concerns (“This wine is the only thing that can make me aroused these days!”)!

Now, I fully understand the risks of (re-) posting an article on this somewhat contentious issue:
-“He’s doing this to get more views…”
-Some spammers will not resist from jumping on the bandwagon. They’ll be disappointed!
-Some bloggers with overriding precepts will complain (loudly)…
I hope before that I would not have to erase too many comments. But this time I might be willing to fight it out! LOL

In spite of my “maturity”, I enjoy (relatively) good health and endeavour to enjoy my life to the full.
But there are limits.
The Romans might have developped the right way by eating and making love on the same couch, but knowing how these orgies (have you checked the real meaning of this word?) ended up in later years, I’m not really convinced.
Honestly speaking, have you tried and reaaaaallllllyyyy appreciated sex with a full stomach and a swirling head?

Many of us do have to consider inescapable issues:
At some time in our lives we were brainwashed into thinking that sex should occur at night (Shut those lights down, will you?).
The hippies had it right in 1960’s as they were making love when and where they wanted. That is, until they settled into comfortable lives…
On the other hand, nights are no longer the frightful period of of your daily life as in the Middle Ages when humans had to comfort each other in the dark.
Interestingly enough, in Japan “love hotels” are full at lunch times for two reasons: 1) difficult to find out. 2) Skipping a meal for bed fun might be healthier!

One overriding reason for avoiding sex after a great meal is that strenuous physical exercise after consuming a good amount of food and drink is fraught with high health risks, whatever our age or gender. Ask the doctors! (although some will consciously avoid the issue!)

Alright, if you need a more prosaic excuse, have you ever realized that, unless you had a good scrub and plenty of perfume beforehand, how you and your spouse/partner/lover look and smell after ingesting a significant volume of food and drink, whatever the quality of the latter?

The French might have it right with their “demon de midi/noon demon”, meaning that mature people will skip lunch in favour of (sometimes illicit) sex. The Japanese do too as proven by the attendance at “love hotels” between 12:00 and 14:00…, but I have already mentioned that!
Incidentally, do not forget that the “noon demon” does not care about genders! Men, beware….

-“But I’m too busy working in day time!” you will say.
There is a solution to that:
Share that great food early enough and settle down for a long contented moment to allow your body metabolism to recuperate (keep talking, don’t doze off!)
Why do you think the “digestif” (the last drink to help your digestion!) was invented for?

I some time ago read an interesting survey held by “L’Express” magazine, which says that, among other data, 61% of ladies attach great importance to a shared meal against 46% of gentlemen before eventual sexual relations!

Ladies do seem to prefer sex after a great dinner (or a great drink), or at least at night when they can doze off inside their loved one’s arms (who am I to say that?) ….

But women can suddenly wake up with strong yearnings.
Have you ever heard this (allegedly true) story about Napoleon and Josephine:
The Emperor’s first wife was a notoriously highly sexed individual.
One night she could not wake up her illustrious spouse to assume his marital duties.
She got up and took a piece of particularly pungent cheese from a tray on the bedroom table and brought it under Napoelon’s nose.
The Emperor, not bothering to open an eye, muttered:
-“Sorry, not tonight, Josephine!”
When sex can be associated with food…

My own recommendation/preference?
The “noon demon”, of course! LOL
But don’t ask me where! (You might be shocked!)

The Japanese twist!

The Japanese have come with their own (but more sophisticated) version of the old Roman orgy:
Nyotaimori!
Wikipedia definition for people who think I make it all up!
Nyotaimori (Japanese: 女体盛り, “female body presentation”), often referred to as “body sushi,” is the practice of serving sashimi or sushi from the body of a woman, typically naked. Nantaimori (Japanese: 男体盛り) refers to the same practice using a male model. This subdivision of food play is originally an obscure Japanese practice not common in Japanese culture but that has attracted considerable international media attention.

There is no limit as per gender or numbers, but keep in mind that if you want to start your own version:
1) Male models need more food (for covering)!
2) Beware of hairy models!
3) Hot (opposite to cold) and spicy food are to be avoided!

NOTE:
The food and drink depicted in this article have no aphrodisiac properties whatsoever!
Sorry to disappoint those who expected sausages and meatballs!

On Wednesday March 12th a special party was held on the 17th floor of the SBS (Shizuoka Broadcasting Services) Building!

The Party Title, 元気!静岡人/Genki! Shizuokajin, means “Vigorous! Shizuoka People!” was organized by the SBS Company to provide an opportunity to all who participated or were concerned with the SBS TV program of the same name which had just achieved the 100 mark.

Dear Baird Beer Enthusiast:

Welcome to the inaugural issue of the Baird Beer Voice e-newsletter. 2014 is shaping into a year of dramatic change for us at Baird Brewing. Most notably, we are on the cusp of moving our brewing operations, as well as our company headquarters, to a beautiful new facility still under construction in the Shuzenji area of Izu city. We are on schedule to complete the move and open the facility to the public on June 1.

Other facets of change are coming to fruition sooner. In particular, we have been working for several months behind the scenes on a major revamping of the Baird Beer website which we are pleased to unveil to you today. We hope that you find the site informative, entertaining and esthetically pleasing. It is a work in progress that we will continually improve and evolve. We welcome your feedback.

The remainder of the e-newsletter content is contained below, broken out into six distinct categories. Our aim is to inform and entertain and to educate as well as proselytize about the beloved beverage BEER. We hope that you find our voice both interesting and compelling.

Seasonal brewing is one of our great passions. It is an activity through which we, as brewers, can demonstrate the tremendous breadth of the beer world and pay homage to the glorious diversity inherent in beer.

Our seasonal brewing has become so prolific that it is challenging our ability to plan and manage it. Our answer to this emergent problem is to organize the seasonal brewing schedule into four distinct series and to create annual release calendars for each series. The series are:
(1) Four Seasons, (2) Monthly Style, (3) Fruitful Life, (4) Brewer’s Passion. Series descriptions as well as 2014 release calendar links can be found at: http://bairdbeer.com/en/beer/kisetsu.html

In total, we have organized and calendar-ized the brewing and release of 48 seasonal beers for 2014. The release dates listed in the calendars represent the dates that these beers will appear on draught at Baird Taproom pubs. To all non-Taproom domestic accounts, we will begin shipping seasonal beers from the brewery two days in advance of the listed release date. Pre-release orders are welcome and can be made at order@bairdbeer.com.

The most recent seasonal release, on March 1, was the March Monthly Style member beer Morning Coffee Stout. The next seasonal release, a Fruitful Life Series member brew called Yorimichi Mikan Bock, is slated for March 6. Detailed information about these seasonal beers can be found at: http://bairdbeer.com/en/beer/kisetsu.html Then, just around the bend on March 13 and March 17 (St. Patrick’s Day), we have two member beers of the Brewer’s Passion Series up for release – Midnight Oil Export Stout and Luck of the Irish Red Ale. Straight from the kitchens of the Baird Brewing Taprooms, this is the Taproom Food Files!
Lunch is a safe haven.
Not only is it a well-deserved break from the daily grind, but for those of us who only have time for a coffee and a Danish in the morning, lunch can be the most important meal of the day.
That said; allow me to announce that the Nakameguro Taproom is now open for lunch on the weekdays!
Here’s the menu:

The “Marge” – Our take on the classic Italian Margarita pizza with the addition of coppa ham.
The Mighty Mushroom – Generously topped with roasted Japanese mushrooms and provolone cheese.
Hot Sandwiches (Weekday Lunch Only!) 750 yen
The Italian Melt – Mortadella and Finocchiona salamis and melted provolone cheese on fresh, homemade bread.
Ham and Rocket – Slices of Coppa Ham, fresh arugula, and balsamic dressing on fresh, homemade bread.

Visit to Virginia Heartland

Back when I was a university English teacher, I often took dubious trips to the States for “research”, which meant attending the Great American Beer Festival, National Homebrewers Conference, or any other beer event where I could drink myself silly while still somehow dressing it up as “academic”. Now that I’m a brewer, these trips are legitimate, with much less emphasis on drinking and more on learning. Such was the trip I took to the Devils Backbone brewery in Lexington, Virginia, at the beginning of February, 2014.

Why Devils Backbone? Well, besides being GABF Small Brewpub of the Year in 2012 and Small Brewery of the Year in 2013, and making fantastic beers overall, they brew on a German ROLEC brewhouse that is very similar to what we will be using in our new brewery. Bryan wanted me to see their brewhouse up close, particularly the automation software, and get a feel for what we will be facing at our Shuzenji brewery come April.

My main “teacher” during the four days I spent at Devils Backbone was Brewer Cory, a very patient, hard-working and humorous man. Cory spent hours explaining the ins and outs of the ROLEC equipment: sensors that were easy to knock out of alignment or break off completely; problems with potential air leaks; valves that needed watching; sounds — or lack of sounds — that signaled something wasn’t quite right; things they would have done differently if only they had known; cleaning routines; and a whole lot more. He also took me through the software that controls the brewhouse, something that’s going to take more than a few hours to master. The main take-away lesson: Don’t hit the Almighty Stop Button. Thanks, Cory, I won’t.

Besides gathering information about the ROLEC system, Brewers Cory and April showed me other aspects of the Devils Backbone operations, like their cask program, filtering, treating beer with fining agents, yeast propagation, and a lot more. They also shared stories of sloppiness, carelessness and other tales of woe that had me smiling to myself as I recalled the daily struggles we have in Numazu with the same problems.

On the final day, Lead Brewer Nate showed me their laboratory, pointed out some basic tips, ran through the basic tests that they do on their beers, and shared some stories about the trials and tribulations of testing beers. Summary: Don’t open the lab door when malt dust is flying around!

Nate is coming to Japan in April to help us make the transition to our new ROLEC brewhouse system and to advise us on setting up our new laboratory. We can’t wait to host him.

Finally, what’s a brewery trip without beer? As expected, the Devils Backbone beers were wonderful: Vienna Lager, Schwartzbier, Dark Abby, IPA, and more. But, evidenced by my lack of pictures of the tasting room, and in keeping with the serious nature of my visit, the beer was a small part of my visit and I imbibed with extreme moderation. I hope I get a chance to go back some day and go all out. Cheers!

How did you become involved with Baird Brewing and the niche world of Japanese craft beer?
A: I just happened to be from Portland, Oregon where good craft beer is a part of the local culture. Naturally, I found myself hunting for some good craft beers when I came to Japan. I met Bryan and John while I was working at a hotel steakhouse, and joined Baird Brewing as the head chef of the Nakameguro Taproom to revitalize the food concept with craft pizzas.

Tell us about your job. What do you do on a daily basis?
A: Since becoming the executive chef last year, I’ve been moving from Taproom to Taproom on a daily basis. My main duties include inspecting kitchen hygiene, coordinating food-related events, food costing, and menu development. Food and beer pairing is something I am very excited about and creating new pairing dishes is an exciting part of my job.

If you were a Baird Beer, which one would you be and why?
A: Definitely the Kurofune Porter. I’m stalwart and traditional when it comes to respecting the craft of cookery and thirsty for new knowledge and expanding culinary boundaries at the same time.

Tell us something about yourself that most people don’t know.
A: I was the founder and president of the breakdancing team in my high school. I’ve also been practicing kendo for about 15 years.

What advice would you give to someone wanting to enter the craft beer world and work in a position similar to yours?
A: At the risk of sounding clichéd, brewer, server, or cook, you have to love what you do in this business. Those days when you’re elbow-deep in the grease trap or trying to keep up with a stack of orders on a busy night will be easier to get through when you simply view them as steps to take before serving the best quality product to your waiting guest.

Manhole Covers in Shizuoka Prefecture 30: Ecopa in Fukuroi by Guest Blogger Atsuko Kurata!

My good friend Ms. Atsuko Akira, who share the drainspotting bug with recently visited the Ecopa Sports Complex in Aino, Fukuroi City!
This is the report on her trip!

She visited the Shizuoka Stadium ECOPA to purposedly to discover some manhole covers
Let her show you the way to ECOPA!

First of all, take the Tokaido Line and get off at Aino JR Station!

This is a nice place for train/JR buffs as the Tokaido Line and the Tokaido Shinkansen run parallel here! Actually, she saw the Dr. Yellow/Shinkansen was running east to west! It is an inspection train for electrics and track. The check-out is conducted twice a month, so she was lucky to spot it!! Unfortunately, she had no time to take pictures… It just wheezed away!

When a restaurant stands very near your workplace you tend to overlook it for many reasons… and I had been doing so with Papa since it opened more than 10 years ago!

But there was at least one reason why I couldn’t ignore it any longer: Gnocchi!
Not often you find an Italian specializing in gnocchi in Shizuoka!

And when gnocchi are served with Shizuoka-bred black hair wagyu stew at such a reasonable price it would be a sin to ignore it!

Of course Chef Akira Oheda not only makes his own gnocchi, but also his own focaccia bread and quiches!

I stayed last night on the 16th floor of a hotel facing the sea in Minatomirai, one of the top touristic spots in Yokohama City!
The weather and clear all day and night and I did some experiments with the various stages from dusk to night with the landscape provided through our bay window!

3rd East Japan Earthquake Charity Event in Orache, Kannnami Cho!

On the 9th of March the 3rd East Japan Earthquake Charity Event was held in Orache in Kannnanmi Cho under the direction of Mr. masamichi Ogawa, owner/Chef of Gawa French Restaurant in Mishima City!
The official title and motto of the event actually is: 僕達が頑張っている!/(WE don’t give up!) We try our best!

Orache is a big complex producing dairy products and craft beers!
They kindly lend their great space in Kannamich Cho (just between Atami and Mishima Cities!).
It has achieved a great reputation with their products all over the Prefecture after only an existence of 12 years or so.

It is a bit away from Kannami JR Station and you don’t have your own car, it is a good idea to share the taxi!

All great vegetables sold in Orache all year long have an interesting story of environmental cooperation!

orache is located in an area called Tanna which also bears a deserved nickname, “Windy Valley”, which is also the name of the craft beers!

When they first came to Tanna, they found farmers toiling for very little in a harsh environment with prevailing winds and poor soils.

A big dairy and beer company produces a lot of organic refuse which can be used as great natural fertilizer.
So Orache has been contributing all this excellent fertilizer for free to all neighboring farmers!

No wonder vegetables have achieved such a good name in so little time!
Visitors to the dairy/brewery, especially on week ends go back with plenty of them in their cars!
