Gastronomy on a Manhole Cover: Bonito in Yaizu City!

I’ve been recently disparaged in some corners for adding tourism, environment and manhole covers to this gastronomic blog, but I would like to point out that tourism and environment walk hands in hands with gastronomy!

If you get off Yaizu JR Station from the south exit and take the main street on your right you will see many of these magnificently colored manhole covers on the pavement.

Do take a care about cars before taking a picture across the street!

Yaizu City is classified as a major fishing harbor in Japan and deals with the biggest catches of bonito (katsuo/鰹).
No wonder it is featured on at least two types of manhole covers!

After the report on the two stars of the night here is the full report of our first dinner ofthe year at Sushi Ko Restaurant in Aoi Ku, Shizuoka City!

I did switch later to Sake while the Dragon took care of the wine!

To the surprise of our neighbors (it is not on the menu!) we challenged Chef Kenta Birukawa/尾留川健太さん at Sushi Ko in Aoi Ku, Shizuoka City, to come up with a different/new millefeuille sushi!
Chef Kenta Birukawa/尾留川健太さん obviously likes the challenge and as long as the place is not too busy he is more than willing to comply to such requests!

Moreover he knows that photos will be taken and kept for posterity!
This time the ingredients placed between layers of sushi rice were pieces of raw ika/cuttle fish and boiled shrimps!

The toppings were pretty complicated as they included tamagoyaki/Japanese omelette, anago/conger eel, tako/octopus, leek rolls, menegi/leek sprouts and tobikko/flying fish roe!
Not to mention the dressing artistically placed around the millefeuille!

Now the naming of this millefeuille was a bit of a revenge to make him work so hard! I was already in my cups wen I made a mistake ordering sake, that is I asked for “hage tora/bald tiger”! The “s’il vous plait” is a jab at my nationality! LOL

Last night saw our first visit of the year to our favorite sushi restaurant in Shizuoka City, namely Sushi Ko Bar Restaurant located in busy Aoba Park Street, Aoi Ku!
We always start such dinners with a selection of sashimi out of the day’s recommendations!
So what did the plate consist of?

Tuna akami/lean part!
This tuna was not from Shizuoka Prefecture but still obtained at Yaizu City Fish market!

Kinmeidai/Splendid Alfonsino!
This is one of the most famous fish found in Shizuoka Prefecture people are ready to travel just to taste!
The skin being soft and tasty, the whole fish makes a superb presentation!

Hirame/sole or grouper, another fish caught in Shizuoka Prefecture!
It was cut in very thin slices you can wrap around thin scallions before dipping it in a sauce based on vinegar and momiji oroshi, grated daikon with chili pepper!

I agree that this particular article has been long overdue.
Not only my expats friends, but many Japanese friends have been at pains at finding restaurants, bars and cafes where they wouldn’t have to put up with the hazards and stink of smoke inhaled and expelled by uncaring customers.
Some time ago I mentioned partially non-smoking restaurants but I see little point to mention them unless the entirely non-smoking times are clearly announced and respected!

This is of course not an exhaustive list, but it will be regularly updated as I visit establishments for work!
There is no special order to this list, they come as they come!

One more important point: Non-smoking is not the only criterion, good food is, too!
If you are kind enough to recommend me restaurants not introduced here it will be my pleasure to survey them!

Kishigami Soba Restaurant is located in a celebrated touristic area of Shizuoka City in Utsunoya famous for its many Edo Period houses and inns along the Old Tokaido Road.
It makes for the perfect stop for refreshments in the middle of nature!

Just take the bus to Fujieda City at platform 7 in front of Shizuoka JR Station north exit and get off at Utsunoya just before the Fuijieda Tunnel.
Cross the road and take the paved street on the right side snaking up the mountain and you will discover it in the middle of an Edo Travel Inn Village!

Beautiful Vegetables at Tetsuya Sugimoto in Shizuoka City!

I agree that this particular article has been long overdue.
Not only my expats friends, but many Japanese friends have been at pains at finding restaurants, bars and cafes where they wouldn’t have to put up with the hazards and stink of smoke inhaled and expelled by uncaring customers.
Some time ago I mentioned partially non-smoking restaurants but I see little point to mention them unless the entirely non-smoking times are clearly announced and respected!

This is of course not an exhaustive list, but it will be regularly updated as I visit establishments for work!
There is no special order to this list, they come as they come!

One more important point: Non-smoking is not the only criterion, good food is, too!
If you are kind enough to recommend me restaurants not introduced here it will be my pleasure to survey them!

Tea Chiffon Cake Steamed in Rice Cooker

TEA-CHIFFON-1

Rice cookers come very handy when you want to make lighter cakes you can either eat hot, lukewarm or cold!

here is a simple recipe for a chiffon cake!

INGREDIENTS:

Eggs: 2
Egg whites: 2
White sugar: 40 g
Salad oil: 2 x tablespoons
Baking powder: 4 g
Flour: 4 x tablespoons
Black tea teabag: 1 (Darjheeling, Earl Grey or whatever your favorite tea!)

RECIPE:

Make 2 tablespoons of tea with teabag. The more concentrated, the better.
Warm up inside microwave oven.

Beat the egg whites with half of the sugar. Add the sugar in two steps.

TEA-CHIFFON-3

Beat until you obtain solid meringue/beaten egg whites and sugar.

TEA-CHIFFON-4

In another bowl the two whole eggs and the rest of the sugar.
Beat until the mixture becomes whitish.
Add the warm tea and salad oil and mix again.

Mix in 1/4 (one quarter) of the meringue/beaten whites) with a spatula.

Add flour and baking powder.
Mix gently with the spatula.

TEA-CHIFFON-7

Having obtained a smooth mixture with no flour curd bits, add rest of meringue/beaten egg whites and mix quickly with the spatula.

TEA-CHIFFON-8

Pour the mixture into the rice cooker basin. regulate the temperature a bit down and cook once.

Check if it is cooked to your liking with a wooden stick.
Actually it’s best to cook it twice!

Once cooled down serve it with a whipped cream of your choice.

Bear in mind that it tends to crumble easily so cut it with a very sharp knife!

Miyuki Honten is a true Kanazawa City izakaya with a small entrance easy to miss!
The reason is simple enough: like many such establishments in this cold part of Japan, it is all in length with a narrow entrance to keep the cold out!

Even at 17:00 it is a busy place and you had better reserve in advance, not like us who were very lucky to find once again the best seats at the counter because we entered very early!

They certainly need a many staff with so much on the menus!
We were told they use 14 part-timers in shifts of threes to be added to the husband, wife and son team (and probably a hidden cook or two!)!

like all good izakayas you will have a good idea of the gastronomy served with all the appetizers lined up in front of the counter!
Mind you you can take a seat at a table or away from the crowd on a tatami!
But again like in any good izakayas conversation with the owners can be so great fun!

And you must try the local oden, an unending conversation topic!
The place was opened 46 years ago. The original owner is still alive and at 87 decided to open his own little karaoke bar for his personal fun and leave everything to the very capable second generation!

They do serve excellent sashimi, but as a non Japanese their cooked seafood should be a delight if you are not keen on anything raw!

The Ohmichou market is certainly one of the most famous spots in Kanazawa City!
It was established 300 odd years ago during the Japan Feudal Times and is still striving!

In Kanazawa City winter means early and cold nights.
People tend to go earlier to their favorite haunts and it is always a good idea to reserve as good or popular establishments are full by 6:00 p.m.!

For our first night we chose to visit Itaru (Honten, there is another one)!
We came early enough and were lucky actually to get the best seat at the corner of the counter with a full view of the kitchen!

In such a cold part of Japan, entrances are deceptively narrow to keep the cold out, but once inside you usually find yourself with plenty of space!
But it is still cold for some and knee blankets are available!

Such a spot by the counter does not seem that popular there and we were really glad to grab it, which allowed us not only to watch the chefs at work but to share a chat with them!

In Kamazawa City, izakayas are proud of their heritage and always have plenty of local sake on their menu!
