Leek Oil For Ramen, Okonomiyaki, Mabodofu, Yaki Meshi and Goya Chamburu Recipe

Leek oil/negi abura/ネギ油 is a seasoning widely used in Japan to be be added fro extra taste to ramen, okonomiyaki, mabodofu, aki meshi and goya chamburu in particular!
I’m pretty sure it can be used in many other Asian dishes so keep some within reach all the time!

According to personal priorities and taste the amount of the ingredients can be easily fiddled with so the following recipe is only a guideline! have a good lookat the photos for a better understanding though!

INGREDIENTS:

Leeks
Onion
Garlic
Ginger
Lard and sesame oil

RECIPE:

The present recipe includes long leeks (green), onion, fresh ginger root, lard and salad oil, but you can make it simple (especially for vegans and vegetarians) with salad oil only, or if you want to make it more sophisitcated also use sesame oil!
In any case those basic ingredients should provide for plenty of scent and taste!

Chop all ingredients finely.

In plenty of oil cook all the ingredients on a low fire until they acquire a rich orang-brown color. Keep an eye on it all the time as it can change quickly!
I actually mixed plenty of salad oil with first a little lard, and a little sesame oil at the end for best taste!

Once the leek has shown the first signs of scorching the oil is ready. Take off the fire immediately.
Sieve the oil and let cool down completely before pouring it in a jar for later use.
Do not through the leeks and others but use them as topping for ramen!
Naturally you can keep the leeks in the oil if you do prefer so!
Do not be shy from experimenting!

Shizuoka Sake Tasting: Sugii Brewery-Junmai Hatsu Shibori Kimoto Shikomi

Sugii Brewery in Fujieda City is known as the most experiencing sake brewery in Shizuoka Prefecture and one has to be quick to grab all their limited brews!
Their names also make for good reading:
“Hatsu Shibori” means “First Press”. “Kimoto Shikomi・生酛仕込み” is a bit more difficult to translate as it is an old method that many breweries avoid because it is hard work and very risky as it uses natural/wild yeasts.

Rice milled down to 70%
Alcohol: 14~15 degrees
Bottled in December 2013

Clarity: Very clear
Color: Very faint golden hue
Aroma: Assertive, dry, fruity. Apples, oranges
Body: Fluid
Taste: Very dry attack.
Very light and fruity. Complex, “difficult to catch”.
Apples, dry melon.
Junmai petillant appears on the palate only after swallowing, therefore tends to linger on for a while with lots of dry apples.
As nurukan/lukewarm, reveals totally diffrent facets with a milder attack with hints of dark chocolate and almonds.
marries beautifully with any food, especially heavy izakaya fare.

Overall: For the unusual and dry sake lovers!
Definitely not your standard sake in Shizuoka Prefecture or elsewhere for that matter!
A sake obviously conceived to accompany and emphasize food.
Definitely worth a careful tasting away from the norm!

American Gastronomy: Meat Loaf with Mashed Potatoes and Demi-Glace Sauce Lunch at BLUE BOOKS cafe in Shizuoka City!

Equipment & Facilities: Great overall cleanliness. Superb washroom in same building separated from the cafe.
Prices: Reasonable for such big servings!

It is cold these days, even in in Shizuoka City, the second mildest area in Japan after Okinawa, and to top it all I had been fighting off my regular Atumn/Winter cold when I needed something hot and fulfilling for lunch the other day!

It was only natural that I took refuge at BLUE BOOKS cafe in Aoi Ku, Shizuoka City, as it is one of the biggest and warmest cafe/restaurants in town!
Someone might comment that I’m becoming American in Winter when I chose the Meat Loaf with Mashed Potatoes and Demi-Glace Sauce Lunch Set (I didn’t have the courage to point out the typos!)!

Oumuraya Sake Brewery Poster in Shimada JR Station!

This is the third picture I took the other day inside Shimada JR Station on my way down onto the platform.

There are other posters of sake breweries in Shizuoka Prefecture railway stations but as as I know this is the only poster featuring all the regular brands (private and commemorative/limited brands would cover a whole wall!) on one poster!

There is one particular label which is known all over Japan: the one on the extreme right is that of “Onna Nakase/女泣かせ/To make a woman cry!”. I know many collectors who would like that particular label!

Life is a fleeting thing. Each of us is here but a very short time. The older we get, the more clearly we comprehend this inexorable reality. And despite the sometimes awful travails and the always regular monotony of life, it remains a mysteriously beautiful thing. The end-of-the-year holiday season provides wonderful occasion for reflection and appreciation of the joy of living.

At Baird Brewing, 0ur appreciation of this joy is manifested in a celebratory holiday season ale we call Jubilation Ale.

Baird Beer Holiday Season Special Releases:
*Jubilation Ale (7%):

This malty rich, festively red-hued ale derives its special character largely from the addition of two wonderful local ingredients: (1) fully ripened Japanese figs (ichijiku) and (2) cinnamon twigs culled from a local nikki tree. The full-bodied character combined with the attendant alcohol strength will warm the flesh just as it brings jubilation to the soul.

Jubilation Ale is available for immediate release in both kegs and bottles (360 ml). It begins pouring from our Taproom taps tonight (Thursday, December 19).

If joyous celebration this holiday season is simply beyond your capacity, we fully understand. There is a Grinch in all of us and it needs recognition too. For the Grinch inside you, we proudly release Bakayaro! Ale.

*Bakayaro! Ale (8.5%):

This insolent, snotty and mean-spirited brew is pungently hoppy and wickedly strong. High in malt gravity (18.2 Plato), bitter in hoppiness (90 IBU), aggressive in aroma (double dry-hopping with five varieties: Sorachi Acd, Summit, Citra, Chinook, Centennial), Bakayaro! Ale just doesn’t give a rat’s ass. And this year, he is the confused and conflicted love-child of a multiple fermentation orgy between two different yeast strains — one Belgian and one Scottish. And you thought your life was crazy!

We invite you to visit a Baird Taproom this evening, have a pint and let those around know exactly how you feel — joyful or otherwise! Bakayaro! Ale is available for immediate release in both kegs and bottles (360 ml).

I am happy to report that we are making very good progress in the construction of our new brewery in Shuzenji. Our custom-designed German manufactured brewing equipment began arriving on site this past Monday and Hori-san and team are busy positioning it within the brewery even as I write. Lead brewer Chris will be updating the photo gallery more extensively later this weekend. If things continue on course, we expect to be brewing in the new facility sometime in April 2014. Our current brewery equipment will be relocated to Shuzenji and reinstalled there by the end of May 2014. The grand opening celebration likely will be held in June 2014.

The other day, although I was hungry for lunch I knew I had better take something very tasty but healthy and low enough in calories to not put extra stress on a body already suffering for the mountains of food and lakes of alcoholic drinks one cannot escape from in the month of December!

Shizuoka Sake Tasting: Suruga Brewery-Abekaido Tokubetsu Honjozo

As I mentioned before Suruga Brewery, the “officially” (I do have a bone of contention about that…) second newest brewery in Shizuoka Prefecture preserved the names of the sake brands produced by the defunct Yoshiya Brewery after they acquired their license.
And “Abekaido/The Route Along the Abe River” is one of them!
The label represents a genuine woodblock print made in Edo period when people did travel a lot along the Abe River in Shizuoka City they had to cross along the Old Tokaido Road!

I acquired this particular 300 ml bottle at Cenova Department Store in Shizuoka City which makes the effort to give enough information!

Clarity: Very clear
Color: Almost transparent
Aroma: Pleasant, dry and fruity. Banana, custard.
Body: Fluid
Taste: Well-rounded and deep attack with soft alcohol.
Complex. Fruity. Custard, with late hints of dry oranges and persimmons.
Lingers only for a little while.
Very elegant and gentle approach for a seemingly “modest” sake.
Changes little with food but for a drier and nuttier note.
Clings solidly to its qualities all along with or without food. Drinks up very quickly!

Overall: A sure value!
The kind of ask you can drink for any occasion. Great with any fod that it will enhance without overwhelming it.
The perfect present/souvenir to a sake-lover beyond our Prefecture for an endless conevrsation topic on Japanese sake, culture and history!

Japanese Rice Recipe: Yaki Meshi

YAKI-MESHI-1

If you have any steamed rice left, do not worry as this is a chance to make a totally new dish for the pleasure of your family or impressing a special person! And it always so easy!
I’ve got a few stored and this is the second installemnet: Yaki Chahan/焼飯!

This recipe being a guide more than anything I leave to your priorities as for the quantities!

INGREDIENTS:

Hot or cold steamed rice
Bacon
Vegetables
Eggs
Salt
Pepper
Japanese sake
Light soy sauce

RECIPE:

YAKI-MESHI-2

Prepare all ingredients before starting to avoid running after something in the middle of cooking!
As an example get the following ready:
Steamed rice
Lettuce
Cabbage
Bacon
Eggs (1 per person)

YAKI-MESHI-3

Cut the bacon in strips thin enough to be easily mixed with the rice.
Instead of bacon you can use pork belly, beef, minced meat or canned tuna, whatever you have on that day!

YAKI-MESHI-4

Chop the lettuce and cabbage. Add some salt to them. Mix by hand. This step is to help the vegetables to sweat out their water which would soak the rice into the wrong taste and appearance. Put aside.

YAKI-MESHI-5

One can use hot or cold steam rice, but cold steam rice is better as it contains less water.
Beat the egg into a smooth liquid and mix well with rice.

YAKI-MESHI-6

Fry the bacon first in wok.
One can use normal oil with the meat, sesame oil, butter or leek oil.
Of course you may add some chopped garlic at that point!

YAKI-MESHI-7

Once the bacon or meat is cooked, press the chopped vegetables into a ball to get rid of its excess water. Throw the water away.

YAKI-MESHI-8

Add the egg rice and stir fry over strongest fire possible.

YAKI-MESHI-9

Once the rice has properly cooked add the vegetables and stir fry until well mixed together.Do it in as little time as possible or the vegetables will become sticky!

YAKI-MESHI-10

Season with salt, pepper and soy sauce, stir quickly and serve hot!

Japanese Rice Recipe: Tamago Chahan-Egg Fried Rice

TAMAGO-CHAHAN-1

If you have any steamed rice left, do not worry as this is a chance to make a totally new dish for the pleasure of your family or impressing a special person! And it always so easy!
I’ve got a few stored and I will begin with the simplest one: Tamago Chahan/玉子チャハン! “Tamago” stands for “eggs” and “Chahan” for fried rice!

This recipe being a guide more than anything I leave to your priorities as for the quantities!

INGREDIENTS:

Cold/hot steamed rice
Eggs
Leeks, finely chopped. White part of a thick leek if possible
Oil
Salt
Water

Optional: pepper and spices. Japanese sake and sesame oil

RECIPE:

TAMAGO-CHAHAN-2

Chop the leek very fine
Think of one egg per person.
Beta the egg until you obtain a smooth even colored liquid.
Prepare a wok.

TAMAGO-CHAHAN-3

First heat the wok until white smoke starts coming out.
Pour a full ladle of oil in the wok and stir it all inside the wok.
Pour all the oil back into a pot for that usage.
This is an important step that will insure that the rice or the egg stick to the wok!

TAMAGO-CHAHAN-4

Pour 2 or 3 spoons of fresh oil into the wok (you may use normal oil, sesame oil or leek oil, whatever your preference).
Drop the rice inside. Bear in mind that too much rice will be difficult to cook properly. This is not done in a restaurant where gas heat is far more powerful than over a home gas stove!
Spread the rice with your ladle.

TAMAGO-CHAHAN-5

Pour the beaten eggs over the riceas evenly as possible.
The reason why the eggs are poured after the rice is to prevent them to become an omlette or stick to the wok!

TAMAGO-CHAHAN-6

Stir continuously over the hot fire so as to mix the rice well with the egg.
This is the most important step as you do not want the rice and egg cooking separately!

TAMAGO-CHAHAN-7

Having fried the rice and egg for about 30 seconds, add some salt. Do it little by little. That is, add the salt. stir a few seconds and check the taste. Repeat as many tin\mes as necessary until it is salted enough to your taste!

TAMAGO-CHAHAN-8

throw in the finely chopped white leek and stir fry for a few seconds. you can pepper and other spices then if you wish too.

TAMAGO-CHAHAN-9

Pour a little water around the wok over the rim of the fried rice. Let the water bubble under the heat and stir only once. This is when you can replace the water with Japanese sake, or sesame oil, or even a little soy sauce. But bear in mind the taste will be diffrent, so do experiment!

Eat at once while it is very hot!

Suruga Brewery in Suruga Ku, Shizuoka City, has certainly come a long way since they acquired the license of defunct Yoshiya Brewery!

Not only they bought the license but kept on producing the former brewery’s names: Chumasa, Tokaido and Oni goroshi!

This particular sake has been awarded the accolade from The Shizuoka Prefecture Government!

Rice milled down to 40%
Alcohol: 16~17 degrees
Dryness: ; 7
Acidity: 1.1
Bottled in October 2013

Clarity: Very clear
Color:Faint golden hue
Aroma: Assertive, dry, fruity. Apples
Body: Fluid
Taste: Well-rounded deep, dry, fruity attack. Pleasant alcohol.
Very complex.
Banana, apples, pears, oranges, nuts, hints of dark chocolate.
Disappears fairly quickly with drier oranges and almonds.
Takes on a sweeter turn with each sip to immediately switch back to a drier accent.
Dry banana, almonds and pears making a comeback with every sip.

Overall: A very complex and elegant sake in spite of its high alcohol content.
Although thoroughly enjoyable with any food, is best enjoyed slowly on its own, either chilled or at room temperature.
Especially comforting after a cold winter day as an aperitif, or even better as a night cap.
If you must absolutely drink it with food, enjoy it with salads or fish.
A special nectar!

Vegan Japanese Recipe: Iri Natto/Parched Natto

IRI-NATTO-1

Natto is a very interesting food for vegans and vegetarians (I’m not but I care!) as it contains abundant healthy and vital ingredients.
Check the Natto/Fermented beans recipe if you want to make some yourself!

Here is a recipe to accomodate it into a tasty snack or appetizer!

INGREDIENTS:

Natto: the equivalent of 3 small packs
Oil: of your choice. 2 tablespoons
Salt: Choose good sea salt

Optional: chili pepper. sesame oil, soy sauce, miso, curry powder mix, grated ginger and so on

IRI-NATTO-2

Good quality natto sold in shops should be vegan, but if you are not sure make the equivalent of three small packs. Very economical!

IRI-NATTO-3

Pour the oil in a saucepan. Add the natto. Cook on a low fire. Sti with chopsticks all the time.

IRI-NATTO-4

It will take time for the natto to cook and absorb all the oil. Do not hurry. Just keep stirring gently with the chopsticks!

IRI-NATTO-5

When the natto has absorbed all the oil and taken the aspect of peanuts the beans should separate from each other. You can switch off ht e fire then!

IRI-NATTO-6

let the natto cool for best taste as its water will disappear.
Sprinkle with some good quality salt.
Since you have 3 packs you could always present into 3 different small plates seasoned differently with above optional spices!

Strong points: Fresh local ingredients whenever possible. Both traditional and inventive Italian cuisine. Good wine list at moderate prices. Open late!

Venison is very much in season right now, and I had to sample some at Solio in Aoi Ku, Shizuoka City, last night!
For once the meat was not from Shizuoka Prefecture but from Hokkaido where venison is famous under the name of Ezo Shika/蝦夷鹿! Ezo is actually one of Hokkaido’s old names!

The venison was first poeled then oven-baked before being sliced and served with a superb wine sauce!

But the vegetables were not only seasonal but all grown in Shizuoka prefecture: leek, garlic, potato, sweet potato, Brussels sprouts,…

The Japanese, growers included, make a point of leaving some persimmons on top of their trees for the birds to feed in the winter.
